GRANDMA'S OATMEAL CAKE
My Grandma's Oatmeal Cake is an old-fashioned cake made with rolled oats and a delicious coconut almond topping.

Steps:
- Preheat oven to 350 degrees F. Grease a 9x13'' pan with non-stick cooking spray.
- Add the oatmeal and butter to a bowl and pour boiling water on top. Set aside.
- In a mixing bowl combine the eggs, brown sugar, and white sugar and mix well.
- In a separate bowl sift together the flour, cinnamon, baking soda, nutmeg, and salt.
- Add to the bowl with eggs and sugars and stir to combine.
- Add the oatmeal mixture and stir to combine.
- Bake for about 35 minutes or until a toothpick inserted in the center of the cake comes out clean.
- While the cake is baking, make the topping by combining all the ingredients in a bowl.
- Remove the cake from the oven and turn the oven to high broil.
- Spread the topping evenly over the warm cake and place under the broiler for 2-4 minutes or until the coconut is golden brown.

- In a small bowl, stir oats into boiling water. Set aside to soak for 20 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan.
- In a medium bowl, cream together the white sugar, 1 cup brown sugar and shortening until smooth. Beat in the eggs one at a time. Sift in the flour, baking soda, salt and nutmeg; stir just until moistened. Mix in the soaked oats. Pour into the prepared pan, and spread evenly.
- Bake for 35 to 40 minutes in the preheated oven, until a toothpick inserted into the cake comes out clean. Turn the oven to the broil setting and let it heat up.
- In a small bowl, stir together the melted butter, 1/2 cup brown sugar, heavy cream, coconut and vanilla. Spread over the top of the cake. Broil for a few minutes, just until the coconut is lightly browned.

SARAH'S OATMEAL CAKE
I found this recipe in my husband's grandmother's old cookbook. His mom, Sarah, had shared it with her. This cookbook collection dates back to 1964. The photograph accompanying this recipe includes my grandmother in-law's lovely vintage apron , as well as her cookbook.

- Pour the boiling water over the oatmeal and let it cool. Add baking soda, salt, and cinnamon to the sifted flour. Add the granulated and brown sugars. Mix in the eggs and oil. Combine the batter with the oatmeal. Pour mixture into a 9 by 12 inch pan. Bake.for 40-50 minutes at 350 degrees.
