SALMON, SPINACH, AND POTATOES BAKED IN PARCHMENT



Salmon, Spinach, and Potatoes Baked in Parchment image

This main course stacks up nicely, with layered salmon (packed with heart-healthy omega-3 fatty acids), potato, shallot, spinach, and lemon. A crown of salty caper butter melts as everything steams, adding depth to the already-rich fish.

1 tablespoon unsalted butter, softened
1 tablespoon salt-packed capers, rinsed well and coarsely chopped
1 tablespoon coarsely chopped fresh flat-leaf parsley
1 clove garlic, finely chopped
1 large russet potato (about 1 pound), cut into 1/8-inch-thick slices
Coarse salt and freshly ground pepper
2 shallots, thinly sliced
3 ounces (about 1 cup) baby spinach
2 salmon fillets (6 ounces and 1 1/2 inches thick each), skinned
1 lemon, thinly sliced

Steps:

  • Preheat oven to 400 degrees. Place a rimmed baking sheet in oven to heat. Cut parchment to size.
  • Stir together butter, capers, parsley, and garlic in a small bowl; set aside.
  • Divide potato slices between parchment rectangles, layering them in stacks to form a bed (slightly larger than the salmon fillet) to one side of crease. Season with salt and pepper.
  • Top each bed of potatoes with one quarter of the shallots followed by half the spinach. Place salmon fillets on top of spinach. Divide remaining shallots evenly between packets. Top each salmon fillet with 2 lemon slices (reserve remaining slices for garnish). Dot with caper butter; season with salt and pepper.
  • Fold parchment paper over ingredients, at the crease. Starting with one end of the paper and keeping edges together, make small overlapping pleats the length of the paper, creasing tightly as you go and shaping the edge into an arc. The packet should resemble a half-moon.
  • Carefully transfer packets to preheated baking sheet. Bake until packets have puffed, 15 to 18 minutes. Transfer packets to plates. Serve immediately, opening packets at the table. Garnish with remaining lemon slices.

4 (200 g) salmon fillets, pinboned
250 g chat potatoes, thinly sliced
2 (175 g) Broccolini, trimmed and sliced
100 g butter, softened
3 teaspoons lemon rind, finely grated
1 tablespoon chives, chopped
salt and pepper

Steps:

  • Preheat oven to 355°F.
  • Cut 4 x 30 cms squares of non stick baking paper.
  • Lay potato on centre of each.
  • Top with broccolini and salmon.
  • Combine butter, rind, chives, salt and pepper in a bowl and spread onto salmon fillets.
  • Fold paper up to form sealed parcels.
  • Place, seam side up on a baking tray.
  • Bake 20 minutes, rest parcels 5 minutes before opening.

500g baby potatoes , halved if large
1 tbsp olive oil
2 tbsp butter
500g piece skinless salmon fillet
2 lemons , halved
250g frozen peas
2 tbsp crème fraîche , plus extra to serve (optional)
1 tbsp chopped dill or mint (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Boil the potatoes for 10 mins until just tender, drain and steam-dry for a few mins. Toss the potatoes in the oil and butter, then tip onto a baking tray. Roast for 20 mins. Push the potatoes to one side and put the salmon on the other side, and add the lemon halves. Season. Return the tray to the oven for 15-20 mins until everything is cooked through - check the centre of the salmon with the tip of a knife.
  • Cook the peas in simmering water for 2 mins, drain and tip into a bowl. Add the crème fraîche and herbs, if using. Break the salmon into chunks to serve and squeeze over the lemon. Serve the salmon with the potatoes and peas, and some extra crème fraîche on the side, if you like.

250g leek (about 3 small ones), thinly sliced
85g mascarpone
1 tbsp chopped dill , plus 1 tsp
2 skinless salmon fillets
½ lemon , grated zest of 1/4, plus a good squeeze of juice
2-3 tsp capers
baby potatoes and wilted spinach, to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Place two sheets of baking parchment (large enough to wrap up each salmon fillet) on your work surface.
  • Put the leeks in a pan with 6 tbsp water, cover and bring to the boil. Cook for 5 mins until the water has been absorbed and the leeks are almost tender. Stir in the mascarpone, 1 tbsp dill and some seasoning.
  • Spoon half the creamy leeks into the middle of one sheet of parchment and place a salmon fillet on top, then repeat to make a second parcel. Sprinkle over the lemon zest with a squeeze of juice, then scatter over the capers and the remaining 1 tsp dill.
  • Bring the parchment up over the fish and join the two edges together by folding them over several times down the middle. Do the same with the ends and place the parcels, spaced apart, on a baking sheet.
  • Bake for 12-15 mins, depending on how well done you like your fish, then carefully tear open the parcel. Serve with lemon wedges for squeezing over, baby potatoes and wilted spinach, if you like.

  • Lay out 2 very large, double-thickness squares of baking paper or foil. Drain the potatoes and place on one half of each paper or foil square. Season well, then top each with a salmon fillet and transfer to a baking tray.
  • In a bowl, mix the spring onions, dill and cream. Season, then pour half over 1 fish parcel. Bring the paper or foil over the filling and fold the edges together several times all round to seal. Repeat with the remaining cream mixture and fish parcel. Bake for 15-18 minutes, until the salmon is just cooked through and the cream has thickened to a rich sauce.
  • Serve the salmon parcels on plates with the steamed green vegetables on the side and open the parcel when you are ready to eat.
