RADISH, LENTIL & MINT SALAD



Radish, lentil & mint salad image

A combination of sweet, sour and nutty ingredients enhance the different varieties of beautiful radish in this recipe

50g walnut pieces
3 tbsp olive oil
1 red onion , sliced
1 tsp black treacle
2 tbsp sherry vinegar
small pack mint , leaves picked and half chopped
400g can green lentils , drained and rinsed
½ cucumber , chopped
300g radishes , some left whole, others sliced and chopped (try to use a mixture of varieties, such as mooli and red meat radishes - see tip)

Steps:

  • Toast the walnut pieces in a large frying pan over a medium heat until fragrant and just starting to char at the edges. Tip into a bowl and set aside.
  • In the same pan, turn the heat down to low and add 1 tbsp olive oil. Add the onion, fry gently for around 10 mins until soft, then take the pan off the heat. Add the black treacle, Sherry vinegar and the rest of the olive oil, then mix and leave to cool. Add the chopped mint to the pan, and season well.
  • In a large bowl, mix together the lentils, cucumber and half the radishes, then pour over the cooled onion and mint dressing. Toss everything together and pile onto a serving dish. Scatter over the walnut pieces and the rest of the mint and radishes, then serve.

Paired with sweet onions, dressed with a simple, tangy, creamy sauce, and served on charred bread, this is one of the most delicious uses of fresh summer tomatoes you will ever experience.

Number Of Ingredients 10

1 clove garlic, crushed
2 tablespoons olive oil
2 tablespoons plain yogurt
¼ cup sour cream, or to taste
½ cup thinly sliced sweet onion
2 cups thinly sliced tomatoes
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
8 thick slices French bread
1 tablespoon sliced fresh chives

Steps:

  • Mix garlic and olive oil in a small bowl and let sit for about 1 hour, or until needed.
  • Mix the yogurt and sour cream together in a bowl until combined. Add the onions and tomatoes and toss until well coated. Season with salt, freshly ground black pepper, and cayenne. Wrap in plastic wrap and chill in a refrigerator until needed.
  • Preheat a charcoal grill until coals are white and ashy.
  • Grill bread over hot charcoal, rotating as needed, until both sides are nicely toasted and slightly charred.
  • Brush grilled bread with the garlic olive oil and use a slotted spoon to transfer the tomato salad over top of each. Excess dressing can be spooned over if desired. Garnish with chives and serve immediately.

400g cherry tomato
1small red onion
handful of mint leaves
extra-virgin olive oil , for drizzling
a little lemon zest

Steps:

  • Halve the tomatoes and scatter over a large plate. Finely chop the red onion and tear up the mint leaves. Throw the onion and mint over the tomatoes. Can be kept, covered, 3-4 hours ahead. Just before serving, drizzle with extra virgin olive oil, season with salt and ground black pepper and finely grate a little lemon zest over the top.

2 large cucumbers - halved lengthwise, seeded and sliced
⅓ cup red wine vinegar
1 tablespoon white sugar
1 teaspoon salt
3 large tomatoes, seeded and coarsely chopped
⅔ cup coarsely chopped red onion
½ cup chopped fresh mint leaves
3 tablespoons olive oil
salt and pepper to taste

Steps:

  • In a large bowl, toss together the cucumbers, vinegar, sugar and salt. Let stand at room temperature for an hour, stirring occasionally.
  • Add tomatoes, onion, mint and oil to cucumbers and toss to blend. Season to taste with salt and pepper.

4 medium ears sweet corn, husked
2 pounds cherry tomatoes (about 6 cups), halved
1 small yellow summer squash, halved lengthwise and sliced
1 cup fresh blueberries
1 small red onion, halved and thinly sliced
1/4 cup olive oil
2 tablespoons lemon juice
1 tablespoon minced fresh mint
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper

Steps:

  • In a 6-qt. stockpot, bring 8 cups water to a boil. Add corn; cook, uncovered, until crisp-tender, 2-4 minutes. to taste salt
sour cream

Steps:

  • 1. At your local farmers market, get the prettiest bunch of radishes, wash them well, trim the ends, and dry with paper towels.
  • 2. Slice radishes into half-moons, not thick, not thin - just right. Mix some sour cream with salt, then mix it with radishes.
  • 3. Eat right away, while the juice is still holding inside the slices.

Steps:

  • Stir chickpeas, tomatoes, green onions, mint, lemon juice, and olive oil in a salad bowl. Season with salt and pepper; set aside.
  • Heat a dry nonstick skillet over medium-high heat. Add halloumi to the hot pan and cook, turning once, until deeply browned, 1 to 2 minutes per side. Remove to a cutting board and chop into 1/2-inch chunks.
  • Stir halloumi into the salad and serve immediately.
