A wonderful way to use extra Girl Scout cookies. Samoas® add a tasty crunch to an otherwise smooth brownie layered in between an oatmeal cookie base and a Samoa® topping.

cooking spray
2 ½ cups old-fashioned rolled oats
¾ cup all-purpose flour
¾ cup packed brown sugar
½ teaspoon baking soda
¾ cup unsalted butter, melted
3 caramel and toasted coconut cookies (such as Girl Scout Samoas®)
½ cup unsalted butter
2 (4 ounce) bars high quality dark chocolate, chopped
¾ cup packed light brown sugar
1 teaspoon vanilla extract
2 large eggs
¾ cup all-purpose flour
1 tablespoon unsweetened cocoa powder
½ teaspoon salt
¼ teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray an 8x8-inch baking pan with cooking spray.
  • Mix oats, flour, brown sugar, and baking soda together in a large bowl. Stir in melted butter. Measure 1/3 of the oat mixture into a separate bowl; stir in chopped cookies. Reserve for the topping. Press the remaining oat mixture into the baking pan.
  • Bake in the preheated oven until set, about 10 minutes. Cool for 5 minutes.
  • Meanwhile, melt butter and 1/2 of the dark chocolate in a heavy 1 1/2-quart saucepan over low heat. Stir until smooth. Remove from heat and cool to lukewarm.
  • Stir brown sugar and vanilla into the melted chocolate mixture. Add eggs 1 at a time, beating well after each addition, until mixture is glossy and smooth.
  • Whisk flour, cocoa powder, salt, and baking powder together. Stir into the chocolate mixture. Stir in remaining dark chocolate. Spread brownie batter over the baked oat base. Sprinkle with reserved topping.
  • Bake until the center is set and the topping has turned golden brown, 25 to 28 minutes. Do not overbake. Cool completely before cutting into bars.

1 box brownie mix, with ingredient needed to make brownies
3 1/2 cups shredded coconut, toasted
2 (14-ounce) packages caramels, unwrapped
1/2 teaspoon salt
4 tablespoons milk
3 ounces semi-sweet chocolate

Steps:

  • Prepare brownie mix according to box directions and cool. Preheat oven to 400°F and place coconut on baking pan. Cook for 2-3 minutes. Stir coconut and cook for another 2-3 minutes until toasted. Watch closely so it doesn't burn. In a large, microwaveable bowl, add unwrapped caramels, salt, and milk and cook on high for 3-5 minutes, stirring occasionally (about every 45-60 seconds). Cook until all caramels are melted and smooth. Add coconut and mix together. Spread over cooled brownies. Melt the chocolate in the microwave, drizzle over the coconut layer. Refrigerate 4 to 5 hours, or overnight. Remove at least 1 hour from the fridge before cutting. Remove the brownies about 20 to 30 minutes before serving, so the caramel will soften just a bit.

For any of you that remember the yummy Samoa cookies from the Girl Scouts this recipe will take you back to that time! They are easy to make and so delicious.

1 box(es) brownie mix
3 1/2 cup(s) shredded coconut, toasted
2-14 oz. ounce(s) bags of caramels, unwrapped
1/2 teaspoon(s) salt
4 tablespoon(s) milk
3 ounce(s) semi-sweet chocolate

Steps:

  • Prepare brownie mix according to box directions and cool.
  • Preheat oven to 400 degrees. Spread coconut on baking pan and toast 2-3 minutes. Stir and toast another 2-3 minutes watching to make sure it doesn't burn.
  • In large microwavable bowl add caramels, salt, and milk. Cook on high 3-5 minutes stirring occasionally. Cook until caramel is melted and smooth. Add coconut and mix together. Spread over cooled brownie. Refrigerate 4-5 hours or overnight. Remove 1 hour before cutting. Cut into bars & drizzletop with melted chocolate.
  • Store in refrigerator but remove from refrigerator 20-30 minutes before serving or caramel will be hard.

¾ cup white sugar
½ cup butter
2 eggs
1 teaspoon vanilla extract
¾ cup all-purpose flour
2 tablespoons unsweetened cocoa powder
¼ teaspoon baking powder
2 cups miniature marshmallows
1 cup peanut butter
1 cup chocolate chips
1 ½ cups crispy rice cereal (such as Rice Krispies®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Beat sugar and butter with an electric mixer until fluffy. Beat in eggs and vanilla.
  • Mix flour, cocoa powder, and baking powder together in a small bowl. Add to the egg mixture, beating until smooth. Spread batter into the prepared pan.
  • Bake in the preheated oven until set, about 15 minutes. Remove from the oven and top with marshmallows. Continue baking for 3 minutes. Allow to cool.
  • Meanwhile, melt butter peanut butter and chocolate chips in a small saucepan over low heat. Stir until smooth. Fold in rice cereal. Spread over the marshmallow later. Refrigerate until firm enough to slice, 1 to 2 hours.

¼ cup sugar
1 ¼ cups flour
⅔ cup butter (softened)
2 ½ cups sweetened flaked coconut
2 cups chocolate chips (divided)
½ cup butter
½ cup brown sugar
2 Tablespoons corn syrup
14 ounces sweetened condensed milk

Steps:

  • Preheat oven to 350 degrees. Grease an 7 x 11 inch pan with cooking spray.
  • In a small bowl, mix together sugar and flour, and cut the 2/3 cup butter in with a butter knife. Keep cutting it in the mixture until it has formed evenly-sized crumbs.
  • Press the mixture into the bottom of the 7 x 11 inch pan, and bake for 18-20 minutes - until the edges start to turn a golden brown.
  • Remove from oven and set aside so it can cool completely, then increase the oven temperature to 400 degrees.
  • Place coconut on a baking sheet, spread thin. Place in the oven and bake for 2-3 minutes. Remove from oven, stir coconut, and then bake for an additional 2-3 minutes until it has started to brown. Watch it closely so it doesn't burn. Remove from oven and set aside.
  • Place 1 cup of chocolate chips in a small bowl. Microwave for 30 seconds, then remove and stir. Continue microwaving in 15 second intervals until chocolate chips are completely melted. Pour chocolate chips over shortbread mixture in the 7 x 11 pan, then let it cool completely.
  • In a sauce pan over medium heat, combine the 1/2 cup butter, brown sugar, corn syrup, and sweetened condensed milk. Bring to a boil, stirring constantly (you don't want the mixture to burn, so keep stirring). Continue stirring for 5 more minutes, then remove from heat and stir for an additional 2-3 minutes.
  • Combine coconut mixture and caramel mixture, then spread it evenly over the chocolate chip layer.
  • Melt the 2nd cup of chocolate chips just like the first, and then drizzle it over the top.
  • Let it cool completely, about 1-2 hours, and then serve.
