2 pints cherry tomatoes
3 garlic cloves, halved
1/3 to 1/2 cup olive oil
1 package (8 ounces) block feta cheese
1 teaspoon sea salt
1/4 teaspoon coarsely ground pepper
1 package (16 ounces) rigatoni or other short pasta
Fresh basil leaves, coarsely chopped

Steps:

  • Preheat oven to 400°. In a 13x9-in. baking dish, combine tomatoes, garlic and 1/4 cup olive oil. Place the block of feta in the center, moving tomatoes so cheese is sitting on the pan bottom. Drizzle feta with remaining oil and sprinkle with salt and pepper. Bake until tomatoes skins start to split and the garlic has softened, 30-40 minutes. , Meanwhile, cook pasta according to package directions for al dente. Drain, reserving 1 cup pasta water. , Stir feta mixture, lightly pressing tomatoes, until combined. Add pasta and toss to combine. Stir in enough reserved pasta water to achieve desired consistency. Sprinkle with basil.

This evolved over many a warm summer night in Brisbane. I take it to parties and it's always gobbled up immediately!

Yield 500 grams of pasta salad, 4 serving(s)

Number Of Ingredients 7

1 container cherry tomatoes
2 cloves garlic, crushed
olive oil (a few splashes)
500 g dried tubular pasta (other shapes will do!)
fresh basil leaf (must be basil, but you can add other fresh herbs like oregano if you wish)
sea salt (to taste)
black pepper (to taste)

Steps:

  • Put pasta on to boil.
  • Halve tomatoes.
  • Place tomatoes in large bowl with all other remaining ingredients, stir well, cover and leave.
  • When pasta is al dente, drain, and then add to tomato mixture.
  • The warm pasta will semi-cook the basil and garlic, releasing its flavour.
  • Serve immediately, with crusty Italian bread and a nice glass of red wine.

This is something I threw together one day. Prepare the veggies while the pasta cooks and you're done in 10 minutes. I use different kinds of tomatoes, depending on what I have on hand. Cherry or grape tomatoes are easy to just throw in - no cutting required.

8 ounces uncooked rotini pasta
1 avocado - peeled, pitted and diced
1 large tomato, diced
½ cup Ranch dressing
2 tablespoons crumbled cooked bacon

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes, until al dente. Drain, and rinse under cold running water to cool.
  • In a bowl, gently toss together pasta, avocado, tomato, dressing, and bacon. Chill until ready to serve.
