3 cups (380 grams) all-purpose flour
1 teaspoon baking soda
1 teaspoon fine sea salt
2 sticks (227 grams) unsalted butter, at cool room temperature (67°F)
1/2 cup (100 grams) granulated sugar
1 1/4 cups (247 grams) lightly packed light brown sugar
2 teaspoons vanilla
2 large eggs, at room temperature
2 cups (340 grams) semisweet chocolate chips

Steps:

  • Preheat oven to 350ºF. Line baking sheets with parchment paper.
  • In a medium bowl combine the flour, baking soda, and salt.
  • In the bowl of an electric mixer beat the butter, granulated sugar, and brown sugar until creamy, about 2 minutes. Add the vanilla and eggs. Gradually beat in the flour mixture. Stir in the chocolate chips.
  • If time permits, wrap dough in plastic wrap and refrigerate for at least 24 hours but no more than 72 hours. This allows the dough to "marinate" and makes the cookies thicker, chewier, and more flavorful. Let dough sit at room temperature just until it is soft enough to scoop.
  • Divide the dough into 3-tablespoon sized balls using a large cookie scoop and drop onto prepared baking sheets.
  • Bake for 11-13 minutes, or until golden brown. Cool for 5 minutes before removing to wire racks to cool completely.
  • Although I prefer cookies fresh from the oven, these can be stored in an airtight container for up to 3 days. See post for storage tips.

2 cups all-purpose flour (see Cook's Note)
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
2 sticks (16 tablespoons) good-quality unsalted butter, at room temperature
3/4 cup granulated sugar
1 large egg yolk
1 teaspoon pure vanilla extract
1/4 cup turbinado sugar

Steps:

  • Whisk together the flour, baking powder and salt in a medium bowl. Add the butter and granulated sugar to the bowl of a stand mixer fitted with a paddle attachment. Beat on high speed for a full 2 minutes, scraping down the bowl halfway through the mixing; the butter should be very light and fluffy. Add the egg and vanilla and beat on medium speed until well combined. Add half the dry ingredients and beat on low speed to combine. Scrape down the mixing bowl before adding the remaining dry ingredients and beat to combine. Refrigerate for 1 hour in the bowl for drop cookies, or form into a 1-inch log for slice-and-bake cookies.
  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Place the turbinado sugar in a small bowl. For drop cookies, scoop the cookie dough with a 1 tablespoon-size cookie scoop and then dip the tops of the cookie dough balls into the sugar. Place onto the prepared baking sheet.
  • For slice-and-bake cookies, cut the log into 1/2-inch-thick rounds. Press the tops into the sugar and place on the prepared baking sheet.
  • Bake the cookies until slightly puffed and lightly golden on the bottom, about 15 minutes.

1 cup unsalted butter softened to room temperature
3/4 cup brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup cake flour
1 3/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups semi-sweet chocolate chips
1 cup chopped walnuts
2 cups semi-sweet chocolate chips
1 cup quick oats
3/4 cup chopped pecans
3/4 cup unsweetened coconut flakes
1 1/2 cups quick oats
2 cups raisins
1/2 cup cocoa powder* ((see recipe notes))
2 cups dark chocolate chunks (, or dark chocolate chips)
1/2 cup cocoa powder* ((see recipe notes))
2 cups peanut butter chips

Steps:

  • Preheat oven to 400 degrees Fahrenheit. Line two baking sheets with parchment paper or a silicone baking mat.
  • In the bowl of a stand mixer, add butter, brown sugar, and sugar and mix on low using the paddle attachment. Increase to medium and mix until smooth, about 1 minute.
  • Add in the eggs and vanilla extract and beat until just combined, about 30 seconds.
  • Add in cake flour, all purpose flour, baking powder, baking soda, and salt. Mix until just combined.
  • Pour in desired add-ins and use a large spoon or rubber spatula to fold in the chocolate chips by hand.
  • Divide the dough into 8 to 10 equal pieces. Use hands to roll into large balls. Place onto prepared baking sheets, 4 per pan.
  • Bake in the 400 degree oven for 11-14 minutes, until tops are golden brown.
  • Let cool on pan 15 minutes before serving warm, or transfer to a wire rack to cool completely.
