If you have ever been to a BBQ joint down South, you have probably been introduced to what is known as "Alabama White BBQ Sauce." I'm sure that if there ever was an original recipe for this sauce it is now lost to history. My variation is kicked up with a fun spice combination, and some dill relish. My two favorite ways to serve this are with chicken and ribs; however, the introduction of the dill relish, will make it an excellent candidate for seafood. So, you ready... Let's get into the kitchen.

2 clove(s) baked garlic
1/2 cup(s) mayonnaise, duke's is my favorite, but it can be difficult to find
2 tablespoon(s) dill relish
1 tablespoon(s) lemon juice, freshly squeezed
1 tablespoon(s) apple cider vinegar
1 tablespoon(s) fresh clover honey
1/2 teaspoon(s) white pepper, freshly ground, or to taste
1/4 teaspoon(s) salt, kosher variety, or to taste
1 teaspoon(s) dijon mustard, i prefer grey poupon
1 teaspoon(s) hot sauce, i prefer frank's

Steps:

  • PREP/PREPARE
  • Chef's Note: While this sauce is defined as a Barbecue Sauce, most chefs consider it a condiment. In addition, I do not recommend using this sauce as a marinade.
  • Gather your Ingredients (mise en place).
  • Begin by baking the garlic.

  • Place all the ingredients into a blender.
  • Blend until completely smooth.
  • Chef's Tip: If you want the sauce thinner, add a bit of water, a teaspoon at a time, until you reach the desired consistency. If you want it thicker, add a a bit more mayonnaise until you like what you see.
  • Chef's Note: Do a final tasting for proper seasoning.
  • Place in a non-reactive jar, and store in the refrigerator until needed.
  • Chef's Tip: This sauce benefits from a night in the frig before its first use.
  • PLATE/PRESENT
  • Drizzle on some nice baked chicken, or smoked ribs; maybe even a piece of fish or two. Enjoy.

A friend of my mom's from Alabama gave her this recipe. It will keep in the refrigerator for several weeks. Remember to keep any sauce you use for brushing or basting meat separate from the rest, for food safety reasons!

2 cups mayonnaise
2 tablespoons ground black pepper
2 tablespoons salt
6 tablespoons lemon juice
6 tablespoons distilled white vinegar
4 tablespoons white sugar

Steps:

  • In a medium bowl, combine the mayonnaise, pepper, salt, lemon juice, vinegar and sugar. Mix all together until smooth. Use to baste chicken, pork chops or ribs as they cook on the grill. Serve extra as dipping sauce!

This is a BBQ white sauce recipe that I have used for a long time. Over the years, I tweaked some of the ingredients until finally coming up with this formula. It has some great kick, but it is not overpowering. In the Summer, when I am grilling, this sauce is never far from my side. If you are a grillin' person, and grill a lot of chicken, you might want to check this sauce out. So, you ready... Let's get into the kitchen.

MAIN INGREDIENTS
1 cup(s) mayonnaise, recommendation to follow
1/2 cup(s) apple-cider vinegar
2 tablespoon(s) prepared horseradish
2 tablespoon(s) smooth brown mustard, i prefer grey poupon
1/5 tablespoon(s) lemon juice, freshly squeezed
2 teaspoon(s) garlic powder
1 - 2 pinch(es) cayenne pepper
salt, kosher variety, to taste
white pepper, freshly ground, to taste
ADDITIONAL ITEMS
1 - 2 dash(es) hot sauce, i prefer frank's
1 tablespoon(s) dill, freshly chopped

Steps:

  • PREP/PREPARE
  • The absolute best mayonnaise for this sauce is Duke's. Unfortunately, it is hard to find in the Northern States. It is, however, available on Amazon: https://www.amazon.com/Dukes-Mayonnaise-32-ounce-Jar-Pack/dp/B009VMEP2M/ref=cm_cr_arp_d_product_top?ie=UTF8 FYI: If you do take a chance and get this through the mail, do not order when the weather is extremely cold (below freezing). The freezing cold will cause the mayo to separate. I learned this the hard way. However, I did call Duke's directly, and they gave me a refund.
  • The two ingredients that I have added over the years, are freshly chopped dill, and a few drops of Frank's Hot Sauce. To me they are deal breakers, and really give the sauce some multi-level flavors. But, that is just me.
  • Concerning the horseradish... do not use horseradish sauce, use real "prepared" horseradish... The good stuff.
  • Gather your ingredients (mise en place).
  • Add all the Main Ingredients to a non-reactive bowl, and whisk until smooth, and fully combined.
  • Add 2 or 3 drops of Frank's Hot Sauce, and chopped dill, if using.
  • Whisk together until smooth.
  • Chef's Note: Do a final sampling, and add a bit of salt, and pepper, to taste.
  • Cover with cling foil, and place in the fridge for a couple of hours, or overnight, if possible.
  • Chef's Note: Since this is not a cooked sauce, the ingredients need some time to get to know each other.
  • For longer-term storage, place in a non-reactive jar with a tight-fitting lid, and store in the fridge until needed.
  • Chef's Note: If properly stored, this sauce should last about 10 - 14 days. It might last longer; however, I have never been able to keep any extra for a longer period of time :-)
  • PLATE/PRESENT
  • In my opinion, this is the perfect BBQ white sauce for the Summer months, when you are grilling chicken. However, you could try it on other items, and see what happens. Enjoy.

  • Cover bowl with plastic wrap and refrigerate for 1 day before serving.

This is a fabulous sweet and spicy sauce for grilling and dipping. It is an all time favorite.

1 cup taco sauce
½ cup white sugar
½ cup molasses
½ cup vegetable oil
2 tablespoons cider vinegar
2 tablespoons soy sauce
1 tablespoon dry hot mustard
½ teaspoon dried oregano
1 dash hot pepper sauce

Steps:

  • In a medium bowl, whisk together taco sauce, white sugar, molasses, vegetable oil, cider vinegar, soy sauce, dry hot mustard, dried oregano and hot pepper sauce. Chill covered in the refrigerator until ready for use.

  • Assemble equipment: medium saucepan, blender, wooden spoon, spatula, measuring cups and spoons, bowls for ingredients. Peel and mince onions and garlic, chop fresh dill, measure and separate all ingredients.
  • Heat olive oil and butter in a medium saucepan over medium heat. Add shallots and cook for approximately 3 minutes, stirring continuously with a wooden spoon to avoid browning.
  • Continuing over medium heat, add the diced tomatoes, tomato paste, Worcestershire, molasses, brown sugar, and all dry spices (i.e. mustard, cayenne, salt, pepper, smoked paprika) and bring to a simmer. Reduce heat to low and simmer for approximately 15-20 minutes until slightly thickened.
