2 pounds meat or veggies of choice
¼ cup olive oil
¼ cup brown sugar, loosely packed
2 tablespoons apple cider vinegar
2 tablespoons low-sodium soy sauce (or tamari for gluten-free)
2 tablespoons Worcestershire sauce (see Recipe Notes, below)
3 cloves garlic, smashed
2 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon smoked paprika
optional: pinch cayenne pepper
kosher salt & ground black pepper, to season

Steps:

  • Add the olive oil, brown sugar, soy sauce, Worcestershire sauce, apple cider vinegar, chili powder, paprika, & a pinch of cayenne pepper, if using, to a bowl or jar. Season with 2 teaspoons kosher salt & ground black pepper as desired. Whisk or shake to combine.
  • Pour the all-purpose marinade over your meat or veggies of choice. Marinate for at least 6 hours or up to overnight.

ROASTED CHICKEN WITH POMEGRANATE SALSA



Roasted Chicken with Pomegranate Salsa image

Used throughout the Middle East, pomegranate molasses is made by reducing fresh pomegranate juice until a thick syrup. The sweet-tart molasses gives depth and complexity to simple roasted chicken legs, which become beautifully glazed as they cook in the oven. And the pomegranate-orange salad adds welcomed pops of freshness and color to the dish.

Number Of Ingredients 10

1 orange
4 small chicken leg quarters (about 2 1/4 pounds)
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
2 tablespoons pomegranate molasses
2 cloves garlic, minced
1 teaspoon ground coriander
1/4 teaspoon red pepper flakes
3/4 cup pomegranate seeds
1/2 cup fresh parsley, chopped

Steps:

  • Cut off a thin slice from the top and bottom of the orange and place cut-side down on a cutting board. Cut off the rind and any white pith. Working over a small bowl, cut between the membranes to remove the orange segments, letting them fall into the bowl; squeeze the juice from the membranes into the bowl.
  • Put the chicken in a large bowl and season all over with salt and pepper. Add 2 tablespoons of the orange juice, 1 tablespoon olive oil, the pomegranate molasses, garlic, coriander and red pepper flakes; toss well. Cover and refrigerate 2 hours or overnight.
  • Preheat the oven to 400˚ F. Line a 9-by-13-inch baking dish with foil. Place the chicken skin-side up in the dish; scrape the remaining marinade out of the bowl and drizzle around the chicken. Let sit at room temperature while the oven preheats.
  • Roast the chicken until the skin is tight and browning in spots, 35 to 40 minutes. Baste the chicken with the pan drippings (add a little water if the pan seems dry) and roast 10 more minutes. Baste again and continue roasting until the chicken is very tender and the skin is browned and glazed, 5 to 10 more minutes.
  • Chop the orange segments and return to the bowl. Add the pomegranate seeds, parsley and remaining 1 tablespoon olive oil; season with salt and pepper and toss. Transfer the chicken to a platter. Spoon off the fat from the drippings, then drizzle the chicken with the remaining drippings. Top with the pomegranate salsa.

1 tablespoon good olive oil
1 tablespoon dark sesame oil
2/3 cup small-diced red onion (1 small onion)
1 1/2 teaspoons minced garlic (2 cloves)
1 1/2 teaspoons minced fresh ginger root
1/4 teaspoon crushed red pepper flakes
2 tablespoons good red wine vinegar
1/4 cup light brown sugar, packed
2 tablespoons soy sauce
1/2 cup smooth peanut butter
1/4 cup ketchup
2 tablespoons dry sherry
1 1/2 teaspoons freshly squeezed lime juice
1 rotisserie chicken

Steps:

  • Cook the olive oil, sesame oil, red onion, garlic, ginger, and red pepper flakes in a small, heavy-bottomed pot on medium heat until the onion is transparent, 10 to 15 minutes. Whisk in the vinegar, sugar, soy sauce, peanut butter, ketchup, sherry, and lime juice; cook for 1 more minute. Cool.
  • Using a sharp knife, carefully remove the entire breast of the rotisserie chicken and slice it diagonally in 1/2-inch-thick slices. Skewer the chicken slices with wooden sticks and serve with the sauce. Reserve the remaining chicken.

Sarasota's Favorite Simple Fresh Chicken Marinade image

This is easy quick and I love to use fresh herbs which just takes it over the top. You can use dried, but with fresh it is 10 times better. This is great on chicken or even pork , I use this all the time. I marinade for 4-8 hours is best and it comes out perfect every time.

1/4 cup olive oil
1/3 cup lemon juice (fresh)
1 tablespoon Dijon mustard
2 teaspoons garlic, minced
1 tablespoon fresh thyme
1 tablespoon fresh parsley
1 teaspoon fresh rosemary
1/2 teaspoon red pepper flakes, to taste (you can go a bit less (or more)
1/4 teaspoon ground black pepper

Steps:

  • Seasoning -- Just mix in all in a large baggie, toss well and add the chicken. Any type of chicken will work, boneless skinless, thighs, wings, drumettes, bone in breasts, even quarters. Also pork chops, tenderloins, or just even cubes of chicken or pork for kabobs.
  • Of course cubes or thinner cuts will take shorter to marinade, whereas -- larger cuts such as bone in breasts will take longer to marinate. Just enjoy, it is just a nice fresh taste and works great.

Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!

4 skinless, boneless chicken breast halves
4 teaspoons taco seasoning mix
1 cup salsa
1 cup shredded Cheddar cheese
2 tablespoons sour cream

Steps:

  • Preheat oven to 375 degrees F (190 degrees C)
  • Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
  • Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
  • Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.
