1 pound sirloin steak (without much gristle) or pre-cut beef tips
Kosher salt and fresh ground black pepper
Kosher salt and fresh ground black pepper

Steps:

  • Trim off the excess fat from the meat, and then cut strips less than 1-inch wide. Rotate the meat and cut into small bite-size pieces. If you see any more large chunks of fat, gristle or long silvery membrane, cut them off.
  • Sprinkle generously with kosher salt and freshly ground pepper. Toss the meat around a bit to thoroughly coat with the seasonings.
  • Next, turn on your ventilation fan-you'll need it! Heat the skillet over medium-high to high heat. As the pan heats, add about 2 tablespoons butter to the skillet. Allow the butter to melt, and then get very brown, before you add the meat.
  • Place some of the meat in the pan in a single layer. It should sizzle loudly when it hits the pan - if it doesn't, the pan isn't hot enough. Don't stir or disrupt the meat for 30 to 45 seconds. You want it to sizzle and brown on one side. Scoop as many steak bites as you can with your spatula and flip them over. Repeat until all the meat is turned. Cook for an additional 30 to 45 seconds-just long enough to sear the outside of the meat but NOT cook the inside.
  • Remove the meat to a clean plate. Add a little more butter to the pan and repeat the cooking process with the next batch just as before. Lastly, when all the meat is nicely browned and removed to the plate, pour all that browned/blackened butter all over the meat. And enjoy!

Steak Bites: With only 4 ingredients you can have the most tender and juicy steak bites that will leave so many begging for the recipe!

1 lb sirloin (bones/whites removed)
2 tbsp butter
1 tsp kosher salt
1/2 tsp pepper (cracked peppercorn medley is our favorite!)
garlic butter (optional, see notes for recipe)

Steps:

  • If your sirloin needs trimmed, remove the bone and cut off all of the white/gristle. Cut steak in to 1 inch cubes and season with salt and pepper.
  • In a cast iron (preferred, but can use regular skillet too -- see notes in post), melt butter over medium-high heat until butter starts to turn brown.
  • As soon as butter turns brown, place sirloin in the skillet. The skillet/butter should be hot enough that it sizzles when the meat is added. This is GOOD! The steak is getting it's "sear" that is so flavorful and MAKES this recipe so good!
  • After about 30-60 seconds, check to see if underside of at least one piece is brown (with sear). If it is, flip over all of the pieces so the other side can cook and get the "sear".
  • Cook for another 30-seconds (or until "sear" shows) and quickly remove from skillet in to serving dish.
  • Let the steak rest for a minute, sprinkle on additional kosher salt, if desired, to allow the meat to finish cooking and soak in that flavor. Serve immediately!

1 lb cubed steak
1 pinch salt, per steak
1 pinch pepper, per steak
1 egg
1 tablespoon hot sauce
1 teaspoon salt

1 cup flour
1 teaspoon salt
1 tablespoon flour
2 teaspoons salt
2 cups milk

Steps:

  • Season steak with a pinch of salt and pepper, then cut steak into bite-size pieces.
  • In a large bowl, combine all batter ingredients. Whisk until all ingredients are mixed through.
  • Preheat about an inch (2 cm) of oil to 350˚F (180˚C) into a heavy, high-sided skillet or pan.
  • In a medium bowl, add flour and salt. Place steak into the flour, then batter, and then into the flour again.
  • Lower the steak bites into the hot oil, being careful not to overcrowd the pan.
  • Cook each side for 4 minutes or until golden brown.
  • Transfer it onto a drying rack and season with salt.
  • Discard the oil on the pan, but leave some oil for the gravy. In the same bowl, add flour, milk, and salt, and mix until thicken.
  • Dip the steaks into the gravy.
  • Enjoy!

1 lb thick rib eye steak, 1 inch (2 cm) thick
2 tablespoons kosher salt
2 tablespoons freshly ground black pepper
4 tablespoons canola oil
3 tablespoons butter
2 sprigs fresh thyme
2 bunches fresh rosemary
2 cloves garlic, crushed

Steps:

  • Preheat oven to 250°F (120°C).
  • Season the steak evenly with the salt and pepper on all sides.
  • Place the steak on a wire rack on top of a baking sheet. Bake for 35 minutes.
  • Heat the canola oil in a skillet or stainless steel pan over high heat until smoking. Sear the steak on one side for 30 seconds, then flip.
  • Immediately, add the butter, thyme, rosemary, and garlic, swirling the pan to melt the butter quickly.
  • Place the herbs and garlic on top of the steak, and push the steak toward the top of the pan. Tilt the pan toward you to pool the butter near the bottom. Using a spoon, continuously scoop the butter over the top of the steak for about 30-45 seconds.
  • This helps not only flavor the steak, but also helps cook the steak faster. If you prefer your steak medium or medium-well, cook your steak longer.
  • To test the doneness of your steak, lightly press the tip of your left index finger to the tip of your left thumb. The fleshy area below the thumb should feel how rare steak feels pressing the surface of the steak. For medium-rare steak, touch your middle finger to your thumb and press the area below your thumb. For medium, touch your fourth finger to your thumb. For well done, touch your pinky to your thumb.
  • Rest the steak for 10 minutes on a cutting board. Slice, then serve!
  • Enjoy!

14 oz new york strip steak, or other steak of good quality
2 teaspoons kosher salt
2 tablespoons coarsely ground black pepper
1 tablespoon vegetable oil
2 tablespoons butter, divided
1 cup cream
⅓ cup brandy or cognac
1 tablespoon dijon mustard

Steps:

  • Liberally season steak with salt and pepper, being sure to coat the entire surface of the meat. Using your hands, press the seasoning into the meat to create an even coating.
  • Heat the vegetable oil and 1 tablespoon of butter in a large skillet over medium-high heat until just smoking. Add the steak to the pan and sear for 4 minutes. Turn and sear the other side for another 4 minutes, for medium-rare. If steak has a fat-cap on its side, be sure to sear it as well for 30 seconds to 1 minute. Once cooked to desired doneness, transfer the steak to a cutting board to rest.
  • Reduce the heat to medium and add the brandy to the skillet. Allow the brandy to cook down for about 1 minute while using a whisk to scrape off any browned bits in the bottom of the pan. Once the brandy has reduced by half, add the cream and continue to whisk until combined. Add the Dijon mustard and remaining tablespoon of butter and continue to cook until mixture begins to reduce and thicken, 5-7 minutes. The final pan sauce should have a rich consistency and coat the back of a spoon. Reduce the heat to low.
  • Slice the steak into ½-inch (1.5cm) pieces. Pour cream sauce over the top and serve.

1 lb boneless ribeye steak
4 hoagie rolls
2 tablespoons unsalted butter
1 ½ tablespoons olive oil, divided
1 medium yellow onion, thinly sliced
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
8 slices provolone cheese

Steps:

  • Place the ribeye in the freezer for 30 minutes.
  • Slice the hoagie rolls open on a cutting board, making sure not to slice all the way through. Spread ½ tablespoon of butter on the cut sides of each roll.
  • Remove the ribeye from the freezer and thinly slice against the grain.
  • Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring occasionally, until softened and golden brown, about 10 minutes. Remove the onions from the pan and set aside.
  • Add the remaining ½ tablespoon of olive oil, then the sliced ribeye, to the same pan and season with the salt and pepper. Cook, without disturbing, until browned, 2-3 minutes. Stir the beef to cook the other side and continue until the ribeye is cooked through, 2-3 minutes more.
  • Add the onions back to the pan and stir to combine. Lay the Provolone over the ribeye mixture and cook, without moving, until melted, about 1 minute.
  • Transfer the ribeye mixture to the buttered hoagie rolls and serve immediately.

1 thick rib eye steak, 2 in (5 cm) preferably USDA prime
1 teaspoon salt, to taste
1 teaspoon pepper, to taste
3 tablespoons canola oil
2 tablespoons butter
2 cloves garlic, peeled and smashed
2 sprigs fresh rosemary
3 sprigs fresh thyme

Steps:

  • Preheat oven to 200°F/95°C.
  • Pat the steak dry with a paper towel, and generously season all sides of the steak with salt and pepper.
  • Transfer to a wire rack on top of a baking sheet, and bake for about 45 minutes to an hour, until the internal temperature reads about 125°F/50˚C for medium-rare. Adjust the bake time if you like your steak more rare or well-done.
  • Heat the canola oil in a pan over high heat until smoking. Do not use olive oil, as its smoke point is significantly lower than that of canola oil and will smoke before reaching the desired cooking temperature.
  • Sear the steak for 1 minute on one side, then flip.
  • Add the butter, garlic, rosemary, and thyme, and swirl around the pan. Transfer the garlic and herbs on top of the steak and baste the steak with the butter using a large spoon.
  • Baste for about 1 minute, then flip the steak with tongs and baste the other side for about 15 seconds.
  • Turn the steak on its side and cook to render off any excess fat.
  • Enjoy!
