SALTED CARAMEL SAUCE
It may be blasphemy to say that hot fudge isn't the ultimate warm ice cream topping, but after tasting this amazing salted caramel sauce, that's exactly what I'm suggesting.

Steps:
- Place sugar in a heavy-bottomed saucepan set over medium-high heat. Stir continuously until sugar begins to melt. Continue stirring until the sugar melts completely, begins to darken and all the chunks are dissolved, about 10 minutes. Stop stirring and continue to cook until the sugar begins to smoke and turns a dark shade of amber, 3 to 8 minutes. Remove from heat and wait 30 seconds.
- Whisk in butter until melted and combined. Slowly pour in 1/2 cup plus 1 tablespoon cream, taking care because it can bubble over. Sprinkle in salt and stir to combine. Transfer sauce to a jar and cool completely before refrigerating.

Don't reserve salted caramel for desserts - it works perfectly with earthy roasted root vegetables too

- Heat oven to 220C/200C fan/gas 7. Halve the parsnips, then cut the thicker end in two lengthways. Boil for 5 mins, then drain well and leave to steam-dry for a few mins. Meanwhile, pour the oil into a shallow roasting tin or a lipped baking tray and heat in the oven for 3 mins.
- Remove the tin from the oven and carefully add the parsnips to the hot oil. Turn them to coat, and make sure they aren't overcrowded (otherwise they won't crisp up). Roast for 30-35 mins or until golden and crisp, turning them halfway through the cooking time.
- About 10 mins before the parsnips are ready, tip the sugar and 2 tbsp water into a small frying pan. Heat very gently until the sugar has dissolved. Turn up the heat and bring the liquid to the boil. Measure 3½ tbsp cold water into a jug. Keep swirling the pan around until the sugar reaches a rich, dark-reddish caramel colour, then remove from the heat. Stand well back and add the water (it will splutter!). Return to the heat, add the butter and the salt, and stir to remove any lumps. The caramel should be runny, so add a splash more water if needed. Pile the parsnips into a serving dish, then drizzle over the salted caramel.

- Preheat oven to 375°. On a lightly floured surface, roll half of dough to 1/8-in. thick circle; transfer to a 9-in. pie plate. Trim crust even with rim., In a large saucepan, add 1 cup plus 2 tablespoons of sugar, butter and 1/4-cup water. Gently stir, pulling edges towards center until mixture is is a deep golden brown, 15-20 minutes. Remove from the heat; immediately and gradually whisk in the cream until blended; add salt. Set aside., Toss apples and lemon juice in a large bowl; set aside. In a small bowl, combine remaining 1/3 cup sugar, flour, apple pie spice, and bitters; toss with apples to coat., Layer 1/3 of the apples in bottom of crust, then spoon 1/3 of the caramel sauce in an even layer. Continue layering with half the remaining apples and caramel sauce. Repeat with remaining apples and caramel. With remaining dough create a lattice crust; place on top of apples., Brush top with egg; sprinkle with sugar and additional salt, if desired. Bake 20 minutes; reduce oven temperature to 325°, bake until golden brown and apples are tender, 25-35 minutes more. Cool completely. If desired, serve with vanilla ice cream and caramel sauce.

- Top and tail and peel the parsnips, then cut them in half across the middle. Cut the fat tops in half and then in half again and cut skinnier bottoms in half. (see bulk of post for in-depth pictures)
- Place the parsnips in a large pan and cover with boiling water. Cook for 5 minutes and then drain well and let them stand somewhere to steam dry for 5 minutes.
- Pour the oil into a large roasting tin and set it in the oven to get hot for 5 minutes whilst the parsnips steam dry.

- Heat the oven to 200°C/180°C fan/gas 6. Drizzle a generous glug of oil into a large roasting tin. Add the cauliflower and parsnips, season with salt and pepper, then toss together to coat the veg in the oil.
- Roast for 30-35 minutes until starting to brown. Remove the veg from the oven. Drizzle the caramel sauce over the top of the veg, toss to coat and sprinkle with a little more sea salt. Return to the oven for 15 minutes until golden and cooked through. Serve scattered with the parsley.

- Boil a saucepan of water big enough to hold the parsnip, season water with table salt. Preheat the oven to 200c.
- Peel and cut the parsnips in quarters (or halves if they are small) and cut out the woody middle and blanch in the boiling water for no more than 2-3minutes.
- Drain and place the parsnips under running cold water to stop them from over-cooking. Place onto a plate or surface with paper to soak up any excess water. Pat dry.
- Heat up a frying pan on a high heat and melt the fat, or oil. Place the parsnips carefully into the hot oil/fat and colour on all sides, turning them occasionally.
