EASY ITALIAN SAUSAGE AND RIGATONI



Easy Italian Sausage and Rigatoni image

An easy-to-make weeknight dinner with minimal cooking. Just throw everything together and let your oven do the rest.

1 (8 ounce) package rigatoni pasta
1 pound bulk Italian sausage
¼ cup diced onion
4 cups spaghetti sauce
2 cups cottage cheese
2 cups mozzarella cheese, divided
¼ cup freshly grated Parmesan cheese
2 large eggs, beaten
1 tablespoon dried parsley
½ teaspoon Italian seasoning
½ teaspoon dried basil
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 12 minutes. Drain and set aside.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Grease a large baking dish.
  • Cook sausage and onion in a large skillet until meat is no longer pink and onions are translucent, 5 to 7 minutes.
  • Combine spaghetti sauce, cottage cheese, 1 cup mozzarella cheese, Parmesan cheese, eggs, parsley, Italian seasoning, basil, salt, and pepper in a large bowl. Add sausage and onion mixture; stir until well combined. Add pasta and carefully mix until well incorporated. Transfer to the prepared baking dish and cover.
  • Bake in the preheated oven for 45 minutes. Remove from the oven, top with remaining mozzarella, and bake, uncovered, until cheese is melted, about 15 minutes.

1 tablespoon olive oil
5 links hot italian sausage
1 large yellow onion, chopped
5 cloves garlic, minced
salt, to taste
pepper, to taste
1 tablespoon dried oregano
1 tablespoon dried basil
1 tablespoon dried parsley
12 oz tomato paste
15 oz diced tomato
2 cups grated parmesan cheese, divided
2 cups spinach
1 lb rigatoni, cooked
1 cup ricotta cheese
fresh basil, to garnish

Steps:

  • To a large dutch oven on medium heat, add the olive oil and heat it until it shimmers.
  • Add the hot Italian sausage, cook until the the first side browns deeply, flip and cook on the other side until the sausage is fully cooked, 15 minutes. Remove the sausages from the pan and slice when they cool down.
  • To the leftover pan drippings, add the chopped yellow onion, minced garlic, salt, pepper, dried basil, dried oregano, and dried parsley. Cook until the onions are caramelized and soft. About 10 minutes.
  • Add the tomato paste and cook until the tomato paste darkens slightly.
  • Add in the diced tomatoes and the sausage slices into the pan, stir, and let the sauce come to a simmer.
  • Add in half the grated parmesan, spinach, the cooked pasta, and stir to combine.
  • Spoon in fresh dollaps of the ricotta cheese, garnish with fresh basil, more grated parmesan, and serve!

1 lb. Italian sausage, cut into chunks
1 red onion, sliced
1/4 cup tomato paste
1/4 cup KRAFT Sun Dried Tomato Vinaigrette Dressing
1/4 cup chopped fresh parsley
1/4 cup KRAFT Grated Parmesan Cheese

Steps:

  • Cook pasta as directed on package.
  • Meanwhile, cook sausage in large nonstick skillet on medium heat until evenly browned, stirring occasionally. Drain; return to skillet. Stir in onions and tomato paste; cover. Cook 15 min. or until onions are tender and sausage is done, stirring occasionally. Stir in dressing.
  • Drain pasta; place in large bowl. Add sausage mixture; mix lightly. Top with parsley and cheese.

1 pound rigatoni
1 large bunch broccolini, trimmed into 1 1/2-inch pieces
3 tablespoons olive oil
1 pound sweet Italian sausage, casings removed.
1 large onion, thinly sliced
2 tablespoons tomato paste
1/4 teaspoon red pepper flakes
4 cloves garlic, thinly sliced
1/2 cup fresh parsley, chopped
1/2 cup grated Pecorino Romano cheese, plus more for topping

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions for al dente, adding the broccolini for the last 4 minutes of cooking. Reserve 2 1/2 cups of the cooking water, then drain the pasta and broccolini and set aside.
  • Meanwhile, heat a large Dutch oven over medium heat and add the olive oil. When the oil is hot, add the sausage and cook, breaking it up with a wooden spoon, until browned, about 4 minutes. Add the onion and cook, stirring occasionally, until softened, about 5 minutes.
  • Add the tomato paste, red pepper flakes and garlic to the pot and cook, stirring, until sizzling, 30 seconds. Add 2 cups of the reserved pasta water, bring to a simmer and cook until reduced by half, 5 to 6 minutes.
  • Add the pasta, broccolini and parsley to the sauce and toss to coat, adding more water if needed. Taste and add salt if necessary. Remove from the heat and sprinkle with the grated cheese, then toss well. Top each serving with more grated cheese.

1 pkg. (19.76 oz.) Italian sausage links
3 Tbsp. olive oil
1 red pepper, chopped
2 cloves garlic, minced
1 jar (24 oz.) CLASSICO Tomato and Basil Pasta Sauce
2 Tbsp. chopped fresh parsley
1/4 cup KRAFT Grated Parmesan Cheese

Steps:

  • Cook pasta and sausages in separate pans as directed on packages, omitting salt in the pasta cooking water. Meanwhile, heat oil in large skillet on medium heat. Add peppers and garlic; cook and stir 2 min. or until peppers are crisp-tender.
  • Cut sausage into 1/4-inch-thick slices; add to peppers. Stir in pasta sauce; cook 4 to 5 min. or until heated through, stirring frequently.
  • Drain pasta. Add to sauce mixture; stir until evenly coated. Sprinkle with parsley and cheese.

A wonderful recipe from that great magazine, Food & Family by Kraft. I am a big fan of Italian sausage, and this hits the spot. If when the sausage is browned and you don't have anything to mix the tomato paste with, you can use about 1/4 cup of beef broth to make a nice thick rich sauce.

Jazz up sausages with this spicy tomato pasta

1 tbsp olive oil
4 thick pork sausages, cut into bite-sized pieces
2 garlic cloves, crushed
200ml medium white wine
1 tbsp tomato purée
400g can chopped tomatoes
500g pack rigatoni or penne
handful basil leaves, torn, (optional)
parmesan, to serve

Steps:

  • Heat the olive oil in a heavy-based pan (preferably not non-stick) and add the sausages. Fry for about 8 mins until golden and cooked through. Tip in the garlic and fry for 1 min. Pour in the white wine and boil until it has reduced by half.
  • Stir in the tomato purée and tomatoes, and season to taste. Simmer for 15 mins until the sauce is rich and thick.
  • While the sauce cooks, boil the pasta according to pack instructions and drain. Stir in the basil if using, and cooked pasta into the sauce, then serve in bowls with grated or shaved Parmesan.
