Cottage Cheese Cornbread image

There is a not-so-secret ingredient to this Cottage Cheese Cornbread recipe that sets it apart from others and makes it extra delicious! The cottage cheese actually melts into the cornbread and you would never know it is there, but it adds a wonderful dimension and, along with buttermilk, helps keep this cornbread extra moist and delicious!

1 1/2 cups all-purpose flour
1 cup yellow cornmeal
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup buttermilk
1 cup cottage cheese
3 eggs
1/4 cup oil
1 cup frozen corn
1 Tablespoon butter

Steps:

  • Preheat oven to 400 degrees F. While the oven is preheating, place an oven-safe cast iron skillet in it to heat.
  • In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, and baking soda.
  • Add the buttermilk, cottage cheese, eggs, and oil. Stir just until combined. Stir in the corn.
  • Add the butter to the preheated skillet. Once the butter is melted, pour the cornbread batter into the hot pan, then bake for 25-35 minutes until goldden brown on top and a toothpick comes out clean with just a few crumbs when inserted into the center of the cornbread.
  • Slice and serve with butter and honey.

1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons brown sugar
2 eggs
1 cup buttermilk
1 cup cottage cheese
1/4 cup canola oil
1 cup frozen corn

Steps:

  • Preheat oven to 375°F
  • In a medium-sized bowl, combine the cornmeal through to the salt and set aside.
  • In another bowl, mix up the sugar, buttermilk, cottage cheese and oil and then blend it with the dry ingredients.
  • Stir in corn.
  • Pour batter into a buttered baking dish and bake for 30-40 minutes or until the centre comes out clean.

1 cup cottage cheese
¾ cup butter, melted
4 eggs
2 (8.5 ounce) packages corn bread/muffin mix
1 (10 ounce) package frozen chopped broccoli, thawed
1 large onion, chopped
1 ½ cups shredded Cheddar cheese, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Beat cottage cheese, butter, and eggs in a large bowl. Stir corn bread mixes into butter mixture until just moistened. Fold in broccoli, onion, and 1 cup Cheddar cheese. Pour batter into prepared baking dish and sprinkle with remaining 1/2 cup Cheddar cheese.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Cool in the baking dish for 10 minutes before slicing and serving warm.

2 boxes Jiffy corn muffin mix
4 eggs, beaten
3/4 cup butter, melted
1 (12 ounce) package frozen corn, thawed
1 medium onion, diced fine
1 cup small curd cottage cheese
1 pinch sugar

Steps:

  • Preheat oven to 375 degrees.
  • Combine all ingredients and mix well -- it will be thicker than you expect.
  • Pour into buttered 9" x 13" casserole dish.
  • Bake in oven for 35-40 minutes until golden brown.
  • This cornbread is very moist and dense.
  • For a little variation, add one or more of the following: a can of chopped green chiles, 1 cup of cheddar cheese, 1 cup of pepperjack cheese, 1/2 cup chopped fresh cilantro.
