PINEAPPLE COLESLAW
When I was a child, my mother often served this salad with multicolored marshmallows sprinkled on top, much to my delight. The marshmallows added a touch of sweetness that really complemented this salad's tangy flavor. -Betty Follas, Morgan Hill, California

CREAMY COLESLAW WITH PINEAPPLE
We love creamy coleslaw with pineapple. This one comes out great. Goes great with B-B-Q ribs or pulled pork. If you don't want as sweet you can use less sugar and add a little more apple cider vinegar.

SASSY FREEZER SLAW
Coleslaw made up and put in the freezer. Easy to take out and thaw when you need it in a hurry. It does have a crunch to it and a sweet-sour vinegar based dressing. Freeze for up to two months. Chopped onions and bell peppers are an option to add in if you like them.

- First, open the crushed pineapple, and with a strainer sitting over a bowl, pour the pineapple into the strainer, allowing the juice to drain from the fruit into the bowl; set aside.
- Chop and then wash the green cabbage, and purple cabbage. It's much easier to wash the cabbage in a colander after it's chopped, then drain it on paper towels. While the cabbage is draining, slice the onion in really thin slices, then chop into small pieces. Grate the carrots, and set aside.
- When the cabbage has drained, place it in a large bowl, and add the onion and carrots. Toss together until blended. In a medium bowl place the mayonnaise, or Miracle Whip, sugar, vinegar, salt, pepper, drained pineapple, and pineapple juice. Stir ingredients until the dressing is smooth and well blended.
