1 cup all-purpose flour
1 cup rolled oats
1/2 cup light brown sugar, packed
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup butter, melted
1/2 cup granulated sugar
1 orange, zested and juiced
1 1/2 cups rhubarb, chopped
1 cup strawberry, sliced
1 cup apple, sliced and peeled
1 cup blueberries

Steps:

  • In bowl, combine flour, oats, brown sugar, cinnamon and nutmeg; stir in butter. Press half of the mixture over bottom of greased 9-inch square cake pan.
  • Filling: In bowl, toss together chopped rhubarb, strawberries, apples and blueberries; sprinkle with sugar and add orange juice and zest.Arrange over base. Sprinkle with remaining flour mixture. Bake in 350°F (180°C) oven for 45 to 50 minutes or until fruit is tender and topping is golden. Serve warm.

6 cups huckleberries
½ teaspoon lemon juice
1 cup white sugar
½ cup cornstarch
1 teaspoon ground cinnamon, or to taste
1 ⅓ cups brown sugar
1 cup all-purpose flour
1 cup rolled oats
1 ½ teaspoons ground nutmeg
1 ½ teaspoons ground cinnamon
⅔ cup melted butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking pan.
  • Place huckleberries and lemon juice in a bowl. Combine sugar, cornstarch, and 1 teaspoon cinnamon in a small dish; mix until well combined. Pour over the huckleberries; toss until completely coated. Pour into the prepared pan.
  • Combine brown sugar, flour, oats, nutmeg, and 1 1/2 teaspoons cinnamon in a bowl; toss together until completely mixed. Add butter; stir until mixture begins to form clumps. Spread over the huckleberries.
  • Bake in the preheated oven until golden brown, about 30 minutes. Allow to cool 15 minutes before serving.

1 1/2 cups finely chopped rhubarb (fresh or frozen)
1 1/2 cups blueberries (fresh or frozen)
1 1/2 cups raspberries (fresh of frozen)
3/4 cup sugar
1/4 cup quick-cooking tapioca
1 1/2 teaspoons ground cinnamon
1/2 cup firmly packed brown sugar
1/2 cup all-purpose flour
1/3 cup butter or 1/3 cup margarine
1/2 cup old fashioned oats
1/4 cup sliced almonds

Steps:

  • Preheat oven to 350°; butter a 13x9 inch baking dish.
  • In a large mixing bowl, mix together the apples, rhubarb, blueberries, and raspberries.
  • Add in the sugar, tapioca, and cinnamon; toss until well blended.
  • Spoon into prepared dish.
  • To make the topping: in a medium bowl, combine the brown sugar and flour.
  • Cut in the butter by hand, using your fingertips so that mixture is crumbly.
  • Mix in rolled oats and almonds.
  • Sprinkle topping over fruit mixture, spreading evenly.
  • Bake for 40-45 minutes or until topping is golden brown and fruit is bubbly; serve warm.

1/2 cup butter, melted

2 tablespoons cornstarch
1 cup cold water
1 teaspoon grated orange rind
1 1/2 cups chopped rhubarb
1 cup sliced strawberry
1 cup sliced peeled apple
1 cup blueberries

Steps:

  • Combine flour, oats, brown sugar, cinnamon, and nutmeg. Stir in butter. Press 1/2 of the mixture into a greased 9" square cake pan.
  • In small saucepan combine sugar and cornstarch. Whisk in water and rind until smooth.
  • Bring to boil, reduce heat to med-low and cook 5 min or until thickened and clear, whisking constantly.
  • Toss together fruit. Arrange over base. Pour sauce over top.
  • Sprinkle with remaining flour mixture.
  • Bake in a 350°F oven 50-60 minutes or until fruit is tender and topping is golden. Serve warm.

I don't tack the word ultimate onto just any recipe. This berry well may be my favorite summer dessert, with the perfect balance of sweet and tart, tender and crisp, fruit and crumble. Some ice cream on the side is highly recommended.

2 cups all-purpose flour
¼ teaspoon fine salt
¾ teaspoon baking powder
¾ cup white sugar
¾ cup frozen unsalted butter
1 ½ teaspoons vanilla extract
2 large egg yolks
1 teaspoon apple cider vinegar, or as needed
1 cup blueberries
1 cup raspberries
1 cup blackberries
1 teaspoon lemon zest
2 teaspoons fresh lemon juice
⅓ cup white sugar
2 teaspoons cornstarch
1 pinch cayenne pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine flour, salt, baking powder, and sugar in a bowl. Whisk until thoroughly combined. Grate in the frozen butter, stopping occasionally to toss the butter into the flour mixture until coated. Drizzle in vanilla extract; add egg yolks. Stir with a fork until egg is mostly absorbed. Add vinegar; mix briefly. Use your hands to finish mixing, squeezing until clumps but mixture remains mostly dry. Add 1 teaspoon vinegar if needed.
  • Combine blueberries, raspberries, and blackberries in another bowl. Add lemon zest, lemon juice, sugar, and cornstarch. Sprinkle in cayenne pepper. Mix until sugar and cornstarch are mostly dissolved.
  • Place about 1/2 of the crumble mixture into the bottom of a 2-quart baking dish. Press mixture down using a flat cup until well compacted. Spread the berries over the crust. Sprinkle the remaining crumble mixture on top, squeezing some of it into clumps.
  • Bake in the preheated oven until top is beautifully browned and berry syrup bubbles on the surface, 40 to 45 minutes. Let cool to room temperature, about 30 minutes.
