RUSTIC RYE BREAD RECIPE FOR BREAD MACHINE



Rustic Rye Bread Recipe For Bread Machine image

This rye bread recipe produces one medium size loaf. Baking times can slightly vary depending on your bread machine baking cycle.

Number Of Ingredients 9

One and third cups of lukewarm water (300 ml)
One-third cup of brown sugar
2 Tablespoons of powdered milk
Two teaspoons of salt
Three cups of all-purpose flour
One cup of dark rye flour, also known as whole grain rye flour and pumpernickel flour
2 ½ teaspoons of bread machine yeast
3 Tbsp of room temperature butter
Two teaspoons of caraway seeds

Steps:

  • Add the water, sugar, milk, salt, and flour to the bread machine.
  • Add 2 ½ teaspoons of bread machine yeast. Active dry yeast or instant yeast will work as well.
  • Close the lid and set the baking cycle to Basic or White Bread Cycle. Press start.
  • About 5 to 10 minutes before the end of the kneading cycle, add two teaspoons of caraway seeds.
  • Let the bread machine finish the baking cycle. Once finished, remove the bread pan and place the loaf on a cooling rack for 15-20 minutes before slicing.

This recipe was inspired by one on King Arthur Flour, but I have simplified it a good deal. (Theirs has mustard seed and instant mashed potatoes.) The secret ingredient for getting that rye bread sourness -- pickle juice!

1 cup pickle juice
1 tablespoon oil
2 cups white bread flour
1 cup rye flour
1 teaspoon instant coffee
1 tablespoon caraway seed (or more to taste)
1/4 cup instant minced onion
1 tablespoon brown sugar
1 teaspoon salt
1 3/4 teaspoons active dry yeast

Steps:

  • Put ingredients in the bread machine in the order listed. Use the whole wheat cycle.

  • If you're kneading the dough by hand, we recommend doing so on a lightly greased counter (spray your work surface lightly with vegetable spray), rather than a floured surface; when working on a floured surface, you run the risk of adding too much flour to the dough, which will result in a tough, dry loaf.
  • Place the dough in a large, lightly greased bowl, cover the bowl with a towel or plastic wrap, and allow the dough to rise till doubled in bulk, 1 1/2 to 2 hours., Turn the dough out onto a lightly oiled surface, and shape it into an oval.
  • Place the dough in a lightly greased 8 1/2 x 4 1/2-inch loaf pan, tent it with lightly greased plastic wrap, and set it aside till doubled in bulk and risen 1 to 1 1/2 inches over the lip of the pan, about 1 to 1 1/4 hours., Bake the bread in a preheated 375°F oven for 35 minutes, or until it's golden brown and tests done (the interior of the loaf will read 190°F on an instant-read thermometer).
