PAN-SEARED SALMON WITH NO-FAIL HOLLANDAISE AND ASPARAGUS



Pan-Seared Salmon with No-Fail Hollandaise and Asparagus image

2 skin-on salmon fillets, about 6 ounces each
Sea salt
Ground white pepper
3 tablespoons safflower or other vegetable oil
1/2 pound asparagus, trimmed
3 large egg yolks
1/2 teaspoon Dijon mustard
Pinch cayenne pepper
1 tablespoon fresh lemon juice, plus more for seasoning
1 tablespoon minced fresh chives, plus more for garnish
1 tablespoon minced fresh dill, plus more for garnish
1 tablespoon minced fresh tarragon, plus more for garnish
1 stick (8 tablespoons) unsalted butter, cubed and at room temperature
Bring a medium saucepan of water to a boil.
Season your salmon with sea salt and white pepper.

Steps:

  • Preheat a large skillet over medium-high heat. Add the oil and heat for a couple minutes.
  • Salt the boiling water, add the asparagus and cook for 2 minutes. Drain and reserve on a paper towel-lined plate.
  • Add the salmon skin-side up to the pan and cook for 4 minutes. Flip and cook skin-side down until the skin is crisped and salmon is cooked just past medium-rare, about 6 more minutes.
  • Meanwhile, make the hollandaise sauce: Bring a couple inches of water to a simmer in a small saucepan. Whisk together the egg yolks, mustard, cayenne, lemon juice, 1 tablespoon each of the herbs in a medium metal bowl. Set the bowl over the simmering water (do not let the bowl touch the water) and whisk until the hollandaise has thickened, about 2 minutes. You can move the saucepan on and off the heat to regulate the temperature, so the eggs don't cook too quickly.
  • When the mixture is hot and thickened, gradually add the butter in several batches and whisk after each addition until fully incorporated, about 3 minutes. Add sea salt and white pepper to taste.
  • Place the salmon fillets and asparagus on individual serving plates and spoon the hollandaise over the top. Garnish with the remaining minced herbs and serve.

1/2 cup panko
1/2 cup loosely packed fresh flat-leaf parsley leaves and tender stems
1 sprig fresh tarragon leaves, plus 2 tablespoons coarsely chopped fresh tarragon
2 tablespoons olive oil
2 teaspoons brown sugar
2 teaspoons Dijon mustard
3 tablespoons fresh lemon juice, plus lemon wedges for serving
Four 6-ounce skinless center-cut salmon fillets (about 1 1/2 inches thick)
1 pound thin asparagus, trimmed and cut into 1 1/2-inch pieces
2 cups shelled English peas or thawed frozen peas (about 10 ounces)
2 tablespoons unsalted butter
4 radishes, thinly sliced (about 4 ounces) (see Cook's Note)

Steps:

  • Preheat the oven to 425 degrees F and line a baking sheet with aluminum foil.
  • Bring 8 cups of salted water to a boil in a covered large saute pan. Fill a large bowl with ice water and set a mesh strainer on top of the ice.
  • Pulse the panko, parsley, the leaves from 1 sprig fresh tarragon and 1/4 teaspoon each salt and pepper in a mini food processor until the herbs are coarsely chopped. Drizzle in 1 tablespoon of the oil and pulse until the mixture is combined. Transfer to a plate.
  • Combine the brown sugar, mustard, 1 tablespoon of the lemon juice and remaining 1 tablespoon oil in a small bowl. Brush the tops and sides of the salmon generously with the mustard mixture and sprinkle with salt and pepper. Press a salmon fillet, top-side down, into the panko mixture. Place, panko-side up, on the prepared baking sheet. Repeat with the remaining fillets and bake until the panko is toasted and the salmon is just cooked through, 8 to 10 minutes.
  • Meanwhile, put the asparagus and peas in the saute pan of boiling water and cook until almost crisp-tender, about 3 minutes. Transfer the vegetables to the prepared ice bath with a slotted spoon and let cool, about 1 minute.
  • Meanwhile, heat a second large saute pan over medium-high heat and add the butter, swirling, until melted. Drain the cooled vegetables and add to the pan. Season with salt and pepper. Cook, stirring occasionally, until tender, 3 to 5 minutes. Remove from the heat, add the radishes, the remaining 2 tablespoons lemon juice and 2 tablespoons tarragon. Toss to combine, taste and adjust the seasoning. Serve the salmon with the asparagus salad and a lemon wedge.

This is a quick and easy dinner. Pop the foil packets in the oven while you make the sauce. Easy, great tasting hollandaise sauce. Can be whipped up while the salmon is cooking. This is an adaptation of many different recipes till I found the perfect dish to serve for dinner.

4 sheets aluminum foil (12in x 18in)
4 (150 g) salmon fillets
4 tablespoons butter
4 garlic cloves (minced)
1/2 kg asparagus
2 fresh lemon
fresh ground black pepper (to taste)
fish seasoning, blend (to taste)
1/2 cup butter
3 large egg yolks
2 tablespoons lemon juice
1/8 teaspoon salt (optional)
1 dash cayenne pepper (or to taste) or 1 dash hot pepper sauce (or to taste)
2 tablespoons hot water

Steps:

  • Preheat oven to 230°C (450°F).
  • Cut off ends of asparagus spears and divide into 4 portions.
  • Mince garlic, separate into 4 portions.
  • Place one of tablespoon butter in center of each foil sheet (can use non stick cooking spray to loose some calories).
  • Microwave one lemon for 15 seconds to release the juices.
  • Place one salmon fillet in the center of each sheet.
  • Top with serving of garlic and asparagus.
  • Drizzle each serving with juice from lemon.
  • Sprinkle with fresh ground black pepper and seasoning blend to taste.
  • Bring up the sides of foil and fold top over twice.
  • Fold up ends of foil leaving room for air to circulate inside the foil packets.
  • Place in oven for 12 to 15 minutes or until easy to flake.
  • To prepare the sauce:.
  • Heat the butter in a heavy saucepan until hot and foamy, but DO NOT let the butter brown.
  • In a small bowl, beat egg yolks with lemon juice.
  • Add salt and cayenne pepper or hot sauce.
  • Beat till foamy.
  • Slowly beat in butter, then the water.
  • Return mixture to saucepan and beat over very low heat until mixture is slightly thickened.
  • Remove packets from oven and plate salmon and asparagus (please use extreme caution when opening steam can burn).
  • Drizzle with sauce and serve with lemon wedge on the side.

4 asparagus spears, cooked (looks nice with 2 each green and white)
4 spring roll wrappers
8 mint leaves
1 tablespoon melted butter
2 tablespoons olive oil
8 tomatoes, seeded
8 shallots
8 garlic cloves
1 tablespoon honey
1 cup olive oil
3 tablespoons mustard oil
2 basil leaves
2 sprigs tarragon
2 dried hot chili peppers
2 white peppercorns
1 teaspoon salt
2 limes, zest of
1 cup pine nuts
1/2 cup pine nut oil
4 egg yolks
1/2 teaspoon champagne vinegar
1/2 lime, juice of
1 1/2 cups extra virgin olive oil

Steps:

  • Brush each spring roll wrapper with butter and place 2 mint leaves, a salmon steak and the cooked asparagus inside each wrapper. Sear in olive oil.
  • Tomato/Mustard: Place all ingredients into a saucepan and simmer for about 45 minutes. Yields about 6 cups.
  • Pine Nut Hollandaise: Bring pine nuts and olive oil to a simmer and continue to simmer until the nuts are golden brown. Whisk egg yolks with vinegar and lime juice. Pour the pine nut oil slowly into the mixture to form an emulsion. Keep the hollandaise warm in a bowl over a pot of water or use a bain-marie. Makes 3 cups.

  • Cook 2 bunches jumbo asparagus (trimmed and peeled) in salted boiling water until crisp-tender, about 3 minutes; drain. Combine 2 egg yolks and 1 tablespoon each lemon juice and hot water in a heatproof bowl set over a saucepan of simmering water. Cook, whisking constantly, until thickened, 1 to 3 minutes (remove from the heat if the eggs start to scramble). Gradually whisk in 1 1/2 sticks cut-up butter until thickened, 3 to 5 minutes. Whisk in 4 teaspoons whole-grain mustard; season with salt and cayenne. Thin with lemon juice as needed. Serve over the asparagus.

2 tbsp olive oil
8 asparagus spears, trimmed and halved
2 handfuls cherry tomatoes
1 tbsp balsamic vinegar
2 salmon fillets, about 140g/5oz each
handful basil leaves

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.
  • Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

  • Preheat oven to 275°F. Line a rimmed baking sheet with parchment paper. Toss asparagus with 2 Tbsp. oil, 1/2 tsp. salt, and 1/4 tsp. pepper on prepared sheet, then arrange in a single layer on one half of baking sheet. Bake asparagus 5 minutes.
  • Meanwhile, spread each salmon fillet with 2 tsp. mustard. Sprinkle fillets with 1/4 tsp. salt and 1/4 tsp. pepper total. Toss panko with remaining 1 Tbsp. oil in a small bowl. Sprinkle panko mixture evenly onto salmon fillets, then dust with smoked paprika.
  • After asparagus has baked for 5 minutes, remove baking sheet from oven. Place prepared salmon fillets skin side down on empty half of baking sheet. Return to oven and bake until salmon is firm but still pink in the center and asparagus is tender, 14-16 minutes more for medium rare salmon. Divide salmon and asparagus among four plates and top with tarragon.

1 lb salmon fillet (skinless)
2 cups asparagus, cut into 1 inch pieces (about 8 spears)
2 cups cherry tomatoes, cut into quarters (about 10)
2 tablespoons olive oil
1 tablespoon butter
2 tablespoons fresh lemon juice (about 1/2 a lemon)
1/2 teaspoon kosher salt, to taste
1/4 teaspoon black pepper, to taste

Steps:

  • Heat 1 T of the Olive Oil in a saute pan. Add asparagus pieces and saute over medium heat until tender. Add a pinch of kosher salt and set aside.
  • Rinse the Salmon fillet in cold water and pat dry with paper towel.
  • Heat remaining 1 T of Olive Oil and in a large frying pan. Add butter and place Salmon in pan, skin side up. Add a pinch of kosher salt salt to the salmon, and cook for 3 minutes. Do not move the fillets, so that a sear forms.
  • Turn the fillet over and lower heat to medium. Cook for 3 more minutes.
  • Add the asparagus, cherry tomatoes and lemon juice to the pan. Season with salt and black pepper. Cook for 3-4 minutes over medium heat until fish flakes and appears evenly done in the middle.
  • Serve salmon with asparagus and tomatoes and spoon some of the pan sauce over the fish.

POACHED SALMON WITH HOLLANDAISE SAUCE

Here's my recipe for poached salmon bathed in a classic hollandaise sauce. I serve this dish with boiled, cubed sweet potatoes and broccoli.

1 tablespoon olive oil
Salt and pepper to taste
2 (6 ounce) skinless, boneless salmon fillets
3 egg yolks
1 tablespoon hot water
1 cup butter, cut into small pieces
2 tablespoons fresh lemon juice
Salt and pepper to taste
2 tablespoons chopped fresh chives

Steps:

  • Find a high-sided pan large enough to accommodate both salmon fillets side-by-side, without too much excess room; a small skillet or medium-sized saucepan should do. Pour lemon juice and olive oil into the pan, along with enough water to bring the water level up to 3/4-inch. Season the water to taste with salt and pepper, then add the salmon. Pour in enough water to just cover the salmon.
  • Place the salmon over medium-high heat, and heat until the water is hot and steaming, but not simmering (165 degrees F (75 degrees C)); reduce heat if needed to keep the water at the proper temperature. Poach until the salmon turns opaque, and is firm to the touch; or to an internal temperature of 140 degrees F (60 degrees C). Proceed making the Hollandaise sauce while the salmon is poaching.
  • Pour a few inches of water into a saucepan, and bring to a boil over high heat, then turn heat to medium-high and maintain water at a gentle boil. Place the egg yolks in a metal bowl, and whisk in hot water. Place the bowl over, but not touching, the boiling water. Whisk constantly until the yolks thicken, turn a light, opaque yellow, and double in volume. You may need to remove the bowl from the boiling water from time to time in order to keep from scrambling the yolks.
  • When the yolks have thickened and increased in volume, begin whisking in the butter, a cube at a time until it melts and incorporates into the hollandaise sauce. Wait for each cube to melt and incorporate before adding the next. Once all of the butter has been incorporated, remove from heat, whisk in the lemon juice, and season to taste with salt and pepper.
  • To serve, drain the poached salmon and place each piece onto a dinner plate. Generously ladle with the warm hollandaise sauce, and sprinkle with chives.

Steps:

  • Spread the breadcrumbs and pine nuts in a baking dish and bake for 10 minutes. (Chopped almonds may be used in place of the pine nuts.).
  • Wash the salmon fillets.
  • Pat dry, and brush with the Dijon mustard.
  • Sprinkle the bread crumb mixture over the salmon steaks, pressing to adhere to the fish.
  • Heat the oil, butter and shallot in oven-proof skillet over medium-high heat.
  • Add salmon, crumb-side down and cook until golden brown, 3 to 5 minutes.
  • Turn fish over.
  • Transfer skillet to oven.
  • Bake 8 to 10 minutes more, until cooked.
  • For the sauce: Reduce the lemon juice in a saucepan to 1 teaspoon.
  • Add the heavy cream and boil until slightly thickened.
  • Whisk in the butter until smooth. Add the fresh dill.
  • Season to taste with salt and pepper.
