Dough for single-crust pie
1-3/4 pounds mixed tomatoes, seeded and cut into 1/2-inch slices
1/4 cup thinly sliced green onions
1/2 cup mayonnaise
1/2 cup shredded cheddar cheese
2 tablespoons minced fresh basil
1/4 teaspoon salt
1/4 teaspoon pepper
2 bacon strips, cooked and crumbled
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate. , Place half of the tomatoes and half of the onions in crust. Combine mayonnaise, cheddar cheese, basil, salt and pepper; spread over tomatoes. Top with remaining onions and tomatoes. Fold crust edge over filling, pleating as you go and leaving an 8-in. opening in the center. Sprinkle with bacon and Parmesan cheese. Bake on a lower oven rack until until crust is golden and filling is bubbly, 30-35 minutes. Let stand 10 minutes before cutting. If desired, sprinkle with additional basil.

1 pie crust, unbaked
1 1/2 cups shredded mozzarella cheese, divided
5 roma tomatoes or 4 medium tomatoes
1 cup loosely packed fresh basil leaf
4 garlic cloves, peeled
1/2 cup mayonnaise
1/4 cup grated parmesan cheese
1/8 teaspoon white pepper

Steps:

  • Unfold piecrust according to package directions. Place in a 9-inch quiche or pie dish. Prebake according to package directions. Remove from oven. Sprinkle with 1/2 cup Mozzarella cheese. Adjust oven to 375°F.
  • Cut tomatoes into wedges, drain on paper towels. Arrange wedges on top of melted cheese in the baked pie shell.
  • In a food processor bowl, combine basil and garlic; process until coarsely chopped. Sprinkle over tomatoes.
  • In a medium mixing bowl, combine remaining Mozzarella cheese, mayonnaise, Parmesan cheese and pepper. Spoon cheese over top, spreading evenly to cover basil mixture.
  • Bake at 375°F for 35-40 minutes, or until top is golden and bubbly. Serve warm. Sprinkle with basil leaves if desired.

This pie is made of commonly found ingredients found in most kitchens. Any leftover garlic mayonnaise can be stored, covered, in the refrigerator up to one week.

1/2 cup mayonnaise
1 garlic clove, minced
1 tablespoon fresh lemon juice
kosher salt
cracked black pepper
3 large tomatoes, cored and cut into slices slightly thinner than 1/2 inch
unbaked 9-inch pie crust, preferably the rolled refrigerated kind
10 basil leaves
extra virgin olive oil, for drizzling

Steps:

  • Preheat oven to 425 degrees F; line a baking sheet with parchment paper.
  • In a small bowl, whisk together mayonnaise, garlic, and lemon juice; season with salt and pepper.
  • Season tomatoes lightly with salt and pepper.
  • Spread the dough out on the prepared baking sheet and brush with about 1 tablespoon of the garlic mayonnaise all the way to the edge.
  • Arrange about half the tomatoes on the dough, leaving a 2-inch border (tomatoes can overlap).
  • Scatter basil over tomatoes.
  • Made a second layer of tomatoes and basil.
  • Fold the edges of the dough toward the center (will not cover filling); brush with garlic mayonnaise to help secure the folds in the crust.
  • Drizzle a teaspoon of olive oil on the tomatoes and lightly season with salt and pepper.
  • Bake until golden brown, about 30 to 40 minutes; let set for 30 minutes to allow tomato juices to redistribute.
  • Cut the cooled pie into wedges and serve each with a dollop of the remaining garlic mayonnaise.

1 pie crust
5 roma tomatoes
1 1/2 cups shredded mozzarella cheese, divided
1 cup fresh basil, chopped plus more for optional garnish
4 garlic cloves, chopped
1/3 cup mayonnaise (not miricle whip)
1/4 cup parmesan cheese
salt
pepper

Steps:

  • Preheat oven to 450*.
  • Fit pastry into pie plate and line with foil to prevent burning.
  • Bake for 5-8 minute.
  • Remove foil and bake 5-8 minute longer or until crust is set and just beginning to brown.
  • Reduce oven temp to 375*.
  • Meanwhile slice tomatoes and place on paper towel to drain.
  • Sprinkle 3/4 cup mozerella on crust.
  • Place tomatoes over mozerella.
  • Combine basil and garlic and sprinkle over tomatoes.
  • Stir together remaining 3/4 cup mozerella,mayo, parmesan, salt and pepper to taste then spoon on top garlic,/basil layer.
  • Bake for 20-25 minutes or until edges are brown and cheese is bubbly.
  • If necessary, shield edges of crust with foil to prevent burning.
  • If desired, garnish with more basil.
  • Serve warm.

This is one of my favorite recipes that I threw together one Friday during lent when we had no fish in the house and I had to come up with some dinner. It's simple, easy and very flavorful. When I cook, I like flavor...for instance, if I'm adding garlic then I need to be able to taste it! You might want to slightly decrease some of the spices based on your personal preferences. This sauce ends up being quite sweet, so adjust accordingly.

4 tablespoons extra virgin olive oil
3 -4 cloves fresh pressed garlic
28 ounces crushed tomatoes (fire roasted varieties give the sauce a little edge, I prefer Muir Glen organic tomato products, wor)
1 pinch sugar
1/2 sweet onion, chopped
1/2 green pepper, chopped (I'm a huge fan of red peppers, just not in this recipe)
5 sprigs fresh oregano, finely chopped (leaves only, easiest to hold sprig upright and pull gently downward with thumb and forefinger to rem)
6 -7 fresh basil leaves (roughly chopped or torn)
2 bay leaves
salt (preferably sea salt for nutritional content)
fresh ground black pepper
scant 1/2 teaspoon fennel seed
fresh flat leaf parsley, to finish

Steps:

  • Heat 2 tablespoons of EVOO in a sauce pan over low heat. Add garlic and stir continuously until soft. Do not let garlic start to brown; this releases a lot of bitterness and you'll be better off starting over.
  • Add crushed tomatoes to sauce pan and turn heat up slightly to medium-low, stirring frequently. Add sugar to the tomatoes. At the same time, add 2 remaining tablespoons of EVOO to a pan and sautee onion and green pepper over medium-low heat until softened, stirring frequently for about 7-10 minutes.
  • Add onion and green pepper with EVOO from the pan to the tomatoes and garlic and mix well.
  • Add remaining ingredients (oregano, basil, salt, pepper, bay leaves, fennel seeds) and let simmer for about 45 minutes, stirring occasionally so as not to let ingredients settle or burn at the bottom and to promote flavor.
  • Serve over your favorite pasta, garnish with fresh parsley and grated cheese of your choice (if desired), as well as some crusty Italian bread.
  • ***Hint: If you lightly toss your pasta in olive oil after draining it, it will hold more sauce more easily while you're eating it.

An easy, slightly different (and pretty darn amazing, if I do say so myself) take on a classic dish. If you don't absolutely love this, you can come over and poke me in the eye.

2 (9 inch) frozen deep dish pie shell (or homemade crusts, if you're feeling bold and time is on your side!)
15 ounces part-skim ricotta cheese
3 large eggs
1 egg white
2 cups pre-shredded mozzarella cheese
6 -8 ounces fresh spinach leaves, chopped (uncooked)
1 small vidalia onion, finely chopped
1 large tomatoes, diced
3 -4 ounces fresh basil leaves, chopped (no cheating by using dried basil!!!)
2 -3 dashes salt
2 -3 dashes black pepper
1 pinch garlic powder (to taste)

Steps:

  • Pre-heat oven to 350 degrees.
  • In a large mixing bowl, combine ricotta cheese, 1 cup shredded mozzerella and 3 eggs. Mix well!
  • Stir in chopped spinach, onion, tomato, salt, spices and fresh basil.
  • Sprinkle 1/2 cup shredded mozzarella into one 9" pie crust, then fill with cheese/spinach/egg, etc. mixture. There may be some left over -- do not overfill!
  • Top with remaining 1/2 cup shredded mozzarella.
  • Give yourself a pat on the back -- you're doing okay!
  • Carefully place remaining (thawed and flattened) frozen pie crust on top and pinch edges with a fork. Remember to cut a few slits in the top crust or your pie will explode!
  • Place on the middle rack of your nicely pre-heated oven and let it hang out for about 30 minutes. When the half-hour is up, pull the little guy out and brush egg white on the top surface (this will not only make your pie nice and shiny, but also very happy).
  • Pop back in the oven for 10-15 minutes until the top is a nice golden brown.
  • Let cool for about 10 minutes before serving.
  • Enjoy!
  • note: This recipe happens to be vegetarian, but I'm certain it would be delicious with some sausage in the mix. Feel free to experiment!
