4 hard-boiled eggs (see our Perfect Hard Boiled Eggs tutorial here), peeled
1 14.75 ounce can Alaskan salmon (or 1½ cups cooked fresh salmon)
6 tablespoons mayonnaise
1 teaspoon Dijon mustard
2 tablespoons fresh lemon juice
2 tablespoons fresh celery, minced very fine
1 tablespoon red onion, minced very fine (or use scallions in place of onion)
2 teaspoons fresh dill, chopped
¼ teaspoon kosher salt
Pinch freshly ground black pepper
Pinch Cayenne pepper

Steps:

  • Coarsely chop three of the hard-boiled eggs. Finely chop the fourth hard-boiled egg. Place all of the chopped eggs in a medium bowl. (The finely-chopped egg will help bind the mixture.)
  • Remove cooked salmon from can and carefully remove all liquid, bones and skin, yielding about 1½ cups of usable meat. (See our tip below in Notes section for instructions on how to clean canned salmon.) Add this to the eggs but try not to break up the salmon pieces yet.
  • In a small bowl, mix mayonnaise, mustard, lemon juice, celery, onion, dill, salt, pepper and cayenne pepper. Whip to combine. Taste and adjust.
  • Fold mayonnaise mixture into egg and salmon mixture until combined. Break up any large pieces of salmon as you mix but try to keep some pieces large enough to be noticeable.
  • Chill and serve over lettuce, or made into a sandwich.

Simple and elegant, this Salmon Salad with Curried Egg is a snap to prepare for lunch or a light dinner.

One 7.5-ounce can wild Red Sockeye
1 tablespoon plus 1 teaspoon extra-virgin olive oil
2 teaspoons lemon zest (1 lemon)
1 tablespoon fresh lemon juice
2 teaspoons minced shallot (about half a shallot)
Freshly ground pepper
4 slices multigrain bread
4 hard-boiled eggs
1 1/2 teaspoons sea salt
1/2 teaspoon curry powder
Sprouts, for serving

Steps:

  • Mix salmon and olive oil together in a bowl, using a fork to flake the salmon. Stir in 1 teaspoon lemon zest (finely grated), lemon juice, shallot, and pepper. Spread onto bread slices.
  • Peel and slice eggs, and place 2 slices on each piece of bread. Mix sea salt with the curry powder in a small bowl, and sprinkle on top of each egg slice. Scatter remaining lemon zest over them, top with sprouts, and serve.

Until our daughter shared this recipe, my husband and I swore we didn't like salmon. But after one taste of this grilled version, we were converts!

1/3 cup soy sauce
1/3 cup canola oil
1 teaspoon garlic powder
1 teaspoon curry powder
1 teaspoon lemon-pepper seasoning
1 teaspoon Worcestershire sauce
1/4 teaspoon Liquid Smoke, optional
6 salmon fillets (8 ounces each)

Steps:

  • In a large resealable plastic bag, combine the soy sauce, oil, garlic powder, curry powder, lemon-pepper, Worcestershire sauce and Liquid Smoke if desired; add the salmon. Seal bag and turn to coat. Refrigerate for 1 hour. , Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Place salmon skin side down on rack. Grill, covered, over medium heat or broil 4 in. from the heat until fish flakes easily with a fork, 10-12 minutes.

1.5 lbs cooked salmon (cut to bite size pieces (grilled or baked; don't overcook))
1/2 cup plain (unsweetened whole Greek yogurt)
1/2 cup real mayonnaise
5 tsp yellow curry powder
2 tsp pure honey
1/2 tsp ground ginger
1/2 tsp kosher salt plus more to taste
1/2 tsp fresh ground black pepper plus more to taste
1/2 medium red onion (finely copped)
1 medium sweet and crisp apple (peeled and chopped)
1 cup raisins
1 large dill pickle (chopped)
1/2 cup salted roasted cashews (coarsely chopped)

Steps:

  • In a bowl, whisk together the Greek yogurt, mayo, curry powder, honey, ginger, salt, and black pepper.
  • Add salmon, onions, apples, raisins, and pickles. Gently stir to combine well and season with additional salt and pepper if needed.
  • Cover and keep chilled. Let rest at room temp 30 min before serving. Right before serving, stir in chopped cashews.

1/2 red bell pepper, seeded and finely diced
1 heaping teaspoon Dijon mustard
1/4 cup mayonnaise
2 cloves roasted garlic
2 teaspoons curry powder
Salt and pepper, to taste
1 ciabatta, sliced in thirds and halved

Steps:

  • In a large bowl mash eggs with a fork. Stir in diced celery and red pepper. In a separate bowl mix together the mustard, mayonnaise, roasted garlic, curry powder, salt and pepper. Add dressing to eggs, mix well. Mound 1/2 of mixture to make each sandwich on 1/3 of ciabatta.
