ROTISSERIE CHICKEN

1 large roasting chicken (butterflied)
1 Tbsp olive oil
1 tsp kosher salt (or sea salt)
1 tsp garlic powder
1 tsp onion powder
1 tsp sweet paprika
1/2 tsp ground rosemary
1/4 tsp cayenne pepper

Steps:

  • Rub the chicken with oil then sprinkle with the seasoning all over and pat down to make them stick. Set the chicken aside while you are preparing the rotisserie.
  • Preheat the grill to about 300F at the spit level. Add some cherry wood chunks or chips for smoke.
  • Place the chicken on the rotisserie spit and secure with forks. Place the spit on the grill. Start the motor and close the lid. Roast for about 60-75 minutes or until the chicken is cooked through.

Made in the oven or rotisserie oven this results in perfectly juicy, moist, and crispy chicken!

1 small fryer chicken (about 3.5lbs)
1 tablespoon olive oil
1/2 teaspoon paprika
1/4 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
salt & pepper to taste

Steps:

  • Combine all seasonings in a small bowl and mix well.
  • To prepare chicken, dab dry with paper towels.
  • Rub the outside of the chicken with olive oil and season generously with the spice mixture.
  • Gently fold the wings behind the chicken. Using kitchen twine, tie the legs together.

½ cup chopped green bell pepper

  • In a large bowl, combine the watermelon, green bell pepper, lime juice, cilantro, green onions, jalapeno and garlic salt. Mix well and serve.

1 cup chopped strawberry
1/4 cup finely chopped red onion
2 tablespoons finely chopped jalapeno peppers
2 tablespoons chopped of fresh mint
2 tablespoons olive oil
1 tablespoon lime juice
1 teaspoon sugar (optional)
1 rotisserie chicken (3-4 lbs, cooked)

Steps:

  • In medium bowl, place watermelon, strawberries, onion, jalapeno and mint.
  • Stir to combine.
  • Pour olive oil and lime juice over mixture.
  • Sprinkle on sugar.
  • Cover bowl and refrigerate until serving.
  • Slice chicken into serving pieces.
  • Spoon salsa over or next to chicken.
  • Place remaining salsa in bowl and serve at table.
