Steps:
- Preheat an oven to 375°F. Butter a large baking dish. In a deep sauté pan over medium heat, melt the butter. Add the onions, celery, garlic, salt and pepper and cook, stirring occasionally, until softened, about 10 minutes. Add the parsley, apples and wine and cook, stirring occasionally, until the apples are slightly softened and the wine has reduced, about 7 minutes. Transfer the onion-apple mixture to a large bowl. In the same pan over medium-high heat, cook the sausage, stirring and crumbling with a wooden spoon, until lightly browned and cooked through, about 7 minutes. Add the sausage to the bowl with the onion-apple mixture. Add the stuffing mix and chestnuts and stir to combine. Add the stock 1 cup at a time, stirring to evenly moisten the croutons. Season with salt and pepper. Transfer the dressing to the prepared baking dish, cover with aluminum foil and bake for 30 minutes. Remove the foil and bake until the top is nicely browned and crisp, about 30 minutes more. Let the dressing stand for 5 minutes, then sprinkle with sage and serve.
APPLE AND SAUSAGE STUFFING

- Preheat the oven to 375 degrees F and butter a 3-quart baking dish. Melt 2 tablespoons butter in a large skillet over medium heat. Add the sausage and cook, breaking up the meat with a wooden spoon, until browned and cooked through, 6 to 8 minutes. Remove with a slotted spoon and transfer to a plate.
- Melt the remaining 6 tablespoons butter in the skillet, then add the onion, celery, apples, sage, thyme, 1 teaspoon salt and a few grinds of pepper. Cook, stirring, until the vegetables are tender, about 5 minutes. Add the cider. Bring to a boil, scraping up any browned bits, and cook until reduced by half, about 5 minutes. Add the broth and return to a boil, then remove from the heat.
- Whisk the eggs and parsley in a large bowl. Add the bread, sausage and vegetable-broth mixture and stir until combined. Transfer to the prepared baking dish; sprinkle with the walnuts and drizzle with the turkey drippings (or dot with butter).
- Cover the dish with foil and bake 30 minutes, then uncover and bake until golden, about 30 more minutes.

CHESTNUT SAUSAGE STUFFING

- Make a gash in the side of each chestnut. Cover with water and bring to boil. Simmer for 10 minutes. Drain and peel the chestnuts while they are still hot (do this using rubber gloves to protect your hands). Simmer the chestnuts in the chicken stock until tender (about 20 minutes). Drain, reserving the stock.
- Meanwhile, soften the onions in the butter. In a separate pan, brown the sausage meat, crumbling it with a fork as it cooks. Drain on paper towels.
- Soak the bread crumbs in milk for 10 minutes and squeeze dry. Place the bread crumbs in a large bowl. Add the thyme, sage, parsley, Cognac and cooked sausage meat. Add the eggs and mix thoroughly.
- Chop the chestnuts coarsely and add them to the mixture. Moisten with a half-cup of chicken stock or a little more if the mixture seems very dry. Season to taste with salt and pepper.

- In a large skillet, cook the sausage over medium heat until no longer pink; drain and set aside. In the same skillet, saute the mushrooms, onions and celery in butter until tender. Stir in the sausage, parsley, thyme and pepper. Add broth; heat through. Remove from the heat. Add bread cubes and chestnuts; toss to coat., Transfer to a greased shallow 2-1/2-qt. baking dish. Cover and bake at 350° for 30 minutes. Uncover; bake 10-15 minutes longer or until heated through. Let stand for 5 minutes before serving.

APPLE AND CHESTNUT STUFFING USING A MIX
I found a recipe is adapted this on the internet - its based on an old Pepperidge Farm recipe . I have changed it a bit. You can adjust the chestnuts to you taste. Also, the broth/water can be adjusted per liking.

- 1. Saute onions, apples and celery, until soft, butter over low heat. Set aside to cool.
- 2. Combine stuffing mix, chopped chestnuts, onion/celery/apple mix.
- 3. Mix in broth ( or water if using as in-turkey stuffing) and gently toss.
- 4. If baking in the turkey ( water used)-stuff as usual. If you are baking ( broth used) the stuffing in a casserole then bake for about 30-45 minutes or until done.
