1 1/2 lbs Italian sausages (hot or sweet)
1 1/3 cups green bell peppers, seeded & cut into 1-inch x 1/4-inch strips
1 (28 ounce) can italian-style including liquid or 1 (28 ounce) can plum tomatoes, including liquid
1 (10 3/4 ounce) can tomato puree
1 teaspoon garlic clove, chopped finely
4 tablespoons extra virgin olive oil
2 tablespoons extra virgin olive oil
1/2 cup basil, fresh, chopped finely, firmly packed
salt & pepper
1 lb penne pasta or 1 lb ziti pasta, cooked according to package directions
fresh parsley, chopped
parmesan cheese, grated

Steps:

  • Bake sausage links in oven for 20 minutes or until completely cooked. Cut sausages in half lengthwise; then cut into 1/2" slices. Result will be semi-circles of sausage. Set aside.
  • Saute pepper slices in olive oil until their crispness is lost, but not soft.
  • Chop tomatoes or use a food processor on "pulse"; do not puree tomatoes.
  • Combine chopped tomatoes, tomato puree, garlic, olive oil, and fresh basil in sauce pan. Bring to a simmer. Add sausage pieces and stir well.
  • Transfer cooked, drained pasta to a large serving platter. Top with sausage & pepper marinara mixture.
  • Garnish with parsley and grated Parmesan cheese.

1/4 cup extra-virgin olive oil
1 pound sweet Italian turkey sausage
2 red bell peppers, sliced
2 yellow onions, sliced
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano
1/2 cup chopped fresh basil leaves
4 garlic cloves, chopped
2 tablespoons tomato paste
1 cup Marsala wine
1 (15-ounce) can diced tomatoes
1/4 teaspoon red pepper flakes, optional
4 to 6 fresh Italian sandwich rolls, optional

Steps:

  • Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides, about 7 to 10 minutes. Remove from the pan and drain.
  • Keeping the pan over medium heat, add the peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes. Add the oregano, basil, and garlic and cook 2 more minutes.
  • Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
  • Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.
  • Serve in bowls. Or, if serving as a sandwich, split the rolls in half lengthwise. Hollow out the bread from the bottom side of each roll, being careful not to puncture the crust. Fill the bottom half of the roll with sausage mixture. Top and serve sandwiches immediately.

1 large green bell pepper, sliced into thin strips
1 large onion, thinly sliced

This is a "wow" recipe that I created last night. I had been wanting to try Andouille sausage and finally found it at a local grocery. It gives this dish just the right "kick" to spice up your dinner, though feel free to add some red pepper flakes if you really like it hot! My husband took one bite and said "you have got to write this recipe down"!

2 tablespoons extra virgin olive oil
1 large yellow pepper, cut into thin strips
1 large red pepper, cut into thin strips
1 large yellow onion, cut into thin wedges
1 tablespoon fresh garlic, minced
1 lb andouille sausage, sliced into 1/2 inch pieces (I used Johnsville brand )
1 (22 ounce) can diced tomatoes, undrained
1 (6 ounce) can tomato paste
3/4 cup water
1 1/2 tablespoons italian seasoning
2 bay leaves
2 teaspoons paprika
1/4 cup sugar
salt and pepper

Steps:

  • In a large skillet over med-high heat, saute peppers and onion in the olive oil.
  • Once the vegetables are "crisp tender", add the garlic and sausage, sauteing for 1 minute, being careful not to let the garlic burn.
  • Add the diced tomatoes.
  • Whisk the tomato paste and water together and add to the skillet.
  • Add all the spices.
  • Bring to a boil, then reduce heat. Simmer covered, for 20 minutes, uncover and simmer for 10 more minutes.
  • Serve tossed with cooked pasta or rice.

Like a cross between baked ziti and sausage lasagna, this mozzarella-topped pasta is rich with ricotta and crushed tomatoes - and cooks entirely in one pan, including the pasta. The Italian sausage adds meaty depth to the sauce, but vegetarians can leave it out or use their favorite plant-based sausage instead.

3 tablespoons extra-virgin olive oil
3/4 pound bulk hot or mild Italian sausage (pork, chicken or turkey)
4 garlic cloves, thinly sliced
1 teaspoon dried oregano
1/2 teaspoon fennel seeds, coarsely crushed
Pinch of red-pepper flakes, plus more for serving (optional)
1 (28-ounce) can whole peeled tomatoes with their juices
1 (14-ounce) can crushed or strained tomatoes
2 bay leaves
Kosher salt
12 ounces dried pasta, such as small shells, farfalle or other shaped pasta
8 ounces fresh mozzarella, torn into bite-size pieces
6 ounces whole-milk ricotta (about 3/4 cup)
1/3 cup grated Parmesan
1/4 cup basil leaves
Black pepper, for serving

Steps:

  • Heat oven to 425 degrees. Heat oil in a 12-inch ovenproof skillet over medium-high. Crumble sausage into skillet, using a spoon to break it into small pieces. Cook until starting to brown, stirring occasionally, 5 to 7 minutes. Stir in garlic, oregano, fennel seeds and red-pepper flakes (if using), and cook another 1 to 2 minutes.
  • Stir in whole tomatoes and their juice, using a spoon to break them up. Add crushed tomatoes, bay leaves and 2 teaspoons salt, and bring to a simmer. Simmer for 10 minutes to thicken slightly.
  • Stir in pasta and 1 cup water and return to a simmer. Continue to simmer for 2 minutes, stirring frequently to make sure pasta doesn't stick to the bottom of the pan. Remove from heat, pluck out the bay leaves, and fold in about a third of the mozzarella.
  • Top pasta with remaining mozzarella and dollops of ricotta. Sprinkle with Parmesan, then transfer to oven. Bake until pasta is tender when poked with a fork, and cheese is bubbly and lightly golden, 18 to 22 minutes. (If you'd like a more deeply browned topping, run the pan under the broiler for 1 or 2 minutes.) Remove from oven and let cool slightly before serving. Top with basil, plenty of black pepper, and more red-pepper flakes, if you like.
