VANILLA RUM PANNA COTTA WITH SALTED CARAMEL



Vanilla Rum Panna Cotta with Salted Caramel image

2 teaspoons (1 packet) unflavored gelatin
3 cups heavy cream, divided
2 cups plain whole-milk yogurt
2 teaspoons pure vanilla extract
Seeds scraped from 1 vanilla bean
3/4 cup sugar
Dark rum, such as Mount Gay
1/2 cup good caramel sauce, such as Fran's
Fleur de sel

Steps:

  • In a small bowl, sprinkle the gelatin on 3 tablespoons of cold water. Stir and set aside for 10 minutes to allow the gelatin to dissolve.
  • Meanwhile, in a large bowl, whisk together 1 1/2 cups of the cream, the yogurt, vanilla extract, and vanilla seeds. Heat the remaining 1 1/2 cups of cream and the sugar in a small saucepan and bring to a simmer over medium heat. Off the heat, stir the softened gelatin into the hot cream until dissolved. Pour the hot cream-gelatin mixture into the cream-yogurt mixture and stir in 3 tablespoons of rum. Pour into 8 serving glasses and refrigerate uncovered until cold. When the panna cottas are thoroughly chilled, cover with plastic wrap and allow to chill overnight.
  • Before serving, heat the caramel sauce with 2 teaspoons of rum in a small bowl in the microwave or a small saucepan set over low heat, just until warm. Spoon a thin layer of warm caramel on each cold panna cotta, sprinkle with fleur de sel, and serve.

Cereal-Milk Panna Cotta With Caramelized Corn Flake Crunch image

6 cups Kellogg's Corn Flakes
3 cups whole milk
2 cups heavy cream
3/4 teaspoon kosher salt
1/4 cup packed light brown sugar
1 tablespoon powdered gelatin (about 1 1/2 packages)
3/4 cup Kellogg's Corn Flakes
3 tablespoons nonfat milk powder
1 tablespoon granulated sugar
1/2 teaspoon kosher salt
3 1/2 tablespoons unsalted butter, melted

Steps:

  • To make panna cotta, heat oven to 300 degrees. Spread cereal on a baking sheet and bake until toasty, about 12 minutes. While still warm, transfer to large bowl or container and add milk and cream. Stir to combine and let steep 45 minutes. (Dessert will get too starchy if it steeps longer.)
  • Strain into a microwave-safe bowl or a saucepan, pressing to extract liquid. (Discard soggy cereal or eat it.) Add salt and brown sugar, and heat just until milk is hot enough to dissolve sugar, watching carefully. Stir gently to dissolve sugar. Ladle 1/4 cup milk mixture into a small bowl and mix in gelatin. Set aside 5 minutes, then whisk soaked gelatin back into remaining milk mixture.
  • Divide mixture among 8 ramekins or silicone molds. Refrigerate until set, about 2 hours. If using ramekins, cover and reserve until ready to serve. If using molds, freeze 1 hour and pop out onto wax paper (not parchment), then refrigerate until ready to serve.
  • Meanwhile, make topping, if you like: heat oven to 275 degrees. Put 3/4 cup cereal in a large bowl and crush lightly with your hands. In a small bowl, stir together milk powder, sugar and salt. Sprinkle mixture over crushed flakes and add melted butter. Toss to coat cereal evenly. Spread on a baking sheet lined with parchment paper (or a nonstick baking mat) and bake 20 minutes, or until deep golden brown. Remove from pan and set aside to cool. Serve immediately or store in an airtight container up to 1 week.
  • When ready, serve cold panna cottas in ramekins or turn out onto plates. Sprinkle generously with corn flake topping.

1 tablespoon powdered gelatin
4 cups heavy cream
1/2 vanilla bean, split lengthwise
1/2 cup sugar
Mixed berries
Satin chocolate sauce, recipe follows
2 ounces unsweetened chocolate
4 1/2 ounces semisweet chocolate
1/4 cup light corn syrup
1/3 cup hot water

Steps:

  • In a small bowl, combine the water and gelatin and let soak about 10 minutes (do not stir). Meanwhile, in a medium saucepan, heat the cream, vanilla bean and sugar to a simmer over medium heat, stirring occasionally to dissolve the sugar. As soon as it simmers, turn off the heat and add the gelatin mixture, stirring to dissolve the gelatin. If the gelatin doesn't completely dissolve in 3 minutes, return the mixture to the heat and warm gently until dissolved. Pour the mixture into 6 to 8 ramekins or dessert cups. Chill, uncovered, 2 hours.
  • Satin Chocolate Sauce: In the top half of a double boiler, combine the 2 chocolates over simmering water. Stir constantly until melted, then whisk in the syrup and water without removing the double boiler from the heat. Whisk until smooth and shiny. The sauce can be made up to 24 hours in advance and refrigerated. To rewarm, stir over low heat or heat in a microwave.
  • To serve panna cotta, dip the cups in hot water for 10 seconds, then turn the panna cottas out onto dessert plates (or, serve in the cups). Surround each panna cotta with berries and satin chocolate sauce.

8 ounces chopped milk chocolate
1 cup heavy cream
1 cup sugar
Fleur de sel
3/4 cup plus 1 cup milk
1 tablespoon powdered gelatin
2 cups heavy cream
Salted peanuts
Caramelized Popcorn, recipe follows
Whipped cream
Milk chocolate shavings
75 grams glucose
75 grams sugar
50 grams butter
1/4 teaspoon salt
1/4 teaspoon baking soda
Popcorn

Steps:

  • For the ganache: Boil the heavy cream in a saucepan over medium-high heat. Pour the cream into a bowl over the milk chocolate and whisk until the chocolate is melted. Pour one ladle of ganache into the bottom of 8 double rocks glasses. Put in the refrigerator and allow to cool while you make the caramel sauce and panna cotta.
  • For the caramel sauce: Boil the heavy cream in a saucepan over medium-high heat. Put the sugar in a separate saucepan. Add a pinch of fleur de sel to the sugar. Heat the sugar over medium-high heat until it starts to turn a caramel color, 6 to 10 minutes. Slowly add the cream to the dark caramel sauce and whisk together. Allow to cool.
  • For the panna cotta: Pour 3/4 cup of the milk in a bowl. Sprinkle the powdered gelatin over the milk. Heat the remaining 1 cup milk and the heavy cream in a saucepan over medium-high heat and bring to a light simmer. Pour the milk and cream mixture over the gelatin mixture and whisk until dissolved. Pour the salty caramel sauce into the mixture, whisking as you pour. Distribute evenly into the double rocks glasses over the ganache. Place in the refrigerator for 2 to 3 hours.
  • When the panna cotta is chilled, garnish with salted peanuts, Caramelized Popcorn, whipped cream or milk chocolate shavings
  • Make a dry caramel with the glucose and sugar. Heat until it is light caramel in color. Add the butter and mix until melted. Add the salt and baking soda and mix until incorporated. Add the popcorn and toss until evenly coated. Pour on a silicon mat to cool.

Panna cotta, a molded chilled dessert popular throughout Italy, is easy to make and can be prepared in advance. It looks and tastes wonderful with ripe red fruits such as raspberries, strawberries, or sweet cherries.

1 envelope unflavored gelatin (about 1 tablespoon)
2 tablespoons cold water
2 cups heavy cream
1 cup half and half
1/3 cup sugar
1 1/2 teaspoons vanilla extract

Steps:

  • In a very small saucepan sprinkle gelatin over water and let stand about 1 minute to soften. Heat gelatin mixture over low heat until gelatin is dissolved and remove pan from heat.
  • In a large saucepan bring cream, half and half, and sugar just to a boil over moderately high heat, stirring. Remove pan from heat and stir in gelatin mixture and vanilla. Divide cream mixture among eight 1/2-cup ramekins and cool to room temperature. Chill ramekins, covered, at least 4 hours or overnight.
  • Dip ramekins, 1 at a time, into a bowl of hot water 3 seconds. Run a thin knife around edge of each ramekin and invert ramekin onto center of a small plate.

SALTINE PANNA COTTA

55 g saltine crackers (1/2 sleeve)
220 g milk (1 cup)
160 g heavy cream (3/4 cup)
150 g sugar (3/4 cup)
12 g kosher salt (1 tablespoon)
6 g baking soda (1 teaspoon)
1 1/2 gelatin sheets
Pam or other nonstick cooking spray

Steps:

  • Heat the oven to 250°F.
  • Put the saltines on a parchment-lined sheet pan. Bake for 20 minutes to toast them lightly. Cool completely.
  • Transfer the saltines to a blender, pour in the milk, and blend on high for about 20 seconds. Immediately strain the saltine milk through a fine-mesh sieve into a medium bowl, using your hand or the back of a ladle to wring all the milk out of the saltines. Do not force any mushy saltines through the sieve. (We compost the mush.)
  • Whisk in the heavy cream, sugar, salt, and baking soda until fully dissolved.
  • Bloom the gelatin (see page 29).
  • Pour the saltine mixture into a medium saucepan and heat until warm to the touch. Remove from the heat, add the bloomed gelatin, and whisk until dissolved.
  • Lightly Pam-spray 4 (2-ounce) circular molds. We use silicone molds for ease of removal once the panna cottas are set. Put the molds on a flat, transportable surface. Pour the saltine panna cotta base into the molds and transfer to the freezer to set for at least 3 hours, or overnight.
  • Remove the panna cottas from their molds by gently popping them out or by plunging the bases of the molds into warm water for 3 seconds, then tapping them upside down on the counter. Stored in an airtight container, the panna cottas will keep in the freezer for 1 month. Thaw before serving, either overnight in the fridge or for 3 hours at room temperature.

  • Toasting the saltines deepens the flavor of the steeped milk.
  • Powdered gelatin can be substituted for the sheet gelatin: use 3/4 teaspoon.
