Seafood Creole image

This is a spicy sauce similar to etouffee. By adding seafood, it becomes Seafood Creole. Due to the seasoning mix, it is quite spicy. This can be controlled by adjusting the amount of the peppers. I like mine full strength, but for the wife I have to cut the peppers down to 1/8 teaspoon each. This recipe can easily be doubled or quadrupled for large affairs. It goes great with rice, garlic bread, a green salad and a good white wine, such as white Merlot, white Cabernet, Johannisburg Riesling, or Gewurztraminer. Use your favorite firm, white fish fillets in this recipe. Canned diced tomatoes can be used in place of chopping fresh tomatoes.

¾ teaspoon dried oregano
½ teaspoon salt
½ teaspoon ground white pepper
½ teaspoon ground black pepper
½ teaspoon cayenne pepper
½ teaspoon dried thyme leaves
½ teaspoon dried sweet basil
¼ cup butter
1 cup peeled chopped tomato
¾ cup chopped onion
¾ cup chopped celery
¾ cup chopped green bell pepper
1 ½ teaspoons minced garlic
1 ¼ cups chicken stock
1 cup canned tomato sauce
1 teaspoon white sugar
½ teaspoon hot pepper sauce (such as Tabasco®)
2 bay leaves
1 pound peeled and deveined rock shrimp (thawed if frozen)
1 pound bay scallops (thawed if frozen)
1 pound haddock fillets (thawed if frozen) - cut into bite-size pieces

Steps:

  • Mix together oregano, salt, white pepper, black pepper, cayenne pepper, thyme, and basil in a small bowl; set aside.
  • Melt butter in a large Dutch oven over medium heat; stir in tomato, onion, celery, green bell pepper, and garlic. Cook and stir until the onion is translucent, about 5 minutes.
  • Stir in chicken stock, tomato sauce, sugar, hot pepper sauce, and bay leaves. Reduce heat to low and bring sauce to a simmer. Stir in seasoning mix and simmer until the flavors have blended, about 20 minutes.
  • Gently stir in rock shrimp, bay scallops, and haddock; bring sauce back to a simmer and cook until the shellfish and fish are opaque, about 20 more minutes. Remove bay leaves to serve.

EASY FISH CREOLE



Easy Fish Creole image

This recipe has the trinity in it that is what makes it creole cooking. After reading Derf's review, I set out to find what other Creole recipes used for spices. I found most used garlic and either chili powder, red pepper or Tabasco sauce. So you might want to add 2 cloves of garlic and one of the other pepper spices to put a kick into this recipe. Let me know which pepper and how much you use.

1/2 cup chopped onion
3/4 cup chopped celery
1/2 cup chopped green bell pepper
1 (14 1/2 ounce) can stewed tomatoes, coarsely chopped and undrained
1/2 teaspoon instant minced garlic
1 tablespoon brown Sugar Twin
16 ounces white fish fillets, cut into 16 pieces
2 cups hot cooked rice

Steps:

  • In a large skillet sprayed with butter-flavored cooking spray, saute onion, celery, and green pepper for 10 minutes or until tender.
  • Stir in undrained stewed tomatoes, garlic and brown Sugar Twin.
  • Add fish and mix gently to combine.
  • Lower heat, cover and simmer for 20 minutes, stirring occasionally.
  • For each serving, place 1/2 cup rice on a plate and spoon about 1 full cup fish mixture over top.

1 small onion, sliced
2 tomatoes, peeled & quartered
1 green pepper, de seeded & chopped
2 ounces butter or 2 ounces bacon fat
8 ounces cooked salt fish, flaked
salt & pepper
8 ounces cooked yams or 8 ounces english potatoes, sliced
2 ounces butter
1/2 pint milk (U.S 1 1/4 cups)
2 teaspoons parsley

Steps:

  • TO PREPARE SALT FISH: soak salt fish overnight in cold water, drain. Put into a saucepan, covered with fresh cold water, bring to the boil & simmer for about 15 minutes.
  • Fry the onion, tomatoes & pepper in heated lard or bacon fat.
  • Add the fish & mix thoroughly.
  • Season to taste.
  • Arrange the yam or potato slices to cover the bottom and sides of a greased ovenproof dish.
  • Pile in the fish mixture.
  • Dot with butter & milk.
  • Sprinkle with parsley & bake in a moderately hot oven for 20 minutes (375° Gas Mark 5).

Salt cod is used for cooking in Scandinavian and Spanish cooking, but isn't very well known in the United States. Here's a tasty chowder to introduce it to the uninitiated.

1 lb salt cod fish
1/4 cup fat salt pork, finely diced
1 medium onion, thinly sliced
3 cups raw potatoes, diced
1 cup raw carrot, diced
3 cups boiling water, or chicken broth
1 teaspoon salt, to taste
1/2 teaspoon freshly ground pepper
1 cup canned corn niblet, or hominy ((I prefer hominy))
3 cups whole milk, heated

Steps:

  • Freshen salt cod by soaking it overnight in cold water to cover.
  • Drain, place in a stewing pot, and cover with fresh water.
  • Bring to simmer with low heat.
  • Check to see if the fish is still too salty - if so, drain, add fresh cold water, and bring to simmer again, and drain.
  • Fry salt pork in stewing pot until crisp; remove fried pork scraps and reserve for garnish.
  • Cook onion in pork fat until tender.
  • Add potatoes, carrots, water, salt, and pepper and cook covered for about ten minutes, or until vegetables are tender.
  • Add corn or hominy, heated milk, and freshened salt cod.
  • Bring chowder to a simmering temperature, but do not boil.
  • Garnish with the pork scraps.
  • Serve hot, with freshly baked home made bread or rolls and butter.

PORTUGUESE BACALHAU à BRáS (SALT COD AND POTATOES)



Portuguese Bacalhau à Brás (Salt Cod and Potatoes) image

This is a very unique Portuguese Salt Cod fish dish. Very popular in the Azores Islands of Portugal. Cooked for many occasions and well enjoyed. To save yourself time you can prepare the potatoes ahead of time and let them soak in water untill you are ready to start your dish. Also please note, the Cod must be soaked in water overnight. However if you miss this step you can boil the Cod in a pot of water and keep changing the water a few times. This is to remove the salt from the Cod. Use Boneless Salted Cod (not frozen). You can find this in many Super Markets. I have mentioned below that you can also use a Food Processor and shred the potatoes and onion for ease. You can also cheat by using a family size bag of shoestring french fries ;) Prep time does not include soaking of the Cod.

1 1/2-2 lbs dried salt cod fish
8 russet potatoes, peeled, cut into matchstick pieces (I am basing the serving by 2 potatoes per person)
olive oil, divided
3 medium size onions, cut in half, then sliced thinly (like half moon slices)
4 bay leaves
6 -8 eggs, beaten
1/4 cup chopped parsley
2 tablespoons minced garlic
1 teaspoon hot pepper flakes (optional)
3 dashes Tabasco sauce (optional)
green olives, or
black olives
salt and black pepper (according to taste)
lemon wedge
you can use a food processor to shred the potatoes and onions. you can also cheat by using a family French fries

Steps:

  • Note: Soak Cod fish in water overnight.
  • Next day change water and place Cod in a pot with enough water to cover it. Boil for about 15 minutes. Drain and let cool. Once Cod has cooled, flake it.
  • Add 1 tbsp of olive oil to non stick pan and fry potatoes in batches each time using another tbsp of olive oil if necessary.
  • Place paper towel on the bottom of a glass dish safe for the oven and keep fries warm in the oven.
  • Once you are done with the potatoes add 1 tbsp of olive oil to pan and add the bay leaf. Simmer for about 2-3 minutes. remove bay leafs from pan (discard).
  • add garlic, onions (pepper flakes if using) to the pan and saute until onions begin to soften.
  • add the parsley and let saute a bit.
  • add flaked Cod and keep tossing until Cod gets warm.
  • add the eggs, keep stirring so not to let the eggs stick to pan. this mixture will start to look like scrambled eggs.
  • Once you are done with your Cod and eggs mixture.
  • Combine fries with Cod mixture.
  • add olives if using.
  • taste, add salt and black pepper if needed.
  • when serving squeeze lemon juice from a slice of lemon ontop.
  • add dash of tabsco sauce if using.
  • Enjoy.

Here's a quick and simple fish dish that is very good. I found this recipe on About.com. Adjust the heat level by adjust the amount of Creole seasoning.

2 teaspoons olive oil (and extra for brushing on the baking sheet)
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/2 teaspoon creole seasoning, your favorite
1 tablespoon lemon juice, feshly squeezed
chopped fresh parsley

Steps:

  • Preheat oven to 400°F Line a rimmed baking sheet with foil and brush very lightly with olive oil.
  • Mix the olive oil, mustard, salt and Creole seasoning together.
  • Brush the spice mixture evenly over the fish and place on the prepared sheet.
  • Bake for 15 to 17 minutes or until the fish flakes easily with a fork.
  • To serve:.
  • Drizzle with the lemon juice and sprinkle parsley over the fish. Serve immediately.

  • Rinse fish, pat dry with towel and arrange in baking dish.
