This easy chicken mushroom soup recipe is pure comfort in a bowl. Using rotisserie chicken makes this a simple, 20 minute weeknight dinner.

1 onion (diced )
2 celery sticks (finely chopped)
4 garlic cloves (crushed )
500 g (1lb) mushrooms (thinly sliced )
2 tsp fresh thyme
1 rotisserie chicken (shredded )
6 cups stock
1 cup cream
3 cups spinach (chopped )
pinch of chilli flakes
salt and pepper (to taste )

Steps:

  • Heat a splash of olive oil or a knob of butter in a large pot.
  • Cook the onion and celery until soft and translucent.
  • Add the mushrooms and cook until golden brown.
  • Add the thyme and garlic and cook until fragrant.
  • Pour in the stock and cream then bring to a simmer.
  • Cook for 5 minutes. Add the chicken and spinach and simmer for another 5 minutes.
  • Season with salt and pepper and add lemon juice to taste.
  • Serve the soup with bread of your choice.

1 single-serve packet (about 1.05 ounces) dry miso soup mix
1/2 cup shredded rotisserie chicken
1/2 cup coleslaw mix
1 tablespoon sriracha sauce
1 green onion, finely sliced

Steps:

  • Place the miso soup mix on the bottom of a 16-ounce mason jar. Top with the chicken and coleslaw and garnish with sriracha and green onions. Seal jar for transport.
  • When ready to eat, open the jar and add 12 ounces boiling water, or to taste, and stir until fully incorporated. Serve immediately.

2 x 15g Japanese miso paste sachets (we used Clearspring)
1 chicken breast, skinned and sliced
1 clove garlic, crushed
½ tsp grated ginger
8 shiitake mushrooms, sliced
Dash of soy sauce
¼ Savoy cabbage, finely shredded

Steps:

  • Pour 600ml (1 pint) boiling water into a pan and whisk in the miso paste.
  • Add the rest of the ingredients, except the cabbage, and simmer for 10 mins.
  • Stir in the cabbage, cook for 3 mins and serve.

1 tablespoon olive oil
1 pound carrots, sliced diagonally
1 cup chopped celery
½ medium yellow onion, chopped
1 teaspoon dried oregano
1 teaspoon Italian seasoning
½ teaspoon seasoned salt
salt and ground black pepper to taste
2 cloves garlic, minced
4 cups chicken broth, or to taste
1 (8 ounce) package extra-wide egg noodles
1 cooked rotisserie chicken - skinned, boned, and meat shredded

Steps:

  • Coat the bottom of a Dutch oven with olive oil. Add carrots, celery, onion, oregano, Italian seasoning, seasoned salt, salt, and pepper. Saute over medium-high heat until vegetables have softened, 6 to 8 minutes. Add garlic and cook until onion is translucent and garlic scent has lessened slightly, about 4 to 5 minutes.
  • Add chicken broth and bring to a boil. Add egg noodles; cook 5 to 6 minutes. Gently stir in shredded chicken and simmer until egg noodles are tender and chicken is heated through, 2 to 3 more minutes. Serve immediately.

4 bone-in chicken thighs, or more to taste
1 pinch dried oregano, or to taste
kosher salt and ground black pepper to taste
3 bay leaves
3 tablespoons miso paste, or more to taste
4 quarts water, or as needed
½ bunch celery, diced
4 carrots, chopped, or more to taste
1 bunch fresh dill, minced
½ butternut squash, peeled and chopped
½ small head red cabbage, chopped
1 purple turnip, peeled and chopped
1 leek, diced
½ red bell pepper, seeded and diced
1 large jalapeno pepper, with seeds, diced

Steps:

  • Place chicken thighs in a large pot and season generously with oregano, salt, and pepper. Add bay leaves and miso paste. Fill pot with water and bring to a rolling boil. Reduce heat to medium and cook until thighs are no longer pink in the centers and juices run clear, 30 to 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • Remove thighs and bay leaves from the pot. Tear meat off the bones and chop. Discard bones and bay leaves and return meat to the pot. Reduce heat to medium-low; add celery, carrots, and dill. Stir and add butternut squash, cabbage, and turnip. Cook, 5 to 10 minutes more.
  • Add leek, bell pepper, and jalapeno pepper to the pot. Cook until squash and turnip are soft, about 30 minutes more. Add salt to taste.

2 whole chickens rotisserie chickens, with juices
1 gallon water to cover
1 ½ large onions, diced
½ stick butter
5 cloves garlic, diced
10 each carrots, peeled and sliced
5 stalks celery, diced
3 (15.25 ounce) cans whole kernel corn, drained
¼ cup dried parsley
2 tablespoons dried oregano
1 pinch freshly ground black pepper to taste
½ pound flat whole wheat noodles
½ cup cold water
2 tablespoons cornstarch

Steps:

  • Place rotisserie chickens, with juices, in a very large stockpot. Cover with water and bring to a boil. Reduce heat, cover, and simmer for 15 to 20 minutes. Remove chickens and let cool until safe to handle. Remove meat from bones and cut into small pieces.
  • Strain stock, if needed, into another container; set aside.
  • Combine onions and butter in the stockpot over medium heat. Cook and stir onions until translucent, 5 to 7 minutes. Add garlic and cook for 5 minutes. Stir in carrots and celery. Cook, stirring occasionally, until nearly tender, about 15 minutes. Stir in corn, parsley, and pepper.
  • Pour chicken stock back into the pot and bring to a boil. Cook until carrots are tender, 6 to 7 minutes. Add noodles and cook until starting to soften yet still firm to the bite, 5 to 6 minutes.
  • Mix water and cornstarch together in the meantime. Reduce heat to medium. Stir cornstarch slurry into the soup, a little at time, to reach desired thickness. Add chicken to the soup and heat through, about 5 minutes.
