THREE CHEESESTEAK SANDWICHES

Number Of Ingredients 15

3/4 pound frozen sirloin steak, partially thawed (or freeze fresh sirloin for 45 minutes)
1 teaspoon chili powder
1 teaspoon dried oregano
3/4 teaspoon granulated garlic
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons vegetable oil, plus more if needed
1 large or 2 small yellow onions, sliced with the grain
1 red bell pepper, cut into thin strips
8 ounces mushrooms, sliced
3 tablespoons cream cheese
2 teaspoons Worcestershire sauce
2 slices American cheese
4 hoagie rolls
3/4 cup shredded mozzarella cheese, or 4 slices provolone

Steps:

  • Slice the partially frozen meat into very thin slices. Mix together the chili powder, oregano, garlic, salt and pepper in a small bowl. Toss the meat slices in the mixture to coat.
  • Heat the oil in heavy saute pan (such as cast iron) over medium heat. Cook the onions and peppers until tender, about 5 minutes. Add the mushrooms and cook until all the vegetables are soft and golden, about 5 minutes longer.
  • Preheat the broiler to high.
  • Remove the vegetables to a plate and add a splash more oil to the pan. Raise the heat to medium-high. Cook the meat quickly in the hot pan, browning on both sides. Once brown, reduce the heat to low and mix together the vegetables and beef. Add the cream cheese, Worcestershire sauce and American cheese, and stir until creamy and well incorporated. Split open the hoagie rolls and place on a baking sheet. Divide the beef mixture among the rolls and top with the mozzarella cheese. Broil until the cheese begins to bubble, 1 to 2 minutes. Watch carefully for burning. Serve.

1 medium acorn or delicata squash (unpeeled), cubed
6 ounces applewood-smoked bacon (in one piece), cubed
6 leaves sage, chopped
Kosher salt and freshly ground pepper
4 whole chives, plus 2 tablespoons chopped
2 tablespoons apple cider vinegar
2 tablespoons extra-virgin olive oil
3/4 pound maple-glazed roasted turkey breast, sliced 1/2 inch thick, cubed
1 Bosc pear, diced
2 cups kale salad mix or torn kale leaves
4 10-inch whole-wheat tortillas
4 ounces gorgonzola or other blue cheese, crumbled
1/4 cup chopped walnuts or hazelnuts (optional)

Steps:

  • Preheat the oven to 400 degrees F. Toss the squash, bacon, sage and 1/4 teaspoon each salt and pepper on a rimmed baking sheet. Roast, turning once, until the squash is tender and the bacon is crisp, 20 minutes.
  • Meanwhile, fill a small bowl with ice water. Bring a small saucepan of water to a boil. Hold the whole chives together with tongs and dip in the boiling water 30 seconds. Remove and dip in the ice water to cool, then remove and drain on paper towels.
  • Whisk the chopped chives, vinegar, olive oil, and salt and pepper to taste in a large bowl. Add the squash-bacon mixture, the turkey, pear and kale; toss. Season with salt and pepper.
  • Warm the tortillas in a dry skillet over medium heat, 30 seconds per side. Spoon one-quarter of the turkey-squash mixture down the center of each wrap. Top evenly with the gorgonzola and nuts. Roll each into a cone shape and tie closed with a whole chive.

FRENCH ONION STEAK SANDWICHES

1 1/2 pounds boneless sirloin steak
Kosher salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
2 sweet onions, sliced
1 tablespoon fresh thyme
1/3 cup low-sodium chicken broth
4 sub rolls, split
2 cups shredded gruyere cheese (about 6 ounces)
1 pint pickled or marinated vegetables (from the deli counter)

Steps:

  • Preheat the broiler. Generously season the steak with salt and pepper. Heat the olive oil in a large skillet over high heat. Add the steak and cook until browned, about 4 minutes per side for medium rare. Transfer to a cutting board and let rest.
  • Pour off any excess fat from the skillet and reduce the heat to medium. Melt the butter in the skillet, then add the onions, thyme, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onions start caramelizing, about 10 minutes. Stir in the chicken broth and cook until slightly reduced, about 5 minutes.
  • Meanwhile, trim off any excess fat from the steak; thinly slice against the grain. Put the rolls cut-sides up on a baking sheet and broil until toasted, about 2 minutes.
  • Remove the roll tops to a plate. Divide the onion mixture among the roll bottoms, top with the steak and sprinkle with the gruyere. Return to the broiler until the cheese is melted but not browned, 3 to 5 minutes. Top with the toasted roll tops and serve with the pickled vegetables.

1 tablespoon vegetable oil, 1 turn of the pan
1 1/4 pounds ground sirloin
1 cup chicken stock, eyeball it, 1/2 a 14-ounce can or box
1 teaspoon sweet paprika
1 teaspoon Worcestershire sauce
Salt and pepper
4 burger buns, spilt, or kaiser rolls, split
1/2 yellow skinned onion, finely chopped

Steps:

  • Heat a medium skillet over medium high heat. Add oil and meat to the pan and brown the meat, breaking it up with the back of a wooden spoon as it cooks. Add chicken stock to the meat. Season the meat with paprika, Worcestershire, salt and pepper. When the liquid comes to a bubble, reduce heat to simmer. Cook meat 15 minutes, stirring occasionally.
  • Pile meat into buns or rolls and top with raw finely chopped onions.

DOUGHNUT PAN EGG SANDWICHES

Doughnut pans take up a lot of kitchen real estate for something that gets used, say, twice a year. Still, we love 'em, which is why we dreamed up another great way to put a doughnut pan to work: For baked eggs in the perfect shape to pop on a bagel.

Nonstick cooking spray, for the pan
5 large eggs
Kosher salt and freshly ground black pepper
4 strips crispy cooked bacon, crumbled
1/2 teaspoon finely chopped fresh chives
6 mini bagels
6 slices American cheese, torn into quarters
1 tablespoon unsalted butter, at room temperature
Ketchup, for serving

Steps:

  • Preheat the oven to 300 degrees F. Lightly coat a 6-cavity nonstick doughnut pan with nonstick spray.
  • Crack the eggs into a large liquid measuring cup and whisk until no streaks remain; sprinkle with salt. Divide the eggs among the cavities of the doughnut pan and top with the bacon and chives. Carefully place the pan on a sheet tray and bake until the eggs are set and slightly puffed up, 8 to 10 minutes. Cool slightly, then remove the eggs from the doughnut pan.
  • Meanwhile, split open the bagels. Top the bottom halves with American cheese pieces and transfer to a sheet tray. Spread the top halves with butter and place them butter-side down on the sheet tray. Bake until the cheese is melted and the buttered bagels are starting to turn golden brown, about 4 minutes.
  • Top the cheese half of a bagel with an egg ring and drizzle on some ketchup. Season with salt and pepper and cover with the butter half of the bagel. Repeat with the remaining bagels, egg rings and ketchup to make 5 more sandwiches.
