Something I created myself when trying to figure out what to do with some salmon steaks, spinach, chives, and thyme ended up being very delicious. Serve with sweet potato fries and acorn squash or with your choice of sides.

¼ cup olive oil
2 salmon steaks
1 tablespoon garlic salt, or to taste
1 tablespoon onion salt, or to taste
1 tablespoon paprika, or to taste
1 ½ teaspoons ground black pepper, or to taste
1 ½ teaspoons salt, or to taste
1 tablespoon chopped chives
2 teaspoons chopped fresh thyme
4 leaves fresh spinach
¼ cup Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8-inch baking dish with olive oil.
  • Pour 1/4 cup olive oil in a shallow bowl and dip salmon steaks in oil to coat. Stir garlic salt, onion salt, paprika, black pepper, and salt together in a small bowl; sprinkle seasoning onto salmon. Place salmon steaks into the prepared baking dish and sprinkle with chives, thyme, and spinach leaves. Sprinkle Parmesan cheese over the fish and seasonings.
  • Bake in the preheated oven until the salmon is cooked through and the flesh flakes easily, about 45 minutes.

3 teaspoons olive oil, divided
4 salmon fillets (6 ounces each)
1-1/2 teaspoons reduced-sodium seafood seasoning
1/4 teaspoon pepper
1 garlic clove, sliced
Dash crushed red pepper flakes
10 cups fresh baby spinach (about 10 ounces)
6 small tomatoes, seeded and cut into 1/2-in. pieces
1/2 cup balsamic vinegar

Steps:

  • Preheat oven to 450°. Rub 1 teaspoon oil over both sides of salmon; sprinkle with seafood seasoning and pepper. Place in a greased 15x10x1-in. baking pan; roast until fish just begins to flake easily with a fork, 10-12 minutes., Meanwhile, place remaining oil, garlic and pepper flakes in a 6-qt. stockpot; heat over medium-low heat until garlic is softened, 3-4 minutes. Increase heat to medium-high. Add spinach; cook and stir until wilted, 3-4 minutes. Stir in tomatoes; heat through. Divide among four serving dishes., In a small saucepan, bring vinegar to a boil. Cook until vinegar is reduced by half, 2-3 minutes. Immediately remove from heat., To serve, place salmon over spinach mixture. Drizzle with balsamic glaze.

8 ounces salmon steaks (fresh or frozen)
2 teaspoons cooking oil
1 tablespoon butter or 1 tablespoon margarine
1 teaspoon cornstarch
1 dash white pepper
1/2 cup half & half light cream
1 large egg yolk, beaten
2 tablespoons dry white wine
green seedless grape (optional)

Steps:

  • Thaw salmon steaks, if frozen.
  • Preheat a 6 1/2-inch microwave browning dish on 100% power for 3 minutes.
  • Add cooking oil to the browning dish; swirl to coat the dish.
  • Place fresh or thawed salmon steaks in the browning dish.
  • Micro-cook, covered, on 100% power for 30 seconds.
  • Turn the salmon steaks and micro-cook, covered, on 50% power about 3 minutes or till the salmon flakes easily when tested with a fork.
  • Let the salmon steaks stand, covered, while preparing the wine sauce.
  • For the wine sauce, in a 4-cup measure microwave the butter or margarine, uncovered, on 100% of power for 45 seconds to 1 minute or till melted.
  • Stir in the cornstarch and white pepper.
  • Stir in light cream.
  • Micro-cook, uncovered, on 100% power for 2 to 3 minutes or till mixture is thickened and bubbly, stirring every minute.
  • Stir HALF the hot cream mixture into the beaten egg yolk.
  • Return all to the 4-cup measure.
  • Micro-cook, uncovered, on 50% of power for 1 minute, stirring every 15 seconds.
  • Stir till mixture is smooth.
  • Stir in dry white wine.
  • Transfer the salmon steaks to a serving platter.
  • Spoon the wine sauce atop.
  • Garnish with seedless green grapes, if desired.

Frozen spinach and garden vegetable cream cheese combine with salmon fillets! This is easy to double, if you need 4 servings. Created for a regular oven, this recipe is easily prepared in an air fryer by reducing the temperature by 25 degrees and reducing the time by five minutes. Be sure to monitor for doneness, because overcooking will dry out the salmon.

4 ounces frozen chopped spinach, thawed
1 tablespoon unsalted butter
¾ cup chopped fresh mushrooms
¼ cup chopped onion
¼ cup grated Parmesan cheese
3 ounces garden vegetable cream cheese, softened
¼ teaspoon garlic powder
⅛ teaspoon kosher salt, or to taste
ground black pepper to taste
1 tablespoon extra-virgin olive oil
1 tablespoon fresh lemon juice
2 (8 ounce) skinless salmon fillets
ground sea salt to taste
2 slices lemon
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a 9x11-inch baking pan with foil.
  • Press as much liquid from the thawed spinach as possible using clean dish towels or paper towels and place in a medium mixing bowl.
  • Melt butter in a small, nonstick skillet over medium heat. Stir in mushrooms and onions and cook, stirring occasionally, until the onions begin to turn clear, about 4 minutes. Add cooked mushrooms and onions to spinach with Parmesan cheese, garden vegetable cream cheese, and garlic powder. Stir until well combined and add kosher salt and pepper. Set aside.
  • Combine olive oil and lemon juice in a small bowl.
  • Pat salmon fillets dry and brush both sides with the combined olive oil and lemon juice. Place fillets in the foil-lined pan and sprinkle with ground sea salt. Divide spinach mixture evenly between the two fillets.
  • Bake in the preheated oven until the salmon flakes easily with a fork, 15 to 19 minutes. Garnish with lemon slices and fresh parsley.

4 slices lemon

  • In a small bowl, combine spinach, mayonnaise, mustard, lemon juice and garlic salt; cover and refrigerate until serving., Place trivet insert and 1 cup water in a 3- or 6-qt. electric pressure cooker. Place salmon on trivet; sprinkle with lemon pepper and top with lemon slices. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. Quick-release pressure. A thermometer inserted in fish should read at least 145°., Discard lemon slices. Serve salmon with spinach sauce.

Number Of Ingredients 8

2 lbs fresh spinach
4 salmon steaks, about 1-inch thick
salt and pepper
1 teaspoon dill weed
1/4 cup butter (or margarine)
1 large onion, chopped
1 garlic clove, minced
lemon wedge

Steps:

  • Wash spinach and shake off water. Cut into 1-inch-wide strips and set aside. Turn on broiler and preheat broiler pan.
  • Wipe fish with damp cloth. Remove broiler pan and grease lightly; arrange fish in single layer on pan. Broil about 4 inches from heat for 5 minutes. Remove pan from broiler; turn fish and season to taste with salt and pepper. Sprinkle evenly with dill weed and dot with about 1 Tblsp. butter. Return pan to broiler and broil fish about 5 minutes more or until it flakes readily when prodded in thickest portion with a fork.
  • Meanwhile, in a wide frying pan, melt remaining 3 Tblsp. of the butter over medium-high heat and saute onion and garlic until soft. Stir in spinach (with water that clings to leaves). Cover pan and cook, stirring occasionally, over high heat for about 3 minutes or until wilted and bright green.
  • To serve, spoon spinach onto warm rimmed platter. Lay salmon steaks on top. Garnish with lemon wedges.
