CHEESE CURDS AND SAUSAGE IN PUFF PASTRY



Cheese Curds and Sausage in Puff Pastry image

4 ounces kielbasa, chopped
1 sheet frozen puff pastry (half a 17-ounce package), thawed
2 teaspoons spicy brown mustard, plus more for serving
6 ounces cheese curds (or part-skim mozzarella, cut into small pieces)
1 large egg, lightly beaten
Flaky salt

Steps:

  • Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper. Cook the sausage in a medium nonstick skillet over medium-high heat, stirring, until browned, 4 to 6 minutes; set aside to cool.
  • Unfold the puff pastry on the prepared baking sheet; spread the mustard on top, leaving a 1-inch border all around. Spread the sausage on one half of the pastry and top with the cheese curds. Fold the other half of the pastry over the cheese to cover; crimp the edges with a fork to seal. Freeze until firm, about 45 minutes.
  • Brush the pastry all over with the beaten egg and sprinkle with flaky salt. Cut 4 slits in the top to let steam escape. Bake until the pastry is golden brown and puffed all over, about 30 minutes. Let cool at least 20 minutes, then transfer to a cutting board to slice. Serve warm or at room temperature with more mustard on the side.

1 lb jimmy dean or owens pork sausage
16 oz sharp cheddar cheese
2 c bisquick pancake and baking mix

Steps:

  • 1. Preheat oven to 375
  • 2. Grate the 16oz of cheese. I recommend leaving it out for at least 30 minutes to an hour before so that it'll get to room temperature. This makes it much easier to grate.
  • 3. Combine the sausage, grated cheese and 2 cups of bisquick into a large bowl and knead into a large ball.
  • 4. Roll as many puffs as you can out of it. They should be about the size of a golf ball. I usually end up with about 16 of them. Place them in a 13x9 baking pan or cookie sheet. You will need 2.
  • 5. Put them into the oven for 15-20 minutes
  • 6. Enjoy :)

3 tablespoons water

Steps:

  • In a small skillet, cook sausage over medium heat until no longer pink; drain and cool completely. , In a bowl, combine biscuit mix and cheese. Stir in the sausage, water and chilies., Shape into 1-in. balls. Place 2 in. apart on well-greased baking sheets. Bake at 400° for 12-15 minutes or until lightly browned. Refrigerate leftovers.

Steps:

  • Preheat oven to 400°. In a large skillet, cook sausage over medium heat until no longer pink, 5-7 minutes, breaking into crumbles; drain. , In a large bowl, combine biscuit mix and cheese; stir in sausage. Add water and toss with a fork until moistened. Shape into 1-1/2-in. balls. Place 2 in. apart on ungreased baking sheets. , Bake until puffed and golden brown, 12-15 minutes. Cool on wire racks.

4 large mushrooms, sliced
4 green onions, chopped
1 tablespoon butter, divided
1/2 cup butter, divided
1/2 cup all-purpose flour, divided
1 teaspoon baking powder
1/2 teaspoon salt
10 eggs, lightly beaten
4 cups shredded monterey jack cheese
1 cup crumbled pork sausage, fully cooked and drained well
2 cups shredded cheddar cheese

Steps:

  • In a skillet, saute the mushrooms and onions in 1 tablespoon butter until tender. Set aside.
  • In same skillet brown and crumble the sausage. Drain well on paper towels.
  • In a large bowl, combine the flour, baking powder and salt.
  • In another bowl, combine eggs and cheeses.
  • Melt remaining butter; add to egg mixture.
  • Stir into dry ingredients along with, sausage crumbles, and mushroom mixture.
  • Fill greased muffin cups three-fourths full.
  • Bake at 350 degrees for 35-40 minutes or until a knife inserted near the center comes out clean.
  • Carefully run a knife around the edge of each muffin cup before removing.

1 cup water
2 tablespoons butter
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1 cup all-purpose flour
4 eggs
1-1/4 cups shredded Gruyere or Swiss cheese
1 tablespoon Dijon mustard
1/4 cup grated Parmesan cheese

Steps:

  • In a large saucepan, bring the water, butter, salt and cayenne to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Stir in Gruyere and mustard. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Sprinkle with Parmesan cheese. Bake at 425° for 15-20 minutes or until golden brown. Serve warm or cold.
