Steps:
- Place a medium-size saute pan over medium heat. Add olive oil and cashews and toss to coat. Add chili powder, salt, and pepper and toss until warmed through. Remove from heat and serve. They will crisp as they sit.

- In a non-stick skillet, heat oil over medium heat and add cashews. Stirring occasionally, cook until cashews are just toasted. Using a slotted spoon, remove cashews from the pan onto a paper towel. Do not wipe the oil from the cashews completely. Just let whatever touches the paper towel absorb but leave the rest so salt and pepper can adhere well. Place cashews in a medium sized bowl and add salt and pepper. Let cool, or better yet, give 24 hours before serving for optimum flavor. Cashews will keep for 2-3 weeks in pantry or up to 3 months in refrigerator. Cook's note: If you find you have added too much salt or pepper, lightly toss in paper towel and let excess just fall off. You want the black pepper flavor to be spicy for this recipe.

These nuts are to die for! I do not like spicy food and I love these. My mom gave me this recipe and I am now making them on a weekly basis!

Steps:
- Whisk egg white in a medium bowl until frothy. Mix in cashews until coated. Let soak for 30 minutes.
- Preheat oven to 250 degrees F (120 degrees C). Line a baking sheet with aluminum foil.
- Combine sugar, cumin, salt, and cayenne pepper in a small bowl. Pour over cashews and toss to coat. Spread cashews on the prepared baking sheet.
- Bake in the preheated oven, stirring halfway through, until fragrant, about 40 minutes. Reduce oven temperature to 200 degrees F (93 degrees C). Continue baking, stirring every 20 minutes, until cashews look dry, 30 to 40 minutes.
- Transfer cashews to a container and let cool, shaking or stirring occasionally to prevent them from sticking together.

- In a medium-sized saucepan, heat the olive oil over medium heat for about 1 minute. Add the cashews and stir to coat.
- Cook for 5 to 10 minutes, stirring periodically with a spatula (and more frequently when you start to notice a change in color), until the cashews are golden brown and fragrant. The amount of time will vary by stove.
- Line a plate or cutting board with paper towels. Using a slotted spoon, transfer the nuts to the plate to drain; do not pat them dry (the oil will help the seasonings adhere).
- While the cashews are still hot, carefully transfer them to a medium-sized bowl and toss with the salt, pepper and rosemary. Serve hot, warm or at room temperature. (I recommend enjoying them hot!)
