1/4 recipe Basic Sugar-Cookie Dough
Sanding sugar or colored sprinkles, for decorating

Steps:

  • Divide dough in half. Roll out each half between two pieces of parchment paper to about 1/8 inch thick. Transfer each half to a baking sheet; cover tightly with plastic wrap. Refrigerate until firm, about 2 hours or overnight.
  • Preheat oven to 350 degrees, with racks on upper and lower thirds. Remove one sheet of dough from refrigerator, and let stand 1 minute. Using a 3-inch snowflakeshaped cookie cutter, cut out shapes. Place shapes 2 inches apart on parchment- lined baking sheets. Gather together scraps, and reroll as above; chill until firm, 10 to 15 minutes, then cut out more shapes. Repeat process with second sheet of dough.
  • Decorate cookies with sanding sugar or sprinkles, as desired.
  • Bake cookies in upper and lower thirds of oven, switching positions of sheets halfway through, until golden around the edges and slightly firm to the touch, about 15 minutes. Let cool on baking sheets 1 minute; transfer to wire racks to cool completely.

½ teaspoon baking powder
¼ teaspoon salt
1 cup butter, softened
1 cup sugar
1 egg
2 teaspoons lemon extract
Colored sprinkles
2 cups powdered sugar
Milk
Reynolds® Parchment Paper

Steps:

  • Preheat oven to 375 degrees F. Line a cookie sheet with Reynolds® Parchment Paper, set aside.
  • Beat butter and sugar until fluffy with an electric mixer. Mix in egg and lemon extract until well blended.
  • Combine flour, baking powder and salt in a separate bowl. Gradually beat flour mixture into butter mixture until smooth. Divide dough in half; shape into 2 flat disks. Wrap dough in parchment paper; refrigerate 1 hour until firm enough to roll.
  • Roll out the dough 1/8-inch thick between two sheets of lightly floured parchment paper.
  • Cut dough with 2 to 6-inch snowflake cookie cutters. Place cookies 1-inch apart on parchment-lined cookie sheet. Decorate with colored sprinkles.
  • Bake 8 to 10 minutes or until cookies are just beginning to brown on edges. Cool.
  • Mix powdered sugar and milk together in a small bowl, adding milk slowly until desired consistency is reached. Drizzle over cooled cookies.

This is my mom's Christmas cookie recipe that the kids and I have made for years. Great fun to make and decorate.

1 cup shortening
1 ½ cups white sugar
3 eggs
3 ¾ cups all-purpose flour
1 ½ teaspoons salt
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • In a large bowl, cream the shortening with the sugar. Add the eggs and vanilla and mix well. Sift the flour and salt into the creamed mixture and stir in gradually. Chill dough for at least one hour.
  • Roll the chilled dough out to 1/8 inch thick and cut into desired shapes. Bake on an ungreased baking sheet for 6 to 8 minutes. Allow cookies to cool before decorating.

3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup butter, softened
1 ½ cups granulated sugar
2 eggs
1 ½ teaspoons vanilla extract
1 ½ teaspoons almond extract
PAM® Original No-Stick Cooking Spray
2 (7 ounce) pouches red decorating cookie icing
2 (7 ounce) pouches white decorating cookie icing
22 red candy-coated chocolate pieces
44 semisweet chocolate morsels
Reddi-wip® Original Dairy Whipped Topping

Steps:

  • Combine flour, baking powder and salt in medium bowl; set aside. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add eggs, vanilla and almond extracts; mix well. Gradually add flour mixture, beating on low speed after each addition until well blended. Divide dough into 3 portions; wrap each tightly in plastic wrap. Refrigerate dough 2 hours or until thoroughly chilled and firm enough to handle.
  • Preheat oven to 375 degrees F. Spray baking sheets and 5-inch Santa face cookie cutter with cooking spray; set aside. Roll out 1 portion of dough to 1/4-inch thickness on floured surface with floured rolling pin. Cut out cookies with prepared cutter. Transfer with metal spatula to baking sheet, placing 1 inch apart. Repeat with remaining dough portions, spraying cutter with additional cooking spray as needed.
  • Bake 7 to 10 minutes or until edges of cookies are browned lightly. Cool on baking sheet 1 minute before removing cookies and placing on wire racks to cool completely.
  • Use red icing to fill in the hat, leaving the tip of the hat blank. Use white icing to fill in the tip of the hat, the brim of the hat, the beard and to make 2 dots in the center of the face for the eyes. Place a red candy centered between the eyes at the top of the beard for the nose and a mini morsel on each white dot to make eyes. Top beard with Reddi-wip® just before serving.

These cookies are a take on red velvet, with some added flavors they take on their own identity. Friends think they are yummy and they look really festive on the platter.

1 stick unsalted butter, soft
2/3 c granulated sugar
1 egg
1 tsp vanilla extract
1 Tbsp red food coloring
1 tsp white vinegar
1 c all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 c unsweetened cocoa powder
1/4 c crushed peppermint red and white candies
1 c vanilla or white chocolate chips

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. In a medium mixing bowl, cream together onmedium high speed the butter and sugar until light and fluffy, about 3 minutes. Add the egg and beat for 1 minute. Add the vanilla, red food coloring, and vinegar, beat for 2 minutes.
  • 3. In a small bowl stir together the flour, baking powder, baking soda, and cocoa powder, until well blended.
  • 4. Add the flour mixture to the creamed mixture; stir together until all the dough is red. Stir the crushed peppermint candy and white chocolate chips into dough.
  • 5. Drop two teaspoons or a small cookie scoop of dough onto an ungreased cookie sheet about 2 inches apart. Bake 9 minutes, cool on baking sheet for 1 minute, and then remove to a cooling rack to cool. Store cookies in an airtight container. Makes about 36 cookies.

SPARKLING VANILLA CHRISTMAS COOKIES

140g icing sugar, sieved
1 tsp vanilla extract
1 egg yolk
250g butter, cut into small cubes
375g plain flour, sieved
200g icing sugar, sieved
edible food colouring, optional
edible gold and silver balls
approx 2m thin ribbon cut into 10cm lengths

Steps:

  • Tip the icing sugar, vanilla extract, egg yolk and butter into a mixing bowl, then stir together with a wooden spoon (or pulse in a food processor until well combined). Add the flour and mix to a firm dough. Shape the dough into two flat discs and wrap them. Chill for 20-30 mins. Heat oven to 190C/fan 170C/gas 5 and line two baking sheets with non-stick baking paper.
  • Roll out the dough on a lightly floured surface to about the thickness of two £1 coins. Cut out Christmassy shapes (use a cutter if you like) and place on the baking sheets. Using the tip of a skewer, cut a small hole in the top of each cookie. Bake for 10-12 mins until lightly golden.
  • Lift the biscuits onto a wire rack to cool. Meanwhile, mix the icing sugar with a few drops of cold water to make a thick, but still runny icing. Colour with edible food colouring, if you like. Spread it over the cooled biscuits, decorate with edible balls and thread with ribbon when dry.

1 cup granulated sugar
3/4 cup butter or margarine, softened
1 teaspoon vanilla
2 eggs
2 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
3 cups powdered sugar
4 teaspoons light corn syrup
1/4 cup hot water
1/2 teaspoon almond extract
1/8 teaspoon salt
White coarse sugar crystals (decorating sugar), powdered sugar or white edible glitter
1 cup powdered sugar
3 to 5 teaspoons water

Steps:

  • In large bowl, mix granulated sugar, butter, vanilla and eggs until well blended. Stir in flour, baking powder and salt. Cover and refrigerate at least 1 hour but no longer than 24 hours.
  • Heat oven to 400°F. On lightly floured surface, roll about one-third of dough 1/8 inch thick. Cut with 1 1/2 to 2-inch star-shaped cookie cutter. Place 1 inch apart on ungreased cookie sheet.
  • Bake about 6 minutes or until light brown. Remove from cookie sheet to cooling rack. Cool completely, about 30 minutes. Repeat with remaining dough.
  • In medium bowl, mix all glaze ingredients except coarse sugar crystals until smooth, glossy and pourable. Place cooled cookies together in pairs with about 1 teaspoon glaze, with points of top cookie between points of bottom cookie. Place cookies on cooling rack on cookie sheet to catch excess glaze. Pour 1 tablespoon glaze evenly over top and sides of each cookie, glazing only a few at time. When glaze is set but still soft, move cookies to another rack or waxed paper; sprinkle with sugar crystals. (Occasionally remove glaze from cookie sheet, and add a few drops of hot water as necessary to make glaze smooth and thin enough to pour; continue glazing.)
  • In small bowl, mix frosting ingredients to make a frosting that can be easily drizzled or used in a decorating bag, yet holds its shape. Pipe snowflake designs on cookies. Let cookies dry completely before storing.
