- with an elecgric mixer, mix together cake mix, salad dressing,eggs, water and Cinnamon.
- slowly stir in carrots.
- pour into 2 cake pans and bake 30-35 minutes.
- for icing blend together cream cheese, vanilla and powdered sugar.

- Gradually add melted butter until absorbed.
- Add vanilla, then sugar, one cup at a time. Beat well after each addition.

SAM'S AWESOME CARROT CAKE
I made this for my boyfriend and room mates one night, and they loved it. It was great, and doesn't have raisins like most carrot cakes. I'm not a fan of raisins, so this was perfect for me.

Steps:
- Preheat oven to 325 degrees. Butter a 10" tube or bundt pan.
- Blend oil and sugar. Add eggs, beating well after each addition.
- Sift together flour, salt, cinnamon, and baking soda. Add to egg mixture. Stir completely.
- Fold in carrots and walnuts.
- Pour into pan and bake about 1 hour and 15 minutes. Cool, then remove by inverting pan.

SAM'S FAMOUS CARROT CAKE
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x12 inch pan.
- In a medium bowl, sift together flour, baking soda, salt and cinnamon. Set aside.
- In a large bowl, combine eggs, buttermilk, oil, sugar and vanilla. Mix well. Add flour mixture and mix well.
- In a medium bowl, combine shredded carrots, coconut, walnuts, pineapple and raisins. Using a large wooden spoon or a very heavy whisk, add carrot mixture to batter and fold in well.
- Pour into prepared 8x12 inch pan, and bake at 350 degrees F (175 degrees C) for 1 hour. Check with toothpick.
- Allow to cool for at least 20 minutes before serving.
