Lasagna Alfredo with chicken, ricotta and spinach. So good that my family requests it at least once a week. Serve with diced tomato as a garnish.

1 (16 ounce) package lasagna noodles
1 (10 ounce) package frozen chopped spinach
3 cooked, boneless chicken breast halves, diced
2 (16 ounce) jars Alfredo-style pasta sauce
4 cups shredded mozzarella cheese
2 pints ricotta cheese
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Cook spinach according to package directions; drain.
  • In a medium bowl, combine chicken and one jar of Alfredo sauce, stir together. In a separate bowl, combine ricotta and drained, cooked spinach, and stir.
  • In a 9 x 13 baking dish, place one layer of lasagna noodles, edges overlapping. Pour chicken and Alfredo sauce mixture over noodle layer and spread evenly. Sprinkle 1 cup of shredded mozzarella over chicken mixture. Top with another layer of noodles. Spread spinach mixture evenly over noodles. Pour 1/2 of remaining jar of Alfredo sauce over spinach mixture, spread evenly. Sprinkle another cup of mozzarella over sauce, lay on the final noodle layer and top with remaining 1/2 jar of Alfredo sauce, 2 cups of mozzarella, and salt and pepper to taste.
  • Bake 50 to 60 minutes, until top is brown and bubbly.

1 pound bulk Italian sausage
1 medium green pepper, chopped
1 large onion, chopped
1 can (4 ounces) mushroom stems and pieces, drained
1 jar (15 ounces) roasted garlic Alfredo sauce
1/4 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions. , Meanwhile, in a large skillet, cook the sausage, green pepper, onion and mushrooms over medium heat until meat is no longer pink; drain. Stir in Alfredo sauce. Drain pasta and stir into skillet; heat through. Sprinkle with Parmesan cheese.

1 pound bulk Italian sausage
1 medium onion, chopped
2 garlic cloves, minced
1 can (6 ounces) tomato paste
1 can (28 ounces) crushed tomatoes

3/4 teaspoon pepper, divided
1/4 teaspoon salt
1 large egg, lightly beaten
1 carton (15 ounces) whole-milk ricotta cheese

12 no-cook lasagna noodles
4 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 400°. In a large skillet, cook and crumble sausage with onion over medium heat until no longer pink, 5-7 minutes; drain. Add garlic and tomato paste; cook and stir 1 minute. , Stir in tomatoes, tomato sauce, basil, 1/2 teaspoon pepper and salt; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 10-15 minutes., In a bowl, mix egg, ricotta cheese, 1-1/4 cups Parmesan cheese and the remaining pepper. Spread 1-1/2 cups meat sauce into a greased 13x9-in. baking dish. Layer with 4 noodles, 1-1/2 cups ricotta cheese mixture, 1-1/2 cups mozzarella cheese and 1-1/2 cups sauce. Repeat layers. You can spread a red meatsauce over top for a pretty contrast if you like. You can make this in bread pans and eat one now and freeze the other for later. Or make a big batch and watch it be devoured at your next holiday gathering. This came from Savvy Holiday Entertaining.

16 ounces no-boil lasagna noodles (1 box)
16 ounces ricotta cheese
1 1/2 cups shredded mozzarella cheese
1/2 cup shredded parmesan cheese
2 eggs
1 lb ground beef
1 lb ground sausage (1 package)
salt
seasoning
16 ounces alfredo sauce

Steps:

  • Combine ground beef and sausage with your choice of seasoning and cook over medium heat until brown. While the meat mixture is cooking, mix together ricotta and parmesan with eggs. Stir until blended, set aside.
  • When the meat is browned, drain as much grease as possible from it before stirring into egg and cheese mixture.
  • Spray a bread pan or casserole with non-stick cooking spray. Pour in enough sauce to cover the bottom of the pan, layer in a noodle. In the bread pan, one noodle fills the bottom and makes layering a snap.
  • Next, layer on meat mixture and top with shredded mozzarella. Repeat layering process with sauce, noodle, meat and cheese. Pour a final layer of sauce and then top off with cheese. Cover with foil and bake about 35 minutes, until mixture is bubbly, then remove foil and bake another 10-15 minutes until cheese is melted and edges are brown.
  • Remove from oven, let cool a few minutes before plating. Serve with warm, crusty bread and a green salad for a lovely and simple meal.

1/4 cup dry red wine
1/2 cup chopped fresh basil leaves, plus 2 whole sprigs
2 cloves garlic, minced
Pinch crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 (16-ounce) container 1 percent low-fat cottage cheese
1 (15-ounce) container part-skim ricotta cheese
1 (10-ounce) box frozen chopped spinach, thawed and squeezed dry
2 scallions, chopped
1/4 teaspoon freshly grated nutmeg
8 ounces lean sweet Italian-style turkey sausage, casings removed
1/2 cup finely chopped onion
9 sheets no-boil lasagna noodles, 5 1/2-ounces, (recommended: Barilla)
1 1/2 cups part-skim shredded mozzarella cheese, 6 ounces

Steps:

  • 1. Preheat the oven to 350 degrees F. In a small pot bring the tomatoes, wine, whole basil sprigs, garlic, red pepper flakes, and salt and pepper, to taste, to a simmer; cook until slightly thickened, 10 minutes; set aside.
  • 2. Meanwhile, puree the cottage cheese in the bowl of a food processor until smooth. add the ricotta, spinach, 1/4 cup chopped basil, scallions, nutmeg, and salt and pepper and pulse until just combined; set aside.
  • 3. Coat a large nonstick skillet with nonstick cooking spray set over medium heat. Cook the sausage and onion, breaking it up with a wooden spoon into small pieces, until the meat is browned and the onion tender, 10 minutes.
  • 4. Assemble the lasagna: Mist a 9-inch by 13-inch baking dish with nonstick cooking spray. Spread 1/2 cup tomato sauce on the bottom of the prepared baking dish. Top with 3 noodles, half the ricotta mixture, half the sausage and 1/2 cup shredded mozzarella cheese. Repeat layers with sauce, noodles, remaining ricotta and sausage and 1/2 cup mozzarella cheese. Top with remaining noodles and sauce. Cover with aluminum foil and bake until the noodles are tender and the sauce is bubbling around the edges of the pan, 1 hour.
  • 5. Uncover, sprinkle with remaining mozzarella cheese and continue to bake until melted, 10 minutes. Let stand 15 minutes. Sprinkle with remaining 1/4 cup basil. Serve.

My son is allergic to tomatoes and peppers, so I'm always trying new recipes. He misses pasta, so I came up with this. It came out delicious and includes all the food groups! Any vegetables you have on hand will work.

1 lb lasagna noodle, cooked al dente (very firm)
2 cups half-and-half
1 tablespoon garlic, chopped
3 tablespoons butter
1/2 cup parmesan cheese
1/2 teaspoon oregano
8 ounces mozzarella cheese, grated
1 head broccoli
1/2 head cauliflower
1 lb italian sausage meat
1 small onion
8 ounces mushrooms

Steps:

  • Preheat oven to 350°.
  • Make your alfredo sauce by first melting butter and sauteeing garlic in a medium saucepan.
  • Don't brown the garlic. Add two cups of half and half and bring to a simmer.
  • Add parmesan cheese, and add oregano,salt and pepper to taste.
  • Stir until cheese is melted and set aside.
  • Peel sausage links, if necessary and brown sausage in a little bit of oil in a saute pan. Add sliced onions and mushrooms and cook while stirring, until onions are soft.
  • Cut up your vegetables into bite size pieces and rinse.
  • Spray a 13 x 9 pan with cooking spray and place a couple of large spoonfuls of sauce into the bottom .
  • Lay in four or five of your cooked noodles and top with sausage mixture.
  • Top with alfredo sauce, and add another layer of noodles.
  • Sprinkle in your vegetables and top with alfredo sauce and half of the mozzarella cheese.
  • Top with remaining lasagna noodles and cover with remaining alfredo sauce.
  • Sprinkle top with mozzarella cheese and sprinkle top with parmesan cheese, if desired and cover with non stick aluminum foil (or spray foil with cooking spray).
  • Bake at 350° for about an hour.
  • If you want to brown the cheese, take the foil off for the last 10 minutes.

Purchase a good-quality alfredo sauce for this, it will make all the difference to this recipe, really you can use as much sauce as desired, the amount listed is only a guideline. This can be completely prepared up to 24 hours in advance, covered and refrigerated, or you can prepared the ricotta/spinach mixture up to a day ahead. This lasagna is *delicious* :)

1 tablespoon oil (can use more)
1/4 teaspoon cayenne pepper (optional)
2 tablespoons fresh minced garlic
1 onion, chopped
1 (14 ounce) jar roasted red peppers, drained and chopped
1 (10 ounce) package frozen spinach
1 cup cream-style cottage cheese
1 (16 ounce) container ricotta cheese
1 teaspoon fresh minced garlic (no more than 1 teaspoon or it will overpower the other ingredients!)
1 egg, slightly beaten
1/2 cup grated parmesan cheese
1 1/2 cups shredded mozzarella cheese
1 teaspoon seasoning salt (or use 1/4 to 1/2 teaspoon white salt or to taste)
1/2 teaspoon black pepper
2 (20 ounce) jars alfredo sauce (reduced-fat is okay)
12 lasagna noodles (cooked and tossed gently with 1 tablespoon oil to prevent sticking)
2 cups shredded mozzarella cheese, divided (can use more)
3/4-1 cup grated parmesan cheese

Steps:

  • Grease a 13 x 9-inch baking dish.
  • In a large skillet brown the turkey sausage meat in 1 tablespoon oil along with the onion, garlic and cayenne pepper; cook breaking up the sausage meat while browning.
  • Cook until browned then add in the chopped red peppers; cook for another 2 minutes; drain fat and set aside.
  • Place the spinach in a small saucepan, cover with water and bring to a boil simmer over low heat for about 10 minutes; place in a small colinder, rinse under cold water then hand-squeeze very dry.
  • Place the spinach in a large bowl, then add in the cottage cheese, ricotta cheese, fresh garlic, 1 egg, 1/2 cup Parmesan cheese, 1-1/2 cups mozzarella cheese, seasoned salt and black pepper; mix with a wooden spoon until well combined.
  • Spread 1 cup alfredo sauce onto the bottom of prepared baking dish, then top with 4 cooked lasagna noodles, then HALF of the ricotta/spinach mixture, then sprinkle HALF of the sausage mixture on top.
  • Place about 1 cup (or more) of shredded mozzarella cheese on top of the sausage.
  • Repeat the layers (using 1 cup sauce, 4 lasagna noodles, remaining HALF of the spinach/ricotta mixture and then remaining HALF of the sausage mixture).
  • Top with remaining 4 lasagna noodles, then 1 cup shredded mozzarella cheese ( can use more cheese).
  • Drizzle remaining alfredo sauce over the shredded cheese, then sprinkle with about 3/4 to 1 cup Parmesan cheese (or to taste).
  • Cover with foil and bake at 350 degrees for 50 minutes.
  • Remove the foil and bake uncovered for another 10-15 minutes.
  • Let stand for 20 minutes (or more) before slicing.

2 tablespoons olive oil (divided)
2 garlic cloves (divided)
1 yellow onion, chopped (divided about 1 cup total)
2 boneless chicken breasts, skinless, cut into bite sized pieces
1 lb mild italian bulk sausage
1 teaspoon paprika (smoked or regular)
2 tablespoons dried Italian seasoning (divided)
9 -12 lasagna noodles (not oven-ready or no-boil)
1 quart heavy whipping cream
3 1/2 cups parmesan cheese, divided
16 ounces ricotta cheese
1 egg
15 ounces mozzarella cheese

Steps:

  • Preheat oven to 375 - makes 1 13×9″ pan.
  • In a frying pan on medium heat add 1 T Olive Oil. When heated, add 1 clove garlic and half of the chopped onions and cook until translucent (about 2 minutes). Add chicken, bulk sausage, 1 tsp Italian Seasoning, and Paprika. Cook until meat is cooked thoroughly.
  • Meanwhile, cook lasagna noodles according to package directions. Drain and set aside in single layer so they don't stick together.
  • In a small bowl combine Ricotta Cheese, egg, and 1 T Italian Seasoning - set aside.
  • In a saucepan over medium heat - use remaining Olive Oil (1T), 1 clove garlic, and remaining onions. Heat until translucent. Add heavy whipping cream. When warmed, add 2-1/2 cups shredded Parmesan. Cook stirring constantly until cheese melts but DO NOT ALLOW TO BOIL - turn the heat down if it gets too warm.
  • Assembly: Put a thin layer of white sauce on the bottom of your 13×9″ pan. Top with enough noodles for a single layer. I use wide-lasagna noodles so it takes 3 to do each layer for a total of 9 noodles.
  • Top the noodles with 1/2 of the Ricotta Cheese mixture.
  • Add 1/2 of the meat.
  • Add 1/3 of the Mozzarella Cheese and sprinkle with scant tsp Italian Seasoning.
  • Repeat and finish with white sauce, reserved Parmesan, Mozzarella, and sprinkle with scant tsp of Italian Seasoning.
  • Bake at 375 degrees for 45 minutes. If the top starts to brown too much, cover in foil. Remove from oven and let sit 15 minutes before cutting.
