1/2 lb ground chicken breast
1/2 lb ground dark turkey meat
1 large egg
1 3/4 cups sauerkraut, drained and fairly dry, divided
1/2 cup onion, finely chopped
1 teaspoon Worcestershire sauce
1 teaspoon whole grain mustard (or dejon type)
1/2 teaspoon fresh ground pepper
1/2 teaspoon sage, rubbed (optional)
vegetable oil cooking spray
4 slices aged cheddar cheese
4 hamburger buns, toasted and librally spread with mustard (optional)

Steps:

  • Thouroughly mix together, chicken, turkey, egg, 3/4 cup saurkraut, onion, wostershire sauce, mustard, pepper, and sage if using.
  • Divide mix into 4 patties. Spray a non stick frypan generously with veggie spray; heat to a sizzle. Add patties, reduce heat to medium, cook for about 3 minutes, 'til well browned and flip, cook another 3 minutes, put lid on frypan and cook another 8 minutes; remove lid and place a slice of cheese on top of each pattie, put lid back on and cook another 5 or 6 minutes or until the cheese melts.
  • Remove to plate on top of toasted bottom of roll; place 1/4 cup saurkraut on top of each pattie; top with other half of roll.
  • Or alternately leave the roll out and serve with mustard, veggies and potatoes.

ORIGINAL LAUER-KRAUT BURGERS



Original Lauer-Kraut Burgers image

Number Of Ingredients 14

1 3/4 pounds 80/20 ground chuck
1 1/2 yellow onions, chopped into 1/4-inch pieces
2 teaspoons freshly ground black pepper
1 medium head green cabbage, chopped into 1/4-inch pieces
1/2 cup Lauer Kraut (you may substitute bagged sauerkraut, not canned)
Salt
2 tablespoons active dry yeast
1 tablespoon sugar
3/4 cup powdered milk
8 cups all-purpose flour, plus more for dusting
2 teaspoons salt
3/4 cup shortening
3 eggs
1 teaspoon vegetable oil

Steps:

  • For the burger filling: Brown the ground chuck in a large skillet over medium heat, crumbling the meat pretty finely as it browns. Add the chopped onions and 1 teaspoon of the pepper. Cook the onion down a little, 3 to 5 minutes. Add the chopped cabbage, sauerkraut, remaining 1 teaspoon pepper and 1 teaspoon salt. Let the mixture cook, 10 to 15 minutes, depending on how done you like the cabbage. Strain and let cool.
  • For the dough: Put the yeast and sugar in a 4-cup measuring cup and add warm water to the 1-cup mark. Stir together and let sit until the yeast rises to twice its original size. Put the powdered milk in another 4-cup measuring cup and add water to the 2-cup mark. Stir together. In a large mixing bowl, add the flour, salt and shortening. Cut the shortening into the flour by hand. Next, make a well in the flour and add the eggs, yeast mixture and the powdered milk mixture to the flour. Work it all together until the dough comes away from the bowl (you may need a touch more flour or water). Oil the dough slightly on each side, cover and let rise, for 10 minutes. Pinch and let rise another 15 minutes.
  • To assemble the Lauer-Kraut burgers: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Lightly flour a work surface and put the dough on the flour. Begin to roll the dough as close to a rectangle as you can, roughly 24-by-30 inches. Once the dough is rolled out, cut the dough into squares, roughly 6-by-6 inches. Take a square of dough and roll it out a little bigger, roughly 8-by-8 inches. Turn the re-rolled square over and add a full cup of filling mixture into the middle of the dough. Bring the opposite corners of the square together, and then bring the other 2 opposite corners together. You should have all 4 corners drawn together. Pinch down the 4 seams of the dough. Once you pinch all the seams, push down slightly on the kraut burger. This will release extra air and help you find any place you missed sealing the kraut burger. Turn the sealed pocket over and place it on the prepared baking sheet. Repeat with the remaining ingredients. Bake for 15 to 20 minutes.

Even after more than 50 years of marriage, I love to bake and cook for family and friends. The recipe for these rolls stuffed with cabbage and ground beef has been in my files for years.

1 package (1/4 ounce) active dry yeast
1-1/4 cups warm water (110° to 115°)
1 cup warm milk (110° to 115°)
1/4 cup sugar
2 tablespoons shortening
2 teaspoons salt
5-3/4 to 6-1/4 cups all-purpose flour
1-1/2 pounds ground beef
1 medium cabbage, shredded
1 medium onion, chopped
Salt, pepper and seasoned salt to taste
Melted butter

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, sugar, shortening and salt. Stir in enough flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. , Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. In a large saucepan, cook cabbage and onion until tender. , In a large bowl, combine the meat, cabbage mixture, salt, pepper and seasoned salt. Punch dough down. Turn onto a lightly floured surface; divide in half. Roll each into a 16-in. square. Cut into 4-in. squares. Place 1/4 cup filling in the center of each. Bring corners over filling; pinch to seal. , Place, seam side down, on greased baking sheets. Do not let rise. Bake at 425° for 10 minutes. Reduce heat to 350°; bake 15-20 minutes longer or until golden brown. Remove from pans to wire racks. Brush with melted butter. Serve warm. Refrigerate leftovers.

This was a recipe I came up with when I started trying to lose weight with Sure Slim. It uses Cruskit crispbreads or crackers and follows the "rules" of the diet. Cruskits are those revolting puffed crispbreads that you buy thinking that you are being good but then don't eat. I found that they make an excellent binder for burgers.

400 g ground chicken
8 crackers
1 onion
3 garlic cloves
2 stalks celery
2 large mushrooms
1 zucchini
1 bunch coriander
1 tablespoon soy sauce
2 tablespoons olive oil
salt
pepper

Steps:

  • Put the Cruskits in the food processor and grind to a fine breadcrumb consistency. Tip the crumbs into a bowl.
  • Put the rest of the ingredients except the chicken into the food processor and pulse until finely chopped.
  • Note: Resist the temptation to do the Cruskits and vegetables together. You'll end up with a gluggy mess that is difficult to get out of the food processor.
  • Add the chicken and vegetables to the crumbs and mix together quickly. The crumbs absorb the liquid and become sticky so the quicker you can work, the easier it is to combine everything evenly. I get into it with my hands.
  • Divide into 4 large patties or 8 small ones, about 1.5 to 2 cm thick. Grill for 7 minutes on each side.
  • Serve in a pita bread with lettuce and tomato or serve as a main dish with vegetables.
  • These patties can also be baked in a hot oven. I also make them into meatballs and bake them then freeze them. They can be added to stock and bok choy for a very quick meal.

A lean version of a German beef and cabbage filled roll. They freeze very well, and are good dipped in mustard.

1 onion, chopped
½ medium head cabbage, shredded
½ (1 ounce) package dry onion soup mix
1 (8 ounce) package mild Cheddar cheese, sliced
black pepper to taste
2 (1 pound) loaves frozen bread dough, thawed
butter flavored cooking spray
¼ cup margarine, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain fat. Stir in cabbage and onion soup mix; cook 5 minutes longer, or until lightly browned. Set aside.
  • Roll one loaf of bread dough into a 16x8 inch rectangle, then cut into eight 4 inch squares. Spoon cabbage mixture into center of each square, top with 1 small slice cheese and bring up diagonal points, pinching edges closed. Place krautburgers on a cookie sheet coated with cooking spray, and let rise for about 10 minutes.
  • Bake for 20 minutes, or until brown. Brush tops of warm rolls with margarine. Repeat process with second loaf of bread and remaining cabbage mixture and cheese.

We make our burger patties from scratch rather than buying the pre-made supermarket variety, as they're too salty for me. This recipe ramps up the flavour by trading the salt for a variety of either fresh or dried herbs instead. These are good on turkish breadrolls or ciabatta rolls with salad of your choice.

300 g minced beef
1 tablespoon unsalted butter
1 tablespoon fresh parsley, minced
1/4 teaspoon fresh thyme, minced
1/4 teaspoon fresh sage, minced
1/4 teaspoon fresh oregano, minced

Steps:

  • Freeze the butter.
  • Separate out the beef in a mixing bowl so it's grainy.
  • Combine all herbs in a second bowl.
  • Grate the frozen butter into the beef.
  • Mix in herbs, and combine all ingredients loosely.
  • Shape mixture into 4 large round pattiess 1cm thick. Make a depression in the centre of each.
  • Grill patties 7-10 minutes (depending on how well-done you like your burger!).

2 pounds sauerkraut, drained
2 pounds chicken leg quarters (about 3), split into drumsticks and thighs (see Smart Strategy note) and patted dry
Coarse salt and ground pepper
1 pound kielbasa, cut into 1-inch pieces
5 medium carrots, cut into 1 1/2-inch pieces
1 large yellow onion, halved and sliced 1/4 inch thick
2 cups dry white wine, such as dry Riesling or Pinot Gris
2 tablespoons sugar
2 dried bay leaves
1/2 teaspoon caraway seeds

Steps:

  • In a large bowl, cover sauerkraut with water. Heat a large Dutch oven or other heavy pot over medium-high. Season chicken with salt and pepper. Add to pot, skin side down, and cook, turning until browned on all sides, 8 minutes. Transfer chicken to a plate. Add kielbasa, cut side down, to pot and cook until browned on both sides, about 4 minutes, flipping once. Add carrots, onion, and 1/2 cup water; cook, stirring and scraping up browned bits with a wooden spoon, until water is evaporated and onion is softened, 6 to 8 minutes. Add wine and bring to a boil.
  • Drain sauerkraut, pressing to remove as much liquid as possible. Add to pot, along with sugar, bay leaves, and caraway seeds; season with salt and pepper. Stir to combine.
  • Place chicken, skin side up, on top of sauerkraut and bring mixture to a boil. Reduce heat, partially cover pot, and rapidly simmer until chicken is cooked through and liquid is slightly reduced, about 20 minutes. Remove bay leaves before serving.
