This recipe was one of my husband's favorite ways to enjoy salmon. I've had it so long I don't even remember where it came from originally. This salad is a nice light meal for a hot summer day, and it lets the salmon flavor come through. -Mary Dennis, Bryan, Ohio

- In a large bowl, toss the pasta, salmon, tomatoes, cucumber and onion. For dressing, combine the oil, lemon or lime juice, dill, garlic, salt and pepper; mix well. Pour over pasta. Cover and chill. Serve over lettuce.

- Prepare the pasta as directed on the box. While the pasta is cooking prepare the meat, veggies and dressing. Drain the salmon and remove bones and skin and set aside. Chop salami in to bite sized pieces. Dice celery, onion, bell pepper and scallions and place in a large bowl. To the veggies add the capers, lemon juice, olive oil, mayonnaise, dill paste (or dried dill) and parsley. Drain pasta leaving a small amount of the cooking liquid in the pot. Stir the pasta, salmon and salami with veggies and dressing together in the bowl. Top with shaved Parmesan. There is no need to add salt as the fish, salami, capers and Parmesan are salty enough.
MEDITERRANEAN SALMON PASTA SALAD

- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 10 minutes. Drain, rinse in cold water, drain well, and place in a serving bowl.

- Cook the pasta according to package directions; drain and set aside.
- In a mixing bowl, combine yogurt, mayonnaise, lemon juice, basil, oregano, salt, and pepper.
- In a separate bowl mix remaining ingredients, add it to the first mixture.
- Toss to coat pasta.
- Transfer to a container, and chill for at least 1 hour before serving.
- Before serving, make sure to gently stir it all up again well.
- Note: other kinds of pasta can be used in place of macaroni, to make it interesting -- small spirals, orzo, penne, etc. Don't be afraid to experiment!

- Put the pasta on the boil as directed on its package.
- Chop the salmon into bite-sized pieces and break the fetta cheese into small pieces.
- Drain the pasta through a colander and rinse with cold water until it is room temperature.
- Throw the pasta in a dish and add the grapes, feta cheese, and salmon, and anything else (eg chopped tomatoes, pepper, etc).
- Pour some of the salad dressing over it as you would over salad and mix it all up in the bowl.
- Enjoy!

- Bring a pot of salted water to a boil. Cook penne per directions.
- Heat a wide, heavy-bottomed skillet over medium-high heat, dry. When hot, add salami. Stir until crispy and fat has rendered.
- Add 1 tbsp butter. When melted, add onion and saute until limp 2-3 minutes. Add tomatoes and wine. Add water to tomato can and rinse out; add to pan. Add beans, thyme, oregano, basil, bay leaf, salt and pepper. Stir well and let bubble while pasta cooks. Just before pasta is done, swirl in remaining butter.
- Reserve a cup or so of pasta cooking water, then drain pasta. Add pasta to skillet and stir well; add small amounts of pasta water if needed to correct the consistency. Let stand 2-3 minutes to meld flavors. Remove and discard bay leaf before serving.

- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- Pat salmon dry with paper towels. Coat lightly in 1 tablespoon grapeseed oil. Season with blackened seasoning.
- Heat remaining grapeseed oil in a cast iron skillet over medium heat until it starts to smoke. Be sure to turn on your oven vent. Put salmon in the skillet and cook until it flakes easily with a fork, 4 to 4 1/2 minutes on each side (turning only to flip to the other side). - Preheat the oven to 350 degrees F (175 degrees C). Cover a baking sheet with parchment paper.
- Coat salmon with olive oil and place on the prepared baking sheet.
- Bake in preheated oven until salmon is cooked through and no longer translucent, 15 to 20 minutes.
- While the salmon is baking, bring a large pot of lightly salted water to a boil. Add pasta, return to a rapid boil, and cook until tender yet firm to the bite, 11 to 13 minutes. Drain, rinse with cool water, and drain again. Transfer to a large mixing bowl.
