HUSH PUPPIES

Categories     appetizer

Time 30m

Yield 6 to 8 servings

Number Of Ingredients 12

2 1/2 cups finely-ground white or yellow cornmeal
1/2 cup all-purpose flour
1 tablespoon baking powder
1 tablespoon ground black pepper
1 1/2 teaspoons salt
1 1/2 teaspoons sugar
3/4 teaspoon baking soda
1/2 teaspoon cayenne pepper
1 1/2 cups buttermilk
3/4 cup chopped fresh scallions
3 eggs, lightly beaten
Oil, for frying

Steps:

  • In a medium bowl, mix the cornmeal, flour, baking powder, pepper, salt, sugar, baking soda and cayenne. In another bowl, gently mix the buttermilk, scallions and eggs.
  • Whisk the wet and dry ingredients together until just combined, then rest the batter for 10 minutes.
  • In a 6-quart stockpot, pour enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 to 360 degrees F. Drop small scoops or rounded tablespoons of the batter into the oil in batches of eight. As soon as the hush puppies start to float, use tongs to rotate and cook until both sides are crisp and light golden brown, 60 to 90 seconds. It helps to put a pasta strainer on top of the hush puppies at this point to keep them submerged. Use a slotted spoon to remove the hush puppies, and transfer to a clean brown paper bag to remove excess grease. Repeat for the remaining batter, about 24 hush puppies total.
  • Serve the hush puppies steaming hot.

HUSHPUPPIES

Categories     appetizer

Time 25m

Yield about 30 hushpuppies

Number Of Ingredients 11

1 cup stone-ground yellow cornmeal
1/2 cup all-purpose flour
2 tablespoons sugar
1 1/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon fine salt plus to taste
Pinch of cayenne
1 1/4 cup butter milk
1 large egg, beaten
2 scallions, finely chopped
Vegetable oil for frying

Steps:

  • Using a fine-meshed sieve over a large bowl, sift together the cornmeal, flour, sugar, baking powder, baking soda, salt, and cayenne. Using a rubber spatula, stir in the buttermilk, egg, and scallions, until a batter is formed. (Take care not to over-mix the batter or the hushpuppies will be dense.)
  • Pour the oil for frying into a large heavy-bottomed pot to a depth of 2 inches. Place over medium heat and heat to 375 degrees F. Working in small batches, using a greased teaspoon, drop spoonfuls of batter into the oil, turning once, frying until golden brown and cooked through, about 4 minutes per batch. Using a slotted spoon, transfer the hushpuppies to a paper towel-lined plate and sprinkle with salt. Serve immediately.
  • Cook's Note: Using a greased spoon (vegetable oil spray works well) helps to release the batter from the spoon. Additionally, if you drop the batter off of the tip of the spoon it will form ball shapes; if dropped off the side it will form oblong shapes.

DIXIE FRIED BLUE CRAB AND CORN HUSH PUPPIES

Dixie Fried Blue Crab and Corn Hush Puppies image

Provided by Food Network

Time 1h40m

Yield 8 servings (3 per serving)

Number Of Ingredients 15

One 1-pound can lump blue crabmeat, drained
255 grams yellow cornmeal
112 grams all-purpose flour
21 grams baking powder
6 grams kosher salt
6 grams light brown sugar
1 1/2 cups buttermilk
1 large egg, beaten with a fork
50 grams canned sweet yellow corn, drained
50 grams green onion, small diced
40 grams pickled jalapenos, medium chopped
10 grams minced fresh garlic
25 grams Parmesan, finely grated
25 grams cooked bacon, chopped
Canola oil, for frying

Steps:

  • Place the crabmeat on a paper towel and cover with another paper towel. Press lightly to remove any excess liquid. Combine the cornmeal, flour, baking powder, salt and brown sugar in a medium bowl until they are incorporated evenly.
  • Next, add your buttermilk and egg and stir completely into mixture to loosen it up. Spoon in your crab meat and mix completely. Follow this with the corn, green onion, jalapenos and garlic. Incorporate the Parmesan and bacon (you can increase the amounts of Parmesan and bacon if you like, and want that to be more of a dominant flavor over the crab). Cover bowl with cling wrap and refrigerate for an hour to congeal for frying.
  • Heat 5 inches canola oil to fry in a medium pot to 350 degrees F.
  • Scoop 1-ounce balls from the hush puppy mixture and fry in batches, stirring and prodding occasionally, until evenly golden, 3 to 5 minutes. Remove to a paper towel to blot any excess oil.

POTATO PUPPIES

Provided by Food Network

Categories     side-dish

Time 45m

Yield 4 servings (about 20 fritters)

Number Of Ingredients 10

Vegetable or canola oil, for frying
1 cup leftover mashed potatoes (see Cook's Note)
1/4 cup whole milk
1/4 cup water
3 tablespoons unsalted butter
Salt and pepper
1/4 teaspoon cayenne pepper
1/2 cup all-purpose flour
2 eggs
1/4 cup grated Parmesan

Steps:

  • Pour oil into a large pot to a depth of 2 inches. Heat over medium heat until the oil registers 340 to 350 degrees F on a deep-frying thermometer.
  • In a saucepan, combine the milk, water, butter and a generous pinch of salt. Bring to a simmer over medium heat, allowing the butter to melt completely. Add the cayenne to the flour and, all at once, pour the mixture into the saucepan. Cook, stirring with a wooden spoon, until the "paste" pulls away from the pan, about 2 minutes. Continue stirring for another 2 minutes to allow the moisture to evaporate.
  • Off the heat, add the mashed potatoes to the saucepan. Return to the heat and stir for another minute. Taste and adjust the seasoning with salt and pepper if needed.
  • Remove from the heat and continue stirring. Whisk the eggs together and, while stirring, add the eggs to the mashed potato mixture. Continue stirring until a smooth paste is formed. Stir in the Parmesan and season with pepper.
  • Transfer the mixture to a large pastry bag fitted with a large open star tip. In batches, pipe inch-long dollops of the choux paste into the hot oil, using a knife or the side of the pan to cut the paste. Fry until the fritters are deep golden brown all over, 3 to 4 minutes. Remove with a slotted spoon and turn out onto a paper towel-lined plate.
