We like to add extra punch to this summer stew with a dollop of vibrant salsa verde.

Number Of Ingredients 18

2 aubergines
5 tablespoons olive oil
2 red onions
4 cloves of garlic
2 red peppers, or 1 red and 1 yellow
1 fennel bulb
3 large courgettes
4 large ripe tomatoes
2 teaspoons herbs de Provence
SALSA VERDE (OPTIONAL)
1 small handful of basil
1 small handful of flat-leaf parsley
1 small handful of coriander
1 small handful of mint
1 clove of garlic
1 teaspoon capers
4-5 tablespoons olive oil
½ lemon

Steps:

  • Preheat the grill to high.
  • Cut the aubergines into 1cm slices, then place on a baking tray and brush with 1 tablespoon of oil.
  • Grill for 10 to 12 minutes, till golden brown. Turn the slices over, brush with another tablespoon of oil and grill for 5 to 8 minutes, until golden.
  • Peel and finely slice the onions widthways, peel and finely slice the garlic, then deseed and slice the peppers and fennel. Cut the courgettes into 1cm rounds.
  • In a large frying pan, heat the remaining oil over a medium heat. Add the onions and cook for 5 minutes, until they begin to soften and turn golden.
  • Add the garlic and cook for a few minutes, then add the peppers, fennel and courgettes, and cook for 5 to 8 minutes until they begin to soften.
  • Use a knife to score a cross into the base of each tomato. Put them in a bowl, cover with boiling water and leave for a minute. Remove with a slotted spoon and peel the skin.
  • Cut the tomatoes in half and remove the seeds with a spoon. Roughly chop the tomatoes and add to the pan, along with the aubergine and herbes de Provence.
  • Lower the heat, cover the pan with a tight lid and simmer gently for 20 minutes or so, until the vegetables are cooked through. Season to taste.
  • To make the salsa verde, remove any tough herb stalks and peel the garlic, then use a pestle and mortar to grind the herbs and garlic to a paste, adding a little sea salt to help the process (or blitz in a food processor).
  • Crush in the capers. Stir in the oil, finely grate in the lemon zest and squeeze in the juice, adding more oil or juice if necessary, to create a flavour and texture you like. Season to taste.
  • Serve the ratatouille in bowls with a spoonful of salsa verde.

2 eggplants
6 roma tomatoes
2 yellow squashes
2 zucchinis
2 tablespoons olive oil
1 onion, diced
4 cloves garlic, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
salt, to taste
pepper, to taste
28 oz can of crushed tomatoes
2 tablespoons chopped fresh basil, from 8-10 leaves
2 tablespoons chopped fresh basil, from 8-10 leaves
1 teaspoon garlic, minced
2 tablespoons Chopped fresh parsley
2 teaspoons fresh thyme
salt, to taste
pepper, to taste
4 tablespoons olive oil

Steps:

  • Preheat the oven for 375˚F (190˚C).
  • Slice the eggplant, tomatoes, squash, and zucchini into approximately ¹⁄₁₆-inch (1-mm) rounds, then set aside.
  • Make the sauce: Heat the olive oil in a 12-inch (30-cm) oven-safe pan over medium-high heat. Sauté the onion, garlic, and bell peppers until soft, about 10 minutes. Season with salt and pepper, then add the crushed tomatoes. Stir until the ingredients are fully incorporated. Remove from heat, then add the basil. Stir once more, then smooth the surface of the sauce with a spatula.
  • Arrange the sliced veggies in alternating patterns, (for example, eggplant, tomato, squash, zucchini) on top of the sauce from the outer edge to the middle of the pan. Season with salt and pepper.
  • Make the herb seasoning: In a small bowl, mix together the basil, garlic, parsley, thyme, salt, pepper, and olive oil. Spoon the herb seasoning over the vegetables.
  • Cover the pan with foil and bake for 40 minutes. Uncover, then bake for another 20 minutes, until the vegetables are softened.
  • Serve while hot as a main dish or side. The ratatouille is also excellent the next day--cover with foil and reheat in a 350˚F (180˚C) oven for 15 minutes, or simply microwave to desired temperature.

2 tablespoons olive oil
3 cloves garlic, minced
2 teaspoons dried parsley
1 eggplant, cut into 1/2 inch cubes
salt to taste
1 cup grated Parmesan cheese
2 zucchini, sliced
1 large onion, sliced into rings
2 cups sliced fresh mushrooms
1 green bell pepper, sliced
2 large tomatoes, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat bottom and sides of a 1 1/2 quart casserole dish with 1 tablespoon olive oil.
  • Heat remaining 1 tablespoon olive oil in a medium skillet over medium heat. Cook and stir garlic until lightly browned. Mix in parsley and eggplant. Cook and stir until eggplant is soft, about 10 minutes. Season with salt to taste.
  • Spread eggplant mixture evenly across bottom of prepared casserole dish. Sprinkle with a few tablespoons of Parmesan cheese. Spread zucchini in an even layer over top. Lightly salt and sprinkle with a little more cheese. Continue layering in this fashion, with onion, mushrooms, bell pepper, and tomatoes, covering each layer with a sprinkling of salt and cheese.
  • Bake in preheated oven for 45 minutes.

From Southern Living's Cooking for Company cookbook. This version is baked in the oven. Can be served as a vegetable stew or cold salad. For a special presentation, slice 1 inch off side of of a large eggplant; scoop out pulp and reserve for other uses. Fill eggplant with ratatouille; mound remaining mixture around base of eggplant, if desired. If you cannot find flavorful fresh tomatoes, use 32 oz canned whole tomatoes with liquid. Slice the canned tomatoes and use as you would fresh.

2 lbs zucchini
1/4 cup olive oil (plus 2 tablespoons butter)
3 green peppers, thinly sliced
2 medium onions, sliced vertically
4 cups sliced mushrooms
3 garlic cloves, minced
2 1/2 lbs tomatoes, peeled, seeded and sliced
8 ounces tomato sauce
1 teaspoon dried basil
1/2 teaspoon celery seed
1/8 teaspoon thyme
2 teaspoons Worcestershire sauce
1/4 teaspoon hot sauce
1 bay leaf
salt
1 large whole eggplant (optional for presentation)

Steps:

  • Cut the eggplant and unpeeled zucchini into 1/2 inch slices. Saute eggplant and zucchini in olive oil/butter, several slices at a time; allow 2 or 3 minutes on a side. Remove and drain.
  • Using same skillet, cook green peppers, onion, sliced mushrooms and garlic about 10 minutes over medium heat. Add tomatoes, tomato sauce, herbs, Worcestershire sauce, hot sauce and bay leaf; heat thoroughly. Salt to taste.
  • Place a layer of eggplant, zucchini, and half of tomato sauce in a 2 1/2-quart casserole. Repeat, ending with tomato sauce.
  • Bake, covered at 350* for 1 hour.

This is a recipe that I picked up from somewhere, but I can't remember the place. I think it was in a magazine that was featuring Southern recipes.

1 lb chicken breast tenders, cut into 1-inch pieces
1 medium onion, chopped
1 small red pepper, chopped
1 teaspoon chili powder
1/4 teaspoon salt
1 medium tomatoes, chopped
12 inches prepared pizza crust
shredded monterey jack pepper cheese
1/2 cup guacamole
1/2 cup sour cream
1 medium eggplant
1 medium zucchini
1 medium yellow squash
2 tablespoons Worcestershire sauce
2 tablespoons olive oil
4 ripe plum tomatoes, chopped
1/2 cup pitted black olives, chopped
1/2 cup olive oil
3 tablespoons Worcestershire sauce
3 tablespoons Dijon mustard
3 tablespoons lemon juice
3 tablespoons minced fresh basil
3 tablespoons minced fresh parsley
2 tablespoons capers, drained
2 garlic cloves, minced
1/2 teaspoon salt

Steps:

  • Heat oven to 400. Heat oil in 10" skillet over med-hi heat. Cook chicken, onion, bell pepper, chili powder, and salt in oil about 8 min, stirring occasionally, until chicken is no longer pink (this could be done on the grill too.just marinate chicen pieces for a couple hours and grill for about 15-20 min).
  • Sprinkle tomato over pizza crust. Top with chicken mixture. Place on ungreased cookie sheet or pizza pan. Bake 12-15 min or until hot. Top with warmed salsa and shredded pepperjack cheese; put back in oven for a few min until cheese is melted. Serve with guacamole, and sour cream.
  • Directions for salsa:.
  • Cut eggplant, zucchini, and squash lengthwise into 1/2" slices. Combine 2 tbsp worcest. sauce and 2 tbsp oil in small bowl, mix well. Brush vegies with oil mixture. Place vegies on grid. Grill over hot coals about 5 min or until vegies are tender, turning often.
  • Cut vegies into chunks. Place in large bowl with tomatoes and olives. Combine dressing over vegies; toss well to coat evenly. Serve with above recipe. or chill and have it along side other grilled meats.

A good veggie filling for an omelette or a rustic tart; can be served either warm or cold. This recipe makes alot, so you may want to halve it, -or-, freeze it in portions. From 'Modern French Classics' by Camille Le Foll.

2 aubergines or 2 eggplants
2 onions
1 garlic clove
4 tablespoons olive oil
1 red bell pepper
1 green bell pepper
1 sprig fresh thyme
1 sprig fresh rosemary
2 lbs tomatoes
4 firm courgettes or 4 zucchini
salt & freshly ground black pepper

Steps:

  • Rinse and dice the aubergines (eggplants). Place in a colander, sprinkle with salt. After 1 hour, rinse under running water and blot dry with paper towels.
  • Peel and thinly slice the onions and garlic (remove the growing tip from the garlic). and fry lightly in olive oil, in a deep cooking pan, over medium heat. After a few minutes, add the diced aubergines.
  • Rinse the peppers, remove the seeds and membrane and cut into fine strips. Add to the pan when the onions and aubergines are nicely browned. Add the thyme and rosemary sprigs, and season with salt and pepper.
  • Peel the tomatoes and remove the seeds (I omit this step). Chop roughly.
  • Rinse but do not peel the courgettes (zucchini) and cut into evenly sized pieces. Add the tomatoes and courgettes about 20 minutes after the seasoning, stir the contents of the pan and continue cooking until the vegetables have released their juices and begin to break down.
  • Remove the herbs and adjust the seasoning before serving.
