POACHED EGGS WITH CANADIAN BACON AND SPINACH

Poached Eggs with Canadian Bacon and Spinach image

Provided by Food Network Kitchen

Categories     main-dish

Time 26m

Yield 4 servings (1/3 cup cooked spinach per serving)

Number Of Ingredients 7

4 teaspoons extra-virgin olive oil
8 slices Canadian bacon, (8 ounces)
1 large shallot, sliced (3/4 cup)
1 (10-ounce) package baby spinach leaves, washed but not dried
Kosher salt and freshly ground black pepper
1 tablespoon white wine vinegar
4 large eggs

Steps:

  • Heat a large skillet over medium heat; add 2 teaspoons of the olive oil. Cook the Canadian bacon in the hot oil until brown and a little crispy, about 2 minutes per side. Set aside and tent with foil to keep warm. Add the remaining 2 teaspoons olive oil and shallots to pan, and cook until they brown and soften, about 3 minutes. Add the spinach with whatever water clings to the leaves, and season with salt and pepper, to taste. Raise the heat to high, stir the spinach, incorporating any browned bits from the bottom of the pan; cover and cook until wilted, about 1 minute.
  • Meanwhile, fill a nonstick skillet with about 2 inches of water and bring it to the barest simmer over medium heat; add the vinegar. Crack the eggs, slipping them gently into the water, and cook until the whites are set but the yolks are still runny, 3 to 4 minutes.
  • Using a slotted spoon, gently scoop the eggs from the water, blot dry with a paper towel.
  • Divide the bacon between 4 plates, top with spinach and then with the poached eggs.

Time 21m

Yield 4 servings

Number Of Ingredients 9

3 tablespoons unsalted butter, plus more to butter ramekins
2 tablespoons minced yellow onion
Salt and freshly ground black pepper
6 ounces baby spinach
4 slices Canadian bacon
4 large eggs
1/4 cup heavy cream
1 ounce grated aged Cheddar, plus extra for serving
Sourdough bread

Steps:

  • Heat oven to 350 degrees F and arrange rack in middle. Butter 4 (6-ounce) ramekins and set aside.

  • Place ham on bottom of ramekins and top with spinach. Crack eggs into ramekins, place 1 tablespoon cream over each egg, and divide half of cheese evenly among ramekins.
  • Put ramekins on a baking sheet and bake, rotating pan halfway through baking, until whites are just set but yolks are still runny, about 15 to 18 minutes.
  • Meanwhile, spread remaining 2 tablespoons butter on 4 slices sourdough bread. Top with grated cheese and toast until golden brown. Serve eggs with toast.

SALAD WITH POACHED EGGS AND BACON DRESSING

Salad with Poached Eggs and Bacon Dressing image

Provided by Food Network Kitchen

Yield 1 serving

Number Of Ingredients 8

2 teaspoons extra-virgin olive oil
1 piece bacon, cut crosswise into 1/2 inch thick strips
1 teaspoon aged sherry or red wine vinegar
Kosher salt plus and freshly ground black pepper
1 tablespoon distilled vinegar
1 to 2 large eggs
1-1/2 cups mixed greens, washed and spun dried
1 or 2 (1/2-inch) thick slices of a baguette or sourdough bread, lightly toasted

Steps:

  • Heat the oil in a small saute pan over medium heat. Saute the bacon strips until golden and crispy. Remove the bacon with a slotted spoon to a paper towel to drain and reserve. Pour off the oil and bacon fat, and reserve. Return the pan to the heat and add the vinegar and stir with a wooden spoon, scraping up any browned bits from the bottom of the pan. Whisk in about 4 teaspoons of the reserved pan drippings to make a dressing. Season with salt and pepper to taste and set aside.
  • Fill a small sauce pan with 3 inches of water. Add the distilled vinegar. Bring to a gentle simmer over medium heat, adjust heat to so the water is just under a simmer. Break the egg(s) into the water and poach to desired doneness, about 3 to 5 minutes.
  • Meanwhile toss the salad with the reserved bacon and the dressing. Season with salt and pepper.
  • Put the salad on a plate and place the toasts on the salad. Remove eggs from the water with a slotted spoon and pat the back of the spoon with paper towels. Place egg on toast and serve immediately.

Chicory, Bacon, and Poached Egg Salad image

Dinner salad shouldn't feel ascetic. That's why we called up bacon, cheese, and crispy mushrooms

Provided by Molly Baz

Categories     Bon Appétit     Salad     Dinner     Lettuce     Leafy Green     Parmesan     Honey     Bacon     Rosemary     Mushroom     Egg     Wheat/Gluten-Free     Peanut Free     Tree Nut Free

Yield 4 servings

Number Of Ingredients 11

4 oz. Parmesan
1 medium shallot, finely chopped
1/4 cup sherry vinegar or red wine vinegar
1 Tbsp. honey
7 Tbsp. extra-virgin olive oil, divided
Kosher salt, freshly ground pepper
8 oz. slab or thick-cut bacon, cut into 1/2" pieces
2 (8"-long) sprigs rosemary
1 lb. mixed wild mushrooms (such as shiitake, maitake, and/or oyster), woody stems removed
1 lb. chicory (such as radicchio, escarole, and/or frisée), leaves torn into 3" pieces
4 large eggs

Steps:

  • Finely grate half of the Parmesan into a large bowl. Add shallot, vinegar, honey, and 5 Tbsp. oil and whisk well; season dressing with salt and pepper.
  • Cook bacon in a large skillet over medium-high heat, stirring occasionally, until brown and beginning to crisp, about 5 minutes. Add rosemary and cook, turning once, until crisp, about 2 minutes. Using a slotted spoon, transfer bacon and rosemary to paper towels.
  • Add remaining 2 Tbsp. oil to skillet and heat over medium-high. Arrange mushrooms in pan in a single layer and cook, undisturbed, until golden brown underneath, about 3 minutes. Season with salt and pepper, toss, and continue to cook, tossing often, until golden brown all over, about 5 minutes. Transfer to bowl with dressing, but don't toss. Strip rosemary leaves off stems into bowl and add chicory.
  • Meanwhile, bring a large pot of water to a boil. Reduce heat so water is at a bare simmer. Crack an egg into a small bowl; gently slide egg into water. Quickly repeat with remaining eggs. Poach, rotating eggs gently with a large slotted spoon, until whites are set but yolks are still runny, about 3 minutes. Using spoon, transfer eggs to paper towels. Season with salt and pepper.
  • Toss salad to coat leaves; season with salt and divide among plates. Shave remaining Parmesan over and top with bacon and poached eggs.

FRISéE SALAD WITH POACHED EGG

Frisée Salad With Poached Egg image

This is inspired by a classic French country salad. The traditional dish includes thick-cut bacon, but this version is great without the meat. You can serve it as a starter, but I like to make a meal of it.

Provided by Martha Rose Shulman

Categories     dinner, easy, quick, salads and dressings

Time 4m

Yield Serves six

Number Of Ingredients 15

2 heads frisée, tender light green leaves only, washed and dried (about 6 cups), or 6 cups mixed baby lettuces, washed and dried
1 tablespoon chopped fresh herbs, such as parsley, tarragon or chives
1 sweet red pepper, very thinly sliced
6 thin slices baguette or whole grain bread, toasted, rubbed with a cut clove of garlic and cut into squares
6 large or extra-large eggs
1 tablespoon vinegar (any kind)
Salt
freshly ground pepper to taste
1 teaspoon fresh thyme leaves
2 tablespoons sherry vinegar, champagne vinegar or red wine vinegar
1 teaspoon balsamic vinegar
Salt to taste
1 teaspoon Dijon mustard
1 small garlic clove, minced or pureed
1/3 cup extra virgin olive oil, or 1/4 cup extra virgin olive oil and 2 tablespoons walnut oil

Steps:

  • Combine the lettuce, herbs, red pepper and croutons in a large bowl.
  • Poach the eggs. Fill a lidded frying pan with water, and bring to a boil. Add 1 tablespoon vinegar to the water. One at a time, break the eggs into a teacup, then tip from the teacup into the pan (do this in batches if necessary). Immediately turn off the heat under the pan and cover tightly. Leave for four minutes. Lay a clean dish towel next to the pan, and using a slotted spoon or spatula, carefully remove the poached eggs from the water. Set on the towel to drain.
  • Whisk together the vinegars, salt, mustard and garlic. Whisk in the oil. Toss with the salad until thoroughly coated, and distribute among six salad plates. Top each serving with a poached egg. Season the egg with salt and pepper to taste, sprinkle with some thyme leaves and serve.

Add rosemary and cook, turning once, until crisp, about 2 minutes (fresh rosemary can be intense; frying the sprigs mellows their flavor and creates a crisp salad topper).
