BAKED ACORN SQUASH WITH BROWN SUGAR



Baked Acorn Squash with Brown Sugar image

This easy and delicious fall side dish only requires a few minutes of hands-on time, leaving you free to work on the rest of the meal.

2 tablespoons butter, plus more for surface
2 medium acorn squash, (about 1 1/2 pounds each)
2 tablespoons light-brown sugar
Coarse salt and ground pepper

Steps:

  • Preheat oven to 425 degrees. Generously butter a rimmed baking sheet.
  • Halve squash crosswise. Scoop out seeds; discard. Slice a small piece off bottom of each squash half just enough to level.
  • Set squash halves, scooped sides down, on prepared sheet. Bake until golden, 20 to 25 minutes. Turn squash; prick insides all over with a fork. Divide 2 tablespoons butter and sugar among halves; season with salt and pepper. Continue to bake until flesh is easily pierced with the tip of a paring knife, 25 to 30 minutes. Serve warm.

Vegetable oil, for baking sheets
3 acorn squashes (about 1 1/2 pounds each), halved, seeded, and sliced into 1-inch-thick crescents
Coarse salt and ground pepper
1/2 cup packed dark-brown sugar

Steps:

  • Preheat oven to 400 degrees. Line two rimmed baking sheets with aluminum foil, and brush with oil.
  • Lay squash pieces on baking sheets. Season with salt and pepper; sprinkle squashes evenly with half the sugar. Roast until sugar has melted, about 5 minutes.
  • Remove baking sheets from oven. Using tongs, turn over pieces. Season with salt and pepper; sprinkle evenly with remaining sugar. Roast until tender, about 20 minutes.

2 medium acorn squash, halved and seeded
4 tablespoons dark rum or 4 tablespoons spiced rum
4 tablespoons dark brown sugar
4 tablespoons butter
salt and pepper

Steps:

  • Preheat oven to 350°F.
  • Use a fork to prick the inside and top edge of each half, place in a baking and add 1 inch of water to the dish.
  • Put 1 tbls rum, brown sugar, and butter in each half, season with salt and pepper.
  • Bake 30 minutes then baste with the the top and sides of the squash cups with the rum mixture.
  • Bake another 15 minutes and baste again.
  • Bake another 15 minutes, remove from the oven, baste again and serve.

I found this recipe in the Binah cookbook. It says, "Acorn squash is another thing I like to keep in my pantry all the time, because it stays fresh for so long, so whenever you are stuck for a side dish, it's a great choice. I find acorn squash easier to deal with that a lot of other squashes and thanks to its flowerlike appearance, it's easy for it to look good, too. The ginger in this recipe gives an added zing to the overall taste." The recipe didn't list amounts, and I didn't measure, so I'm just estimating. I'm copying it as is, though I halved it by using one squash that weighed close to two pounds. I also used Walden Farms calorie-free pancake syrup instead of maple syrup, and I used regular salt because I didn't realize it called for kosher salt!

Steps:

  • Preheat oven to 400°F.
  • Cut the acorn squash crosswise, creating rings. Scoop out the pits in the center and slice each ring in half.
  • Lay rings flat in a sprayed baking dish. Brush generously with maple syrup and sprinkle with ginger, then with both salt and pepper.
  • Roast in oven for about 10 minutes. Remove pan from oven and flip each piece of squash over. Brush again with maple syrup and then season lightly again. Roast for another 10 to 15 minutes until soft.

1/2 cup granulated sugar
3/4 cup frozen orange juice concentrate
1/4 teaspoon fresh ground nutmeg
1/4 teaspoon ground cinnamon
1/2 teaspoon grated orange zest
1/2 teaspoon grated lemon, zest of
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Preheat oven to 350°F.
  • Cut squash in half lenghtwise; remove seeds and discard.
  • Place squash cut side down in a 13" x 9" oven-proof casserole dish.
  • Add hot water until there is about 1/2" of water in the casserole dish.
  • Bake, uncovered in preheated 350 F oven for 30 minutes.
  • Meanwhile, in a medium-size saucepan, melt butter over medium heat.
  • Stir in sugar, orange juice concentrate, nutmeg, cinnamon, orange zest, lemon zest, salt and pepper and bring to boil.
  • Reduce heat to medium-low and cook uncovered for 20 minutes or until just syrupy, stirring often, DO NOT BURN.
  • Drain water from casserole dish and turn squash cut side up.
  • Measure 4 tablespoons of orange glaze into each squash half.
  • Drizzle some orange glaze on edges of squash.
  • Return to oven and bake in preheated 350 F oven for 20 to 25 minutes or until squash is tender.
  • If desired, serve with additional glaze.
