BAKED LEMON GARLIC SALMON RECIPE

- Heat oven to 375 degrees F.
- Make the lemon-garlic sauce. In a small bowl or measuring cup, mix together the lemon juice, lemon zest, extra virgin olive oil, garlic, oregano, paprika and black pepper. Give the sauce a good whisk.
- Prepare a sheet pan lined with a large piece of foil (should be large enough to fold over salmon). Brush top of the foil with extra virgin olive oil.
- Now, pat salmon dry and season well on both sides with kosher salt. Place it on the foiled sheetpan. Top with lemon garlic sauce (make sure to spread the sauce evenly.)
- Fold foil over the salmon (seam-side up). Bake for 15 to 20 minutes until salmon is almost completely cooked through at the thickest part (cooking time will vary based on the thickness of your fish. If your salmon is thinner, check several minutes early to ensure your salmon does not overcook. If your piece is very thick, 1 1/2 or more inches, it may take a bit longer.)
- Carefully remove from oven and open foil to uncover the top of the salmon. Place under the broiler briefly, about 3 minutes or so. Watch closely as it broils to make sure it doesn't overcook and the garlic does not burn.)

- Preheat oven to 350°. In a small skillet, saute garlic in 1 tablespoon oil for 1 minute. , Arrange salmon steaks in a greased 13x9-in. baking dish. Combine lemon juice, parsley, salt, pepper and remaining oil; pour over salmon. Top with garlic mixture. , Bake, uncovered, 25-30 minutes or until fish flakes easily with a fork.

Steps:
- Dredge salmon in flour sprinkled with paprika and set aside.
- Heat 2 tablespoons butter in saucepan.
- Add onion and chives; cook for 3 minutes over low heat.
- Pour in chicken stock, add Tabasco, ginger, season well and bring to a boil.
- Mix cornstarch with water and stir into sauce and cook for one minute over low heat.
- Stir in cream and bring to a quick boil and then remove from heat and set aside.
- Heat oil in a large frying pan . Add salmon and cook 4 minutes over medium high heat.
- Turn fish over and season well and cook another 4 minutes.
- Turn fish over again and cook another 7 minutes. Turn fish over during this time a bit.
- Meanwhile, heat 1 teaspoons butter in another frying pan and add cucumbers.
- Cook 3-4 minutes over medium high heat.
- Simmer lemon sauce over low heat and when warmed, serve with fish and sauteed cucumber.

BAKED SALMON STEAK
Something I created myself when trying to figure out what to do with some salmon steaks, spinach, chives, and thyme ended up being very delicious. Serve with sweet potato fries and acorn squash or with your choice of sides.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8-inch baking dish with olive oil.
- Pour 1/4 cup olive oil in a shallow bowl and dip salmon steaks in oil to coat. Stir garlic salt, onion salt, paprika, black pepper, and salt together in a small bowl; sprinkle seasoning onto salmon. Place salmon steaks into the prepared baking dish and sprinkle with chives, thyme, and spinach leaves. Sprinkle Parmesan cheese over the fish and seasonings.
- Bake in the preheated oven until the salmon is cooked through and the flesh flakes easily, about 45 minutes.

Steps:
- Place veal in non-corrodible dish. Place crushed coriander seeds, honey, lemon juice and vegetable stock in saucepan.
- Bring to boil and remove from heat.
- Pour sauce over veal.
- Cut lemons in half and place them cut side down on the meat.
- Cover and refrigerate for 12 hours. Turning once or twice.
- Remove veal from marinade and grill or barbeque on both sides until cooked to your liking.
- Season with salt and pepper.
- Just before veal is cooked, place leftover marinade in saucepan and bring to boil and simmer for a minute.
- Pour sauce on top of cooked steaks.
