1-1/2 pounds beef stew meat, cut into 3/4-inch cubes
2 cups salsa
1 tablespoon brown sugar
1 tablespoon reduced-sodium soy sauce
1 garlic clove, minced
4 cups hot cooked brown rice
Sliced jalapeno peppers, optional

Steps:

  • In a 3-qt. slow cooker, combine the beef, salsa, brown sugar, soy sauce and garlic. Cover and cook on low 8-10 hours, until meat is tender. Using a slotted spoon, serve beef with rice and, if desired, sliced jalapeno peppers. Freeze option: Freeze individual portions of cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding water if necessary.

¼ cup extra-virgin olive oil
3 cloves garlic, minced
8 Roma tomatoes - peeled, seeded, and chopped
1 tablespoon tomato paste
salt and ground black pepper to taste
¼ cup fresh basil leaves, thinly sliced
4 cube steaks
salt and ground black pepper to taste
½ cup all-purpose flour
½ teaspoon garlic salt
2 eggs
1 cup garlic-and-herb panko bread crumbs
1 tablespoon vegetable oil, or as needed
1 (8 ounce) package fresh mozzarella, thinly sliced

Steps:

  • Heat olive oil in a saucepan and cook garlic until lightly golden brown and fragrant, about 1 minute. Carefully add tomatoes, tomato paste, salt, and pepper; stir to combine. Simmer sauce, stirring occasionally, until thickened, about 20 minutes. Remove from heat and mix in basil. Stir to combine, taste, and adjust seasoning with salt and pepper. Set aside.
  • Season cube steaks with salt and pepper on both sides. Set 3 shallow dishes on the counter. Add flour and garlic salt to the first, beaten eggs to the second, and bread crumbs to the third. Season eggs with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Coat each cube steak lightly with flour and tap off excess. Dip cube steak in beaten eggs, allowing excess egg to drip off before turning cube steak in bread crumbs. Press bread crumbs into the cube steak to make sure they adhere. Transfer breaded cube steak to a wire rack-lined baking sheet. Continue this process until all cube steaks are coated.
  • Heat oil in a large skillet over medium heat until shimmering. Place cube steak gently into the skillet and cook on the first side until golden brown, 2 to 3 minutes. Turn over carefully and cook on the second side until golden brown, 2 to 3 minutes longer. Return to the baking sheet to drain.
  • Set an oven rack about 8 to 10 inches from the heat source and preheat the oven's broiler. Line a rimmed baking sheet with parchment paper.
  • Transfer cube steaks to the lined baking sheet and place the sliced mozzarella cheese evenly on top. Broil until mozzarella has melted and begins to brown, about 5 minutes. Spoon the tomato sauce over each cube steak before serving.

1/2 cup soy sauce
1/4 cup chopped green onions
3 tablespoons lime juice
2 tablespoons brown sugar

SALSA:
2 navel oranges, peeled, sectioned and chopped
1/4 cup chopped green onions
2 tablespoons orange juice
2 tablespoons red wine vinegar
2 tablespoon chopped lemon
1 tablespoon chopped lime
1 tablespoon sugar
1 tablespoon minced fresh cilantro
1 teaspoon minced jalapeno pepper
1/2 teaspoon grated lemon zest
1/2 teaspoon grated lime zest

Steps:

  • In a shallow dish, combine the first six ingredients; add beef. Cover and refrigerate for 2 hours or overnight, turning occasionally. , Drain and discard marinade. Broil or grill steak, uncovered, over medium heat for 4-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). , Combine salsa ingredients in a bowl. 2 pounds flank steak
1 tablespoon ground cumin
1 tablespoon brown sugar
2 teaspoons ancho chili powder
1-1/2 teaspoons salt
1 teaspoon ground oregano
1 teaspoon ground black pepper
2 large onions, roughly chopped
3 garlic cloves, chopped
2 jalapeno peppers, seeds removed and diced
1 to 2 diced, canned chipotle peppers (not the whole can)
1 tablespoon Adobo sauce from the canned chipotle
1 cup white wine or chicken broth
4 to 5 large tomatoes, cut into large chunks (about 1 pound) or sub with canned tomatoes

Steps:

  • Slice the flank steak into thin strips across the grain.
  • Combine the cumin, sugar, salt, oregano, chili powder, and pepper in a small bowl.
  • Toss the steak strips with the spices until they get completely coated. Let the steak sit for at least 20 minutes or place in the fridge overnight.
  • Heat some oil in a large skillet over medium high heat until it gets smoking hot. When the oil is hot, work in batches to cook the steak strips. Add the steak strips in a single layer and let them sear for 1 to 2 minutes without moving them. When they get a caramelized brown color, give them a stir then transfer to a plate. Repeat with the rest of the steak strips then transfer them to a plate. You don't need to cook the steak all the way, just get it browned. The steak strips will cook more later in the recipe.
  • Don't clean the skillet out. The pieces left behind from cooking the steak will loosen up when you cook the vegetables.
  • Add the onions to the hot skillet and cook, stirring frequently until softened. Add garlic, jalapeño peppers, chipotle, and adobo sauce. Cook for 1 to 2 minutes stirring, until the peppers and garlic are fragrant.
  • Pour in the wine or broth to deglaze the pan. Scrape up any cooked-on bits from the bottom of the skillet.
  • Return the steak strips to the skillet and add the tomatoes. Give everything a stir and reduce the heat to medium. Cover with a lid and simmer for 15 to 25 minutes until the steak gets tender and the tomatoes break down into a juicy sauce.
  • Remove the lid and simmer for 5 minutes to reduce the sauce.
  • Serve with rice or roasted potatoes.

This was a throw-together dish that resulted from defrosted meat, no fresh veggies, and a deep desire to break out my crock pot. The meat was falling apart tender (enough so that my 14 month old could eat it with no problems) and the juice was perfect over mashed potatoes. I'm sure you could use more steaks that what I did for the amount of juice, but this is typed out just as I made it.

3 sirloin tip steaks (large thin cuts)
4 cups water
8 ounces salsa (about half an average jar)
1 (6 ounce) can tomato paste
2 garlic cloves
2 tablespoons vinegar
salt and pepper (to taste)

Steps:

  • Press garlic cloves into the crock pot using garlic press, or finely mince using another method, adding juice and pulp to the crock. For the beginner cook, 1 Tbs of dry minced garlic can be substituted.
  • Add all other ingredients to the crock except steaks.
  • Whisk together until well blended and tomato paste is no longer clumpy.
  • Submerge steaks in sauce.

LOW 'N' SLOW RIB STEAK WITH CUBAN MOJO SALSA

1 rib steak on the bone or côte du boeuf (about 800g)
1 tbsp rapeseed oil
1 garlic clove
2 thyme sprigs
25g butter , chopped into small pieces
sweet potato fries
a dressed salad , to serve
2 limes
1 small orange
½ small bunch mint , finely chopped
small bunch coriander , finely chopped
4 spring onions , finely chopped
1 small garlic clove , crushed
1 fat green chilli , finely chopped
4 tbsp extra virgin rapeseed oil or olive oil

Steps:

  • Leave the beef at room temperature for about 1 hr before you cook it. Heat oven to 60C/40C fan/gas 1 /4 if you like your beef medium rare, or 65C/45C fan/gas 1 /4 for medium. (Cooking at these low temperatures will be more accurate in an electric oven than in a gas one. If using gas, put the oven on the lowest setting you have, and be aware that the cooking time may be shorter.)
  • Put the unseasoned beef in a heavy-based ovenproof frying pan. Cook in the middle of the oven for 3 hrs undisturbed.
  • Meanwhile, make the salsa. Zest the limes and orange into a bowl. Cut each in half and place, cut-side down, in a hot pan. Cook for a few mins until the fruits are charred, then squeeze the juice into the bowl. Add the other ingredients and season well.
  • When the beef is cooked, it should look dry on the surface, and dark pink in colour. If you have a meat thermometer, test the internal temperature - it should be 58-60C. Remove the pan from the oven and set over a high heat on the hob. Add the oil and sear the meat on both sides for a few mins until caramelised. Sear the fat for a few mins too. Smash the garlic clove with the heel of your hand and add this to the pan with the thyme and butter. When the butter is foaming, spoon it over the beef and cook for another 1-2 mins. Transfer the beef to a warm plate, cover with foil, and leave to rest for 5-10 mins. Carve away from the bone and into slices before serving with the salsa, fries and salad.
