Easy Yeast Rolls image

These simple, tender yeast rolls bake to a golden brown and will disappear in no time. If you've never baked with yeast before, these rolls are the perfect starting point. -Wilma Harter, Witten, South Dakota

Number Of Ingredients 7

2 packages (1/4 ounce each) active dry yeast
2 cups warm water (110° to 115°)
1/2 cup sugar
1 large egg, room temperature
1/4 cup canola oil
2 teaspoons salt
6 to 6-1/2 cups all-purpose flour

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine sugar, egg, oil, salt, yeast mixture and 4 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a stiff dough., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough. Turn onto a lightly floured surface; divide into four portions. Divide and shape each portion into 12 balls. Roll each ball into an 8-in. rope; tie into a loose knot. Tuck ends under. Place 2 in. apart on greased baking sheets. Cover; let rise in a warm place until doubled, about 30 minutes. Preheat oven to 350°., Bake 15-20 minutes or until golden brown. Remove from pans to wire racks.

1 pkg. dry yeast
1/2 c. warm water
1/2 c. softened butter
1/2 c. soft shortening
3/4 c. sugar
1 c. unseasoned hot mashed potatoes
1 c. cold water
1-1/2 tsp. salt
6 or 6-1/2 c. flour

Steps:

  • In a large bowl sprinkle yeast into warm water. Stir until dissolved. Add butter, shortening, sugar and potatoes. Add cold water, salt, and enough flour to make a stiff dough. Turn dough into large greased bowl and refrigerate so it can rise (at least a couple of hours). To bake: Remove from refrigerator and shape into cloverleaf rolls (3 balls) with greased fingers (don't be stingy with the butter). Place in muffin tins and allow to rise again; if it's too cold in the house, cover with a warm dish towel. Bake 425 degrees about 20 minutes.

GRANDMA'S YEAST ROLLS

I have adapted these yeast rolls from my grandmother's yeast bread recipe. I have increased the sugar to create a little sweeter roll than Grandma used to make and replaced her refrigerated cake yeast with dried (easier availability). They are delicious served with Danish Lurpak® butter (it's a little tangy, just like Grandma's)! Rolls can be made the night before and reheated, covered in foil, at 300 degrees F for about ten minutes.

¾ cup white sugar, divided
1 ¾ cups warm water (110 degrees F/45 degrees C)
2 ½ (.25 ounce) envelopes active dry yeast
6 ½ cups unbleached all-purpose flour (such as King Arthur®), or as needed
2 teaspoons salt
¼ cup lard, melted

Steps:

  • Dissolve 1 tablespoon of sugar into the water in a small bowl. Sprinkle the yeast over the water; let stand 5 minutes until the yeast softens and begins to form a creamy foam. Meanwhile, whisk the flour, the remaining sugar, and salt together in a bowl. Once the yeast has foamed, stir the melted lard into the yeast, then stir the yeast mixture into the flour until a sticky dough forms.
  • Turn the dough out onto a lightly-floured surface and knead until smooth and elastic, about 10 minutes. You may need to add additional flour to keep the dough from sticking. Once elastic, cover the dough with the mixing bowl, and allow to rest for 15 minutes. Grease a 9x13-inch baking dish with lard.
  • Cut the dough into three equal sections, then cut each section into 8 pieces. Form into balls and place into the prepared baking dish in 6 rows of 4. Cover with a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 45 minutes.
  • Preheat an oven to 325 degrees F (165 degrees C).
  • Bake in the preheated oven until the tops of the rolls are golden brown and the bottoms sound hollow when tapped, about 1 hour. Allow to cool at least 10 minutes before eating.

This recipe has been handed down in my family for several generations. I'm not sure which of the ancestors actually originated it, but I know my grandmother used it and made the absolute best rolls in the world. My grandfather wouldn''t eat store bought bread because it wasn't as good as "Mama's" bread.

2 cups very warm water
2 (1/4 ounce) packages fast rising yeast
1/2 cup sugar
1/2 cup vegetable oil
1 tablespoon salt
4 cups all-purpose flour, plus
2 cups all-purpose flour (additional)

Steps:

  • Place water in large bowl.
  • add yeast.
  • stir in sugar, oil, salt, and 4 cups flour.
  • Beat well with electric mixer at med to high speed.
  • Stir in the last 2 cups of flour 1/4 cup at a time until the dough pulls away from the sides of the bowl and is soft and elastic.
  • Turn out on floured board and knead for 5 to 10 minute.
  • Transfer to greased bowl, cover and place in warm, draft-free area.
  • Allow to rise to double.
  • Punch down and turn out on floured board.
  • Knead to remove most of the air bubbles.
  • Pinch off approx 2 inch diameter pieces.
  • Place in greased pan.
  • When all rolls made, brush with oil or butter.
  • Allow to rise to double.
  • Bake in hot (425) oven until golden brown.
  • Remove from pans and cool on wire rack or serve while still warm.
  • May be frozen after baking.

2 (9 inch) deep dish pastry pie crusts
1/4 cup butter (salted)
1 (7 ounce) package flaked coconut
1 cup pecans (rough chopped, the texture makes this pie what it is)
1 (8 ounce) package cream cheese, softened (you can use full fat or 1/3 fat, but I wouldn't do fat free})
1 (14 ounce) can sweetened condensed milk
2 (8 ounce) containers whipped topping, thawed
1 (14 ounce) jar caramel ice cream topping (this salted caramel one is fantastic, just use unsalted butter, instead)

Steps:

  • Bake your pie shells according to package directions and let them cool completely.
  • While your pie shells are baking, melt the butter in a skillet over medium and add the pecans and coconut. Toast your coconut and pecans in the butter until they become golden brown (roughly 10 minutes). Keep stirring constantly -- these can scorch easily. Set them aside to let them cool.
  • In a large mixing bowl, beat the cream cheese and sweetened condensed milk together until creamy. Fold in your whipped topping by hand -- be careful not to "break it down" too much, but still get it incorporated nicely (it's such a fine line, isn't it?).
  • Have your baked and cooled pie shells ready to fill -- it's time to start layering!
  • Start by using 1/2 of your cream cheese mixture and divide that evenly between the two pie shells (so, technically, each pie will get 1/4 of the mixture).
  • Drizzle 1/4 of your caramel sauce over the cream cheese mixture on each pie, use 1/4 per pie and 1/2 the jar total for this layer.
  • Sprinkle 1/4 of the pecan/coconut mixture over the caramel on each pie. Again, use 1/2 of the mixture total.
  • Repeat the layers, using the remaining ingredients. Place pies in the freezer overnight.
  • You'll pull them out about about 20-30 minutes before serving to let them thaw a bit. You can store them in your freezer for about a month. I double wrap mine in Press-N-Seal and then add an additional layer of foil on top of that, to prevent any freezer burn.

Number Of Ingredients 7

2 c warm water
•2 pkg. Fleischmann's very active dry yeast
•2 1/2 t sugar
•6 c. bread flour (2 pounds)
•1 T of salt
•2/3 c vegetable oil
•6 T butter melted

Steps:

  • 1. Mix the water, sugar, and yeast together in a small bowl or measuring glass. 2. In a large bowl mix together flour and salt. 3. Add in vegetable oil and start to mix. 4. Pour in dissolved yeast mixture and stir with your hands (They're gonna get messy). 5. Once it forms a ball dump onto a floured counter and knead. 6. Knead dough until it becomes smooth. 7. You may need to add a tablespoon or two more of water if the dough is too dry. 8. Once well-combined place dough in a large oiled bowl and cover with a damp cloth. 9. Place in a warm area of the house to rise for about an hour until the dough has doubled in size (I use my laundry room with the dryer running). 10. Once doubled if you poke it with your finger it shouldn't push back out. 11. Punch down dough. 12. To form even balls for your rolls split the dough in half then half each of those in half and so on and so on until you have 32 balls*. 13. Form rolls and place in a grease circular pie plate 7 around and one in a center. (I use disposable pan so I can freeze a lot). 14. Place covered in a warm place and allow to rise again for about an hour 15. Preheat oven to 350 degrees 16. Brush melted butter on the tops of the risen rolls Eating right away: 1. Place in the oven and bake for 20 min or until golden brown Freeze directions: 1. Only bake for 10 to 15 minutes until set but not golden brown yet. 2. Allow to cool completely. 3. Cover with foil and place into a gallon sized freezer bag. 4. To bake later allow to defrost completely. 5. Preheat the oven to 350 degrees. 6. Place in the oven and bake for 10-20 minutes until golden brown. Note: *If making Mamaw sized rolls divide dough into 16 even rolls and follow all remaining directions.

MEMAW'S ROLLS

These are the best rolls you will ever eat. My MeMaw had 9 children and plenty of grandchildren...we couldn't wait to get to her house for some homemade fried chicken and rolls. I recently made these for my husband and kids...my kids sneaking rolls outside to their friends...now the neighborhood mothers are calling me asking me about these AWESOME rolls. It looks like alot of cooking time, but really it's just a few minutes to prepare, and the other time is just the time it takes them to rise. Belive me...it's well worth the time.

2 cups warm water (not hot)
2 1/4 teaspoons yeast (or one packet)
1/2 cup shortening
1/2 cup sugar
1 1/2 teaspoons salt
5 cups flour

Steps:

  • In a mixing bowl, stir in yeast and 1 cup of warm water until the yeast dissolves. Add the other cup of water.
  • Add shortning, sugar and salt. Stir vigorously and mash the lumps of shortning against the side of the bowl as you sift in the flour one cup at a time.
  • Stir until the dough is firm.
  • Smooth down and cover with cloth or lid - let rise until double in size ( about 1-1/2-2 hours). DO NOT GET TOO WARM OR SIT ON A HOT STOVE TOP.(I turn my oven on 250 for ONE minute, then turn it OFF -- and let them rise in the warm oven).
  • When dough has doubled dump out onto a floured board or coutertop, knead lightly until you can cut or pinch into rolls.
  • Place in a greased pan and let rise again, approximately 1-1/2 - 2 hours. Cook until browned, brush with butter and eat.

CLASSIC YEAST DINNER ROLLS

1.5 cups milk
2 1/4 teaspoon instant yeast
1/4 cup melted butter, cooled to room temp
1/4 cup white sugar
1 large egg
1 teaspoon salt
3-4 cups flour

Steps:

  • In the bowl of a stand mixer or large mixing bowl, mix milk, yeast, butter, sugar, egg, and salt. If you don't have a stand mixer, mix vigorously with a wooden spoon or hand mixer. Add in flour 1/2 cup at a time, mixing well between each addition. Stop adding flour when it is no longer sticky. Use your mixer's dough hook attachment for 10 minutes or knead by hand. Place in a buttered bowl and let rise in a warm spot until doubled. This can take a few hours at room temperature, but it can go faster if you turn the oven to 200, turn it off, and then place the bowl in the oven (make sure it's turned off!) After dough has risen, punch down gently and divide into 12 equal pieces. Form the dough pieces into a roll. Place rolls in a greased 9×13 glass dish. Let rise until doubled (again, using the oven trick can make it go faster). Once rolls have risen, bake at 375F for 18-25 minutes. Brush with butter.

  • Melt margarine in hot water. Add sugar and salt and stir. Add cold water and yeast. Stir to dissolve yeast.
  • Add 3 cups flour and mix. Add eggs and 2 1/2 - 3 cups more flour. Mix, cover and let rise until dough doubles in size.
  • Punch down and let rise 30 more minutes or until doubles.
  • Make walnut size balls of dough. Place about 2 inches apart in well-buttered 9 x 13 inch pan. Bake in a preheated 350 degrees F (175 degrees C) oven for 30-45 minutes. Brush top of rolls with margarine while hot.
