4 egg whites
4 cups sifted confectioners' sugar
1 teaspoon lemon extract

Steps:

  • Beat egg whites in a clean, large bowl with mixer at high speed until foamy (use only grade A clean, uncracked eggs). Gradually add sugar and lemon extract. Beat at high speed until thickened.

Royal Icing for Gingerbread House image

This recipe is used to make our Swedish Gingerbread House, Gingerbread Facade, and Snow-Swept Gingerbread Cottage.

Yield Makes about 5 cups

Number Of Ingredients 3

2 pounds confectioners' sugar, sifted
1/2 cup plus 2 tablespoons meringue powder
Scant 1 cup water, plus more if needed

Steps:

  • With an electric mixer on low speed, beat ingredients until fluffy, 7 to 8 minutes. Use immediately, or transfer to an airtight container (royal icing hardens quickly when exposed to air) and refrigerate up to 1 week. Stir well with a flexible spatula before using.
  • Thin icing as needed by stirring in additional water, one teaspoon at a time. For piping designs, add just enough water that icing is no longer stiff; for floodwork, add water until icing is the consistency of honey.

2 tablespoons meringue powder
1 teaspoon pure vanilla extract
1/2 teaspoon peppermint extract

Steps:

  • Combine the confectioners' sugar and meringue powder in a large bowl. Add the vanilla, the peppermint extract if using and 5 tablespoons water and beat on medium-high speed with an electric mixer, scraping down the sides as necessary, until the icing forms thick and glossy peaks, about 2 minutes, adding up to 1 tablespoon more water if needed. Divide the icing between 2 piping bags, one fitted with a small plain tip and the other fitted with a large plain tip.

2 cups confectioners' sugar
2 tablespoons meringue powder or powdered egg whites

Steps:

  • Put sugar and meringue powder in the bowl of an electric mixer fitted with the paddle attachment; mix on low speed to combine. With the mixer running, add 3 tablespoons water. Raise speed to medium; mix, scraping down sides of bowl once, until icing is white and a ribbon forms when a spoon is lifted, about 4 minutes. (If necessary, thin icing with more water, a tablespoon at a time.)
  • To use, transfer to a pastry bag fitted with a small round tip (such as Ateco #2). Twist top of bag; seal with a rubber band. To keep icing from drying out, put a damp paper towel in the bottom of a tall glass; stand bag inside, tip end down.

3 cups all-purpose flour, plus more for dusting
1/2 teaspoon baking soda
1/4 teaspoon baking powder
2 teaspoons ground ginger
2 teaspoons ground cinnamon
3/4 teaspoon ground cloves
3/4 teaspoon salt
8 tablespoons (1 stick) unsalted butter, softened
1/2 cup packed dark-brown sugar
1 large egg
1/2 cup unsulfured molasses
1/2 recipe Royal Icing

Steps:

  • Whisk flour, baking soda, baking powder, spices, and salt in a bowl; set aside.
  • Cream butter and sugar with the paddle attachment on high speed until fluffy, about 3 minutes. Add egg and molasses; mix 2 minutes. Reduce speed to low and gradually mix in the flour mixture. Halve dough; wrap in plastic wrap. Refrigerate at least 1 hour or up to 3 days.
  • Preheat oven to 350 degrees. Line baking sheets with parchment paper; set aside. On a lightly floured surface, roll dough out to slightly thicker than 1/8 inch. Using a 1 1/4-inch scalloped square cookie cutter, make 80 pieces for roof, walkway, and small window; use a 1 1/2-inch scalloped square cutter to make 2 pieces for large windows. Using a scalloped pastry wheel, cut out 8 pieces trim (9 by 1/2 inch each), a 3-by-2-inch door, 2 squares (2 inches each) for doghouse roof, and a 1-inch arched door for the doghouse. Transfer to lined sheets; refrigerate 30 minutes.
  • Use a wooden skewer to make decorative holes along edges of trim, doors, and windows. Bake until set and edges are just beginning to darken, about 12 minutes. Transfer on parchment to a wire rack; let cool completely before decorating. Let icing dry at least 3 hours.
