A quick and easy cake--we eat it for breakfast at our house.

- Cream butter or margarine with sugar. Add applesauce; beat well. Stir in flour, soda, and spices. Add nuts and raisins.
- Pour the batter into a greased and floured 8 inch square pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until done. Serve warm.

- In a bowl, cream sugar and shortening. Add egg and mix well. Add the dry ingredients; mix well. Fold in the apples and walnuts., Spread in a greased 8-in. square baking pan. Bake at 350° for 35-40 minutes or until cake tests done. , For sauce, combine sugar, cornstarch and cream in a saucepan. Bring to a boil over medium heat; boil for 2 minutes. Remove from the heat. Add butter and vanilla; stir until butter is melted. Serve warm over warm cake.

- In a large bowl, cream the butter, sugar and vanilla. Add eggs, 1 at a time, beating well after each addition. Combine the flour, cinnamon, nutmeg, salt and baking soda; gradually add to creamed mixture and mix well (batter will be stiff). Stir in apples until well combined., Spread into a greased 13x9-in. baking dish. Bake at 350° for 40-45 minutes or until top is lightly browned and springs back when lightly touched. Cool for 30 minutes before serving., Meanwhile, in a small saucepan, combine brown sugar and butter. Cook over medium heat until butter is melted. Gradually add cream. Bring to a slow boil over medium heat, stirring constantly. Remove from the heat. Serve with cake.

- In bowl cream sugar, butter and eggs. In another bowl mix flour, cinnamon, soda and salt until well blended. Add flour mixture to sugar mixture until well combined. Add apples, your batter will be very thick. Add batter to 9 inch well greased baking dish. Bake in a 350°F oven for 30 - 40 minutes.

APPLESAUCE CAKE
In our house "certain members" (I'm not naming names) eat everything with a side of applesauce. Pork chops, eggs, steak, pancakes, everything. So we have many jars and many types. This is from my grandma Elsie, though she calls for shortening instead of butter. How embarrassing!

- Preheat oven to 350 degrees F.
- In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.
- In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.

- Preheat oven to 350 degrees. In a large bowl, whisk together flour, baking soda, salt, cinnamon, and cardamom. Set aside.
- In another bowl, with an electric mixer, beat butter, brown sugar, and honey until light and fluffy. Add eggs, one at a time, beating until combined. With mixer on low speed, gradually add flour mixture; beat just until combined. Beat in applesauce.

- Blend the sugar and cinnamon.
- Preheat oven to 350 degrees.
- Grease a 10 inch tube pan and dust it with 1 T of the cinnamon sugar mixture.
- Save remainder for cake.
- Blend cake mix, applesauce and eggs until moistened.
- Then beat as directed on cake mix package.
- Reserve 1 1/2 cup batter.
- Pour remaining batter into prepared tube pan.
- Sprinkle batter in pan with remaining cinnamon sugar mixture.
- Top with reserved batter.
- Bake for 35-45 minutes or until cake tests done.
- Cool cake in pan top side up for 15 minutes.
- Invert on serving plate and serve.
