1 pinch saffron thread
100 g butter
100 g caster sugar
100 g golden sultana raisins
50 g chopped glace cherries
280 g plain flour
2 teaspoons baking powder
1 pinch salt

Steps:

  • put the saffron in a jug and pour in 230 ml of hot water.
  • leave to infuse for at least 20 minutes.
  • put the butter and sugar in a large saucepan and stir over a moderate heat.
  • When the butter has melted and mixed with the sugar, add the sultanas and cherries.
  • pour in the saffron water.
  • return to heat and simmer gently for 5 minutes.
  • leave to cool.
  • preheat over to 180c/gas 4.
  • grease and line a 500gr loaf tin.
  • stir in the flour/salt and baking powder and slowly stir into saffron mixture to form a batter.
  • Pour the batter into the prepared loaf tin and bake for between 1 and 1 and quarter hours, or until a skewer inserted in the centre comes out clean.
  • leave to cool on a rack.
  • serve in slices with butter.
  • I have a 1 KG tin, so just use double the mixture and bake longer

I saw this on NBC a few days ago and knew I had to place it here for safe keeping. It looked great. This bread stores well and picks up flavor when wrapped with a rum-soaked cloth. To store, dip a 12- to 14-inch square of muslin or cheesecloth into a cup holding 2 or 3 tablespoons dark rum, wetting the fabric all over. Squeeze out the excess rum, wrap the molasses bread with the dampened cloth and store the bread in a tin canister, or wrap with foil and store in a dark place.

3/4 cup vegetable oil (such as grapeseed, peanut, corn, coconut, or a mixture of the oils)
3 large eggs, at room temperature
3/4 cup dark molasses or 3/4 cup robust molasses
1/2 cup granulated sugar
3 -4 tablespoons finely chopped fresh ginger or 2 -3 teaspoons ground ginger
1 -2 teaspoon ground allspice
1 -2 teaspoon ground cinnamon
2 1/4 cups unbleached flour
1/2 teaspoon salt
1 teaspoon baking soda
1 1/2 teaspoons baking powder
3/4 cup buttermilk, at room temperature
1 cup chopped pecans or 1 cup walnuts
1 tablespoon flour
1 1/2 tablespoons crystallized sugar (such as Sugar In The Raw, (or more if desired)

Steps:

  • Preheat the oven to 350 degrees. Butter a 9 x 5 x 3-inch loaf pan, dust lightly with flour, shake out excess and set aside.
  • In a large mixing bowl, combine the oil, eggs, molasses, sugar, ginger, allspice and cinnamon and beat vigorously with a whisk until well-blended.
  • Sift together the flour, salt, baking soda and baking powder. Add the flour and buttermilk alternately to the molasses mixture, stirring with a wooden spoon after each addition. Sprinkle the walnuts or pecans all over with the flour and then stir into the batter, mixing well.
  • Pour the batter into the prepared pan, and shake gently to settle the batter. Set the pan in the center of the hot oven on the lower rack. Bake the bread for 10 minutes and then scatter the top of the loaf evenly with the crystallized sugar.
  • Bake the molasses bread for 45 to 50 minutes or until it is brown and puffy and a knife or toothpick inserted in the center comes out clean but a little moist. Don't overbake the bread and dry it out; it should be moist.
  • Remove the pan from the oven and cool on a wire rack for 15 minutes. Run a metal spatula around the edge of the bread and turn out the bread onto a rack or board lined with a tea cloth or sheet of wax paper. Then, turn the bread upright and serve warm, if desired.

This is one of those recipes you will either love or hate. We make this bread every year at Christmas time, and it never lasts very long!! We love it warm with butter or peanut butter. This recipe makes a lot of bread, and I am not sure what would happen if you tried to halve the recipe.

24 cups flour
2 cups sugar
1 lb butter
1 lb Crisco
2 lbs currants
1 lb raisins
1 tablespoon grated orange peel
1 tablespoon grated lemon rind
2 tablespoons nutmeg
1/4 cup salt
3 1/4 ounces active dry yeast
1 quart hot water
15 g saffron
1/2 quart of lukewarm water

Steps:

  • Steep the saffron in the hot water overnight. Make sure you use a container that is covered to keep the heat inside. This step is crucial to getting the taste and flavor you want in the bread.
  • The next morning, Sift the flour into a very large bowl add the sugar then cut in the butter and crisco using a pastry cutter.
  • Add the currants, raisins, orange peel, lemon rind, nutmeg, salt and saffron water.
  • Mix together, then sprinkle the yeast on the top of the mixture and add the lukewarm water.
  • Knead the bread mixture until everything is combined. The bread should be a light orange/dark yellow in color.
  • Then place the bread in a warm location, covered. And allow to rise until doubled in size.
  • Once doubled, knead the bread again, and allow to rise until doubled one more time.
  • Cut the dough into 6 loaves.
  • Knead each dough ball and then place the loaves into greased loaf pans.
  • Cover the pans and allow to rise until about level with the top of the pans.
  • Bake the loaves at 350 degrees for 1 hour.

  • Grease a long, thin 500g loaf tin with butter and set aside. Heat the milk in a small pan over a low heat until just below simmering point. Stir in the saffron strands and leave to infuse for about 15 minutes off the heat.
  • Add the cream to the milk and saffron in the pan and return to a low heat. Warm (but don’t boil) for 2 minutes. Meanwhile, sift the flour and salt into a large bowl. Stir in the yeast, sugar and mixed spice. Make a well in the centre and add the warm milk mixture. Mix well to make a soft dough, adding extra milk if needed.
  • Turn out onto a floured surface and knead for about 15 minutes, gradually adding the butter and dried fruit as you go, until the dough is soft and elastic. Pop into a lightly oiled bowl and cover with cling film. Leave in a warm place for about 1 hour or until at least doubled in size.
  • Punch the dough in the bowl to ‘knock back’, then turn out onto a floured surface and knead for 5 minutes. Split the dough into 3 even pieces and roll out into long ’sausages’, just a little longer than the tin. Plait the dough together and tuck the ends under as you lift it into the tin. Cover with some lightly greased cling film and leave in a warm place for at least 1½ hours or until doubled in size again.
