Sarasota's Spicy Simple Black Beans image

A quick easy recipe using canned black beans for a side dish any night of the week. I love this with my Margarita Chicken or just any citrus grilled chicken or fish. Maybe a nice spicy chili rub on chicken would be a nice dish with these beans.

Number Of Ingredients 12

2 (15 ounce) cans black beans, drained and rinsed
1 medium onion, diced fine
2 tablespoons garlic
1 (4 ounce) can green chilies
3 tablespoons salsa
1 tablespoon cumin
1 teaspoon chili powder
1 tablespoon olive oil to saute the onion and garlic
1/4-1/2 cup chicken broth (optional, see step 3)
1 teaspoon kosher salt, to taste
1/2 teaspoon ground black pepper, to taste
2 tablespoons fresh cilantro, fine chopped as a garnish

Steps:

  • Vegetables -- In a large saute pan, heat to medium and add the olive oil and saute the onion and garlic and cook on medium, not too high, you want them to sweat more. Cook 4-5 minutes.
  • Spices -- Add in the green chilies, salsa, cumin, chili powder, salt and pepper and mix well, still on medium heat. Now add in the beans and stir to combine.
  • Just let it hang out and cook on low heat while you prepare your main course. As it simmers I often add just a little chicken broth for some moisture. Each time it is different, 1/4 cup up to 1/2 cup, depending on how long they simmer. After 5 minutes the beans are done, but if you are still waiting on your main dish to be ready, maybe add a little more broth as the beans simmer so they don't dry out.
  • Right before serving -- taste for salt and pepper and stir in the cilantro. That's it!

1 tablespoon canola oil
1 small yellow onion, diced
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon chipotle chile powder
1/4 teaspoon cayenne pepper
One 4-ounce can diced green chiles
Two 15-ounce cans black beans, rinsed and drained
1 cup vegetable broth
2 tablespoons chopped fresh cilantro
1/4 cup Cotija cheese

Steps:

  • Heat the oil in a large saute pan over medium-high heat. Add the onion and cook until it begins to soften, about 3 minutes. Add the garlic, cumin, salt, chile powder and cayenne and cook until fragrant, about 30 seconds. Add the chiles, beans and broth and bring to a simmer. Cook, stirring occasionally, until the beans have softened and the sauce has thickened, 5 to 7 minutes. Transfer to a serving bowl and sprinkle with cilantro leaves and Cotija.

1 tablespoon extra virgin olive oil
½ large red onion, chopped
2 tablespoons minced garlic
1 (14.5 ounce) can diced tomatoes with green chile peppers
¼ cup chopped fresh cilantro
3 tablespoons sugar
1 teaspoon cayenne pepper
1 dash chili powder
1 dash cumin
1 dash ground cinnamon
1 (15 ounce) can black beans

Steps:

  • Warm oil in a skillet over medium heat. Stir in onion, and cook about 2 minutes; then stir in garlic, and cook until onion is soft and translucent. Stir in tomatoes, cilantro, and sugar. Season with cayenne pepper, chili powder, cumin, and ground cinnamon. Cook for 10 minutes. Stir in black beans, and bring to a simmer. Reduce the heat to low, cover, and simmer 1 hour or longer.

Sarasota's Spicy Garlic and Bacon Lima Beans image

I actually really like Lima Beans. But, I realize I'm probably in the minority. Salt, pepper and butter is all I need, but this is a great recipe for them. I try to get a few of my "picky" friends to try new vegetables now and then, and this is one of them they really liked. Just a few ingredients takes ordinary frozen vegetables and makes them a great side dish. NOTE: Some think that butter beans are the same as lima beans - and they are - well similar. Both are lima beans, but they are 2 separate varieties. The baby lima beans are the small green ones; whereas butter beans are actually Fordhook, and they are larger and buttery in color (hence the name butter beans), and they do have a stronger flavor. You can buy both frozen, canned, and dried; but difficult to find fresh. For this dish I use frozen. It makes it a quick easy dish.

1 (16 ounce) bag frozen baby lima beans, thawed (the small green ones)
4 -5 slices bacon, diced (I prefer a smoky flavor)
1 medium onion, diced
2 teaspoons minced garlic (you can use more or less, according to taste)
1/3 cup chicken broth
1 pinch red pepper flakes (more or less depending on taste)
1 teaspoon butter (you can add more if you like)
salt
pepper

Steps:

  • Bacon -- In a medium sauce pan, add the bacon and begin to saute on medium heat - don't try to rush it. After the bacon begins to crisp up, drain any excess drippings from the pan. I leave just enough drippings in the pan (1/2 teaspoon), to coat the onion and garlic.
  • Onion and Garlic -- Add the onion, garlic, and red pepper flakes to the pan with the bacon and saute for 2-3 minutes.
  • Beans -- Finish it up. Add the broth, beans and butter and simmer uncovered (medium heat) for 5 minutes or less until the beans are warm and the broth is reduced. Season with salt and pepper.
  • Serve and enjoy!

Instead of Mexican-style stewed tomatoes, I used garden fresh tomatoes and hot peppers. I also threw in some hominy just for fun and used red beans because I didn't have black beans. 1/2 cup onion, chopped (1 medium)
4 garlic cloves, minced
2 tablespoons olive oil or 2 tablespoons cooking oil
15 ounces black beans, rinsed and drained
14 1/2 ounces Mexican-style stewed tomatoes, undrained
1/2 cup salsa
1/4 teaspoon salt
1/8-1/4 teaspoon cayenne pepper
2 cups brown rice (hot, cooked) or 2 cups long grain rice (hot, cooked)
1/2 cup cheddar cheese, monterey jack cheese (shredded) or 1/2 cup mexican cheese, blend (shredded)
1/4 cup onion, chopped

Steps:

  • In a medium saucepan cook the 1/2 cup onion and garlic in hot oil until tender but not brown.
  • Carefully stir in beans, undrained tomatoes, salsa, salt, and cayenne pepper.
  • Bring to boiling and reduce heat.
  • Simmer, uncovered, for 15 minutes.
  • To serve, mound rice on serving plates. Make a well in each mound.
  • Spoon the black bean mixture into wells.
  • If desired, sprinkle with shredded cheese and the 1/4 c chopped onion.
