1-1/2 pounds bulk spicy pork sausage
1 medium green pepper, chopped
1 medium onion, chopped
1 can (31 ounces) pork and beans
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (15-1/2 ounces) black-eyed peas, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) chickpeas, rinsed and drained
1-1/2 cups ketchup
3/4 cup packed brown sugar
2 teaspoons ground mustard

Steps:

  • In a large skillet, cook and crumble sausage over medium heat until no longer pink; drain. Add green pepper and onion; saute until tender. Drain. Add remaining ingredients., Pour into a greased 13x9-in. baking dish. Cover and bake at 325° for 1 hour. Uncover; bake 20-30 minutes longer or until bubbly.

The original recipe comes from Taste of Home - but I altered some things for what I had and family preference. For the sausage in this recipe - I used elk/deer sausage that our family friend gave to us. You could use any kielbasa type sausage as well. This recipe has a lot of sauce - which we feel is perfect for sopping up with a good loaf of bread! Yield and time are approximate.

Number Of Ingredients 13

1 green bell pepper, chopped
1 medium onion, chopped
1 garlic clove, minced
1 tablespoon vegetable oil
1/2 lb fully cooked sausage, cut into 1/4 inch slices
4 cups chicken broth, I used a quart of homecanned
1 (16 ounce) can black beans, I used 1 pint homecanned
1 (16 ounce) can great northern beans, I used 1 pint homecanned
5 bay leaves
1 teaspoon dried parsley
1 teaspoon ground cumin
3 -4 dashes hot pepper sauce
hot cooked rice

Steps:

  • In a large skillet, saute bell pepper, onion and garlic on oil until tender.
  • Add sausage, broth, beans and seasonings.
  • Cover and simmer for 1 hour, stirring occasionally.
  • Discard bay leaves.
  • Serve in bowls over rice.

1 pound(s) (1 ring) fully cooked smoked sausage, sliced
2 - jalapeno peppers, seeded and chopped
1 tablespoon(s) ground cumin
1 tablespoon(s) chili powder
1 - slow cooker cooking bag

Steps:

  • Line slow-cooker with cooking bag.
  • Pour all ingredients into a large bowl and stir well to combine.
  • Pour mixture into prepared slow-cooker. Cook on Low for 4 to 6 hours.

3 lb. smoked sausage, cut in bite-size pieces
2 pkg. (10 ounces each) frozen lima beans
6 cans (1 lb. each) baked beans
6 cans (1 lb. each) kidney beans, drained
1 cup chopped onions
2 cans (8 ounces each) tomato sauce
1 cup ketchup
1/2 cup brown sugar, packed
1 tsp. dry mustard
2 tsp. salt
1 tsp. pepper

Steps:

  • 1.) Cook and drain lima beans according to package directions. Mix, gently but thoroughly, with all remaining ingredients, except sausage. 2.) Stir in sausage. Bake in large casserole or baking pans, uncovered, at 400º for 60-90 mins.
