My memories of Mexican carne asada tortas are tied to the ham tortas that El Chavo del Ocho made famous through out the world. Before coming to California I never had the chance to try these delicious sandwiches. Today I will share with you my favorite torta recipe with grilled meat. It is served with tomato, lettuce, avocado, refried beans and mayonnaise, and then wrapped in a lightly toasted roll. To give it an authentic touch, don't forget to add thin slices of jalapeños. 1 lb meat to grill
2 rolls
mayonnaise to taste
1/2 cup of refried beans
1 avocado, sliced
1 cup of lettuce in strips
1 tomato, sliced
Jalapeños, to taste

Steps:

  • Season the meat how you like it or purchase it already seasoned and ready to cook.
  • Open the rolls and spread some mayo over the surface inside.
  • Put the rolls over a griddle or grill and heat until lightly toasted.
  • At the same time, grill the meat until it's cooked, but still tender.
  • Remove the buns from the heat and spread some refried beans on them.
  • Immediately add pieces of meat, then slices of avocado, some lettuce and then tomatoes.
  • Add a few pieces of jalapeño to give it a spicy touch. Serve immediately.

One 8-pound whole bone-in pork butt
Kosher salt
Mexican oregano, for sprinkling
1 torta roll, cut in half
Butter-Olive Oil Spread, recipe follows
Baja Sauce, recipe follows
Sliced queso fresco, for topping
Sliced fried jalapeño, for topping
Avocado slices, for topping
Pico de Gallo, recipe follows
Mixed salad greens, for topping
Cabbage and Lime Salad, recipe follows
1/2 cup (1 stick) softened butter
1/4 cup extra-virgin olive oil
1 cup good mayonnaise
1 to 2 tablespoons fresh key lime juice
Pinch kosher salt
2 medium onions, fine diced
4 tomatoes, fine diced
2 bunches cilantro, coarsely chopped
1/2 cup fresh squeezed key lime juice
1 tablespoon kosher salt
1/2 cup finely sliced cabbage
2 tablespoons shredded carrots
1 tablespoon chopped fresh cilantro
1 teaspoon diced jalapeños
1 key lime
Pinch kosher salt

Steps:

  • For the carnitas: Preheat the oven to 225 degrees F.
  • Place pork butt in a 4-inch-deep roasting pan and coat both sides generously with salt and oregano. Roast fat-side-up 8 hours or up to overnight.
  • Chop meat and crispy fat or pull meat with tongs while hot. Pour juices (if you have any!) over pork and reserve for tortas, tacos, burritos or whatever you can imagine.
  • For the torta: Lightly spread all four surfaces of torta roll with butter-olive oil spread. Toast all sides on the griddle or in a pan.
  • Spread Baja sauce on both halves of the torta. Top with carnitas, queso fresco, jalapeños, avocado, pico de gallo and mixed greens. Cut in half and serve with cabbage and lime salad.
  • Combine butter and olive oil until blended.
  • Combine mayonnaise, lime juice and salt.
  • Mix the onions, tomatoes, cilantro, lime juice and salt well in a bowl and chill.
  • Mix cabbage, carrots, cilantro and jalapeños in a bowl. Squeeze key lime over salad and add salt, then toss.

I worked in a Taco shop and learned how to make this. It is a great change from the traditional carne asada burrito.

2 lbs round steaks
1/4 teaspoon garlic salt, to taste
black pepper
1 tablespoon oil
1 pinch parsley
4 bolillo rolls or 4 French rolls
1 teaspoon mayonnaise
1 tablespoon water

Steps:

  • Cut the steak into small bite size pieces.
  • Add the parsley, garlic salt, and pepper and coat evenly.
  • Heat frying pan on high till hot (water should sizzle on pan).
  • Heat oil for a few seconds and immediately add meat in center of pan and quickly spread meat to one layer.
  • Once oil has dissipated and the meat has browned, add a tablespoon of water to pan and quickly scrap pan to coat the meat.
  • Set aside once water has evaporated.
  • Spread mayonnaise on bolillo rolls and heat mayonnaise side down on pan until toasty golden brown.
  • Serve with refried beans, carne asada, shredded lettuce, guacamole and pico de gallo on roll.

6 ounces hot Smoked Carnitas, recipe follows
1 1/2 cups hot Tomato Salsa, recipe follows
2 ounces Pickled Red Onions, recipe follows
2 ounces Spicy Salsa, recipe follows
1 lime wedge
2 pounds pinto beans
2 tablespoons salt
2 ounces lard
3 ounces chorizo
5 strips bacon, chopped
1/2 onion, cut in strips
1 serrano pepper, chopped
8 ounces light beer
4 ounces pickled jalapeños
4 ounces vinegar
One 5-pound piece boneless pork butt
2 quarts lard
1/2 orange
3 cloves garlic
2 bay leaves
1 teaspoon oregano
6 ounces cola
1 1/2 tablespoons salt
1 teaspoon liquid smoke
2 guajillo peppers
12 tomatoes
5 cloves garlic
1 tablespoon salt
1 teaspoon oregano
1/2 teaspoon ground cumin
1/2 teaspoon ground black pepper
2 ounces vinegar
2 onions (see Cook's Notes)
1 red beet (see Cook's Notes)
3 ounces white vinegar
1 teaspoon oregano
1 teaspoon salt
1/2 teaspoon ground cumin

4 ounces arbol chile pods
5 cloves garlic
8 ounces vinegar

Steps:

  • Cut the baguette open (not all the way), then spread the Puerco Beans inside, and stuff it with the Smoked Carnitas. Cut it in half for better handling purposes, place it in a bowl, and top it with the Tomato Salsa. Garnish with the Pickled Red Onions. Serve with the Spicy Salsa and lime wedge.
  • Cook the pinto beans in a pot with 1 gallon of water and the salt until tender, about 1 hour 30 minutes. Set aside.
  • Preheat another pot for about 2 minutes and add the lard. Let it heat for another minute, then add the chorizo and bacon. Let cook 5 minutes, then add the onion and serrano pepper and let it cook for another 3 minutes, stirring the mixture occasionally. Add the beer to deglaze, then let it reduce for 5 minutes.
  • Grab the cooked beans and add them to the mixture. Let it boil, then add the pickled jalapeños and vinegar and bring it to boil, stirring occasionally. Turn off the heat and check the seasoning.
  • Dice the pork butt into 2-inch pieces. In a pot, heat up the lard to around 350 degrees F (about 5 minutes). Add the pork butt pieces and sear them for about 7 minutes. Squeeze the juice of the orange into the pot, then drop the orange into the pot. Add the garlic, bay leaves, oregano, cola and salt, then turn it down to medium-low heat. Cook until the meat is tender, about 40 minutes, then add the liquid smoke and let cook for 5 more minutes. Strain the carnitas and enjoy.
  • Remove the seeds and veins from the guajillo peppers. Put the peppers in a small pot together with the tomatoes, garlic and 3 quarts water. Place the pot on the stove and boil them until the tomatoes are fully cooked, about 10 minutes.
  • Strain the vegetables, retaining their water, then put them in a blender. Add some of the vegetable water, covering the vegetables halfway, then add the salt, oregano, cumin, pepper and vinegar. Blend together and check the seasoning.
  • Cut the onions in juliennes, then put them in a mixing bowl. Cut the beet into chunks and add them to the bowl. Add the vinegar, oregano, salt, cumin, pepper and 3 ounces water. Cover and let them sit overnight; check the seasoning.
  • Put the chile pods, garlic and 1 quart water in a pot and boil for 10 minutes. Strain the chile pods and garlic, reserving the water. Blend them with the vinegar, salt, cumin, oregano, pepper and 8 ounces of the cooking water. Pass the mixture through a strainer. It is ready to spice up your life.

CARNE ASADA CHEESE TACOS

4 tablespoons (1/2 stick) butter, melted
1/4 cup tequila anejo
1 tablespoon chopped fresh thyme
1 serrano chile, stemmed and finely chopped
2 cloves garlic, finely chopped
2 tablespoons chopped fresh cilantro
1 (1-pound) flap steak or skirt steak
Salt and freshly ground black pepper
Olive oil, for grilling
3 cups shredded Monterey jack cheese
2 avocados, sliced
1 cup store-bought red salsa or hot sauce

Steps:

  • In a 9 by 13-inch glass baking dish, combine the butter, tequila, thyme, serrano, garlic and cilantro and mix well. Transfer steak to the marinade and sprinkle with salt and freshly ground black pepper. Let stand at room temperature for 30 minutes or in the refrigerator for up to 2 hours.
  • Preheat a large griddle or skillet over medium-high heat and brush with olive oil. Cook the steak, turning occasionally, 6 to 8 minutes per side for medium-rare. Let rest on a plate covered with aluminum foil for 10 minutes. Cut the meat against the grain into 1/2-inch pieces.
  • On the same griddle used to cook the steak, over medium-high heat, place 3 (1/4 cup) mounds of cheese spaced 2 inches apart. Let cook for 3 minutes (the cheese will spread flat like a tortilla, make sure they don't stick together). After the cheese browns on the bottom (the cheese will stay white on the top side), add 1/4 cup sliced meat over half of the cheese and fold the other half over like a half moon-shaped quesadilla. Transfer to a baking sheet and cover with aluminum foil to keep warm. Repeat the procedure with the remaining ingredients.
  • Serve each cheese taco with sliced avocado and salsa or hot sauce.

TORTA MILANESA

Four 4-ounce chicken cutlets (about 1/4-inch thick)
Salt and freshly ground black pepper
1 cup all-purpose flour
1 cup plain breadcrumbs
2 large eggs, beaten
Vegetable oil, for frying
4 bolillo or telera rolls or French bread
Mayonnaise, optional
Twelve 1/4-inch slices avocado
12 slices pickled jalapeno or 4 canned chipotles in adobo
12 thin slices white onion
Eight 1/4-inch slices tomato
4 leaves iceberg lettuce
8 lime wedges, for garnish

Steps:

  • Sprinkle the cutlets with salt and pepper all over. Put the flour on a plate and season with salt and pepper. Put the breadcrumbs in a second plate and the beaten eggs in a shallow bowl. Dip the cutlets into the flour, then the eggs and finally into the breadcrumbs, pressing down on both sides so that the breadcrumbs adhere to the meat.
  • Heat enough oil in a large skillet to come 1/3-inch up the sides of pan until a deep-frying thermometer inserted in the oil reaches 350 degrees F. Working in two batches, pan-fry the cutlets until golden, about 2 minutes per side. Using a slotted spoon, transfer to some paper towels to drain.
  • To assemble the sandwiches, halve the rolls horizontally. Pull out the soft center of the bread slices and discard. Place the cutlets on the bottom halves of the rolls and top with mayonnaise if using, the lettuce, tomato, avocado, onion and jalapeno. Arrange the sandwiches on serving plates and garnish with lime wedges.
