Rosemary-Parmesan Soda Bread image

Nutty Parmesan and aromatic rosemary add unexpected flavor to this delightful twist on Irish soda bread. The easy, no-yeast bread is great for breakfast, lunch or dinner. Be sure to let the bread cool at least 10 minutes before slicing. It can be served warm or at room temperature along with softened butter and a sprinkling of flaky salt.

3 cups all-purpose flour
1/2 cup finely grated Parmesan, plus more for sprinkling
2 tablespoons granulated sugar
1 1/2 tablespoons finely chopped rosemary
1 1/2 teaspoons kosher salt
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon crushed red pepper flakes
4 tablespoons very cold unsalted butter, plus softened butter for serving
1 1/4 cups cold buttermilk, plus more for brushing
Freshly ground black pepper
Flaky sea salt, for serving

Steps:

  • Preheat the oven to 375 degrees F. Line a large cast-iron skillet with parchment paper.
  • In a large bowl, whisk together the flour, Parmesan, sugar, rosemary, kosher salt, baking powder, baking soda and red pepper flakes. Working over the bowl, grate the butter on the large holes of a box grater, letting the grated butter fall over the flour mixture. Gently toss the butter into the flour. Using a fork, stir in the buttermilk until a shaggy dough forms.
  • Scrape the dough onto a work surface, gather up any crumbs and knead gently until the dough just comes together. Shape the dough into a round loaf and transfer it to the prepared skillet. Slash an X about 1/4 inch deep in the top of the bread. Brush the bread with buttermilk, then sprinkle with Parmesan and pepper.
  • Bake the bread until it is golden and it sounds hollow when lightly tapped, 45 to 50 minutes. Transfer the bread to a wire rack and let cool at least 10 minutes. Serve warm or at room temperature with softened butter and flaky sea salt.

2 cups (240 g) bread flour
2 to 3 cups (240-360 g) all-purpose flour
1 ½ tablespoons dried rosemary
1 tablespoon instant dry yeast
1 teaspoon kosher salt
1 cup Parmesan cheese, finely cubed
1 1/2 cups (340 g) water, warmed to 110 to 115 degrees

Steps:

  • In a large bowl, combine the bread flour, 2 cups of the all-purpose flour (save the rest), rosemary, yeast, and salt. After the ingredients are well mixed, add the cubed Parmesan cheese. Gently toss in the Parmesan cheese until it's coated with flour. Pour in the warm water and use a spoon to stir the ingredients until a shaggy dough forms. Add more all-purpose flour if the dough is too wet. If there is residual flour in the bottom of the bowl, add additional water 1 tablespoon at a time until all the flour has been incorporated into the dough. The dough will appear rough and bumpy due to the rosemary and Parmesan cheese. Turn the dough out onto a well-floured surface and knead for 3 to 4 minutes until it smooths out a bit. If any cubes of cheese fall out, simply add them back to the dough as you knead. Place the dough into a large, lightly oiled bowl, and cover the bowl with plastic wrap or a clean towel. Transfer the bowl to a warm, draft-free area and allow the dough to rise until doubled in size (about 30 minutes to an hour). While the dough rises, place a large Dutch oven and its lid into the oven and preheat to 450 degrees. After the dough rises, transfer it to a large piece of parchment paper. Shape the dough into a tight ball and ensure it's centered on the parchment paper. Carefully place the parchment paper and dough into the hot Dutch oven and cover with the hot lid. Reduce the oven temperature to 400 degrees, and bake for 40 minutes then remove the lid. After 40 minutes, remove the lid, add the additional shredded cheese and rosemary if using, and return the bread to the oven to bake for an additional 15 to 20 minutes. Remove the bread from the oven and transfer to a wire rack to cool completely before slicing.

Prosciutto, Rosemary and Pepper Bread image

With the additions of prosciutto, fresh rosemary and cracked pepper, a basic bread becomes a festive loaf. The extra rising period gives the bread a more compact crumb and deeper flavor. If your main course is a simple roast, this bread goes well with dinner, or you can slice and serve it as an appetizer with a glass of wine.

Yield 1 large loaf, about 12 serving

Number Of Ingredients 8

1 package (2 1/2 teaspoons) active dry yeast
1/4 cup warm (105 to 110 degrees F) water
2 tablespoons extra virgin olive oil
1 1/2 teaspoons salt
3/4 teaspoon coarsely cracked black pepper
3 1/2 cups bread or unbleached all-purpose flour, approximately
4 ounces (1/4-inch thick) sliced prosciutto, chopped into 1/4-inch dice
1 1/2 tablespoons chopped fresh rosemary or 2 teaspoons dried rosemary

Steps:

  • In a large bowl or in the bowl of a heavy-duty electric mixer, sprinkle the yeast over the water and stir. Let stand until the yeast softens, about 10 minutes. Stir to dissolve the yeast.
  • Using a wooden spoon or the paddle blade of the mixer, stir in the oil, salt and pepper. Gradually beat in enough flour to make a shaggy dough that clears the sides of the bowl.
  • If kneading by hand, turn out the dough onto a lightly floured work surface. Knead the dough, adding more flour as needed, until the dough is smooth and elastic, about 10 minutes.
  • If kneading by machine, change to the dough hook and knead on medium-low speed until the dough is smooth and elastic, about 8 minutes. If desired, knead on the work surface to check the consistency.
  • Shape the dough into a ball. Transfer the dough to a lightly oiled large bowl. Turn to coat the dough with oil. Cover tightly with plastic wrap. Let stand in a warm place until doubled in volume, about 1 hour.
  • Punch down the dough and shape into a ball. Return the dough to the bowl, turn to coat with oil, cover and let rise until doubled again, about 45 minutes.
  • Position a rack in the center of the oven and preheat to 400 degrees F. Lightly oil a large baking sheet.
  • Turn out the dough onto the work surface. Knead, gradually working in the prosciutto and rosemary. Flatten the dough into a 12-inch disk. Starting at a long end, roll up jelly-roll style. Pinch the seams shut. Place on a baking sheet, seam side down. Cover loosely with plastic wrap. Let rise until doubled in volume, about 30 minutes.
  • Using a very sharp knife, cut 3 shallow diagonal slashes in the top of the bread. Bake until the bread is golden brown and sounds hollow when tapped on the bottom, 35 to 40 minutes. Cool completely on a wire rack. If desired, wrap in aluminum foil and store at room temperature up to 8 hours before serving.

I got this from my bread machine's recipe book with a few additions of my own to make a really wonderful bread that is a perfect compliment to your favorite Italian mean. Makes a 2 lb. loaf *NOTE...If you do not have bread flour use any type of flour you like by adding 1 teaspoon of wheat germ to every cup of flour you use.

1 1/2 cups water, room temperature
4 teaspoons olive oil
1 cup sourdough starter, thick
4 cups bread flour
2/3 cup parmesan cheese, freshly grated
4 teaspoons sugar, white
1 1/2 teaspoons salt
1 teaspoon pepper, freshly ground
1 tablespoon rosemary, fresh
2 teaspoons yeast

Steps:

  • Measure and add liquid ingredients including the sourdough starter to the bread pan.
  • Measure and add dry ingredients except yeast and rosemary to the pan.
  • Use your finger to make a well in the flour where you will pour the yeast. Yeast must NEVER come into contact with a liquid when you are adding ingredients. Measure yeast carefully and pour into the well.
  • Snap the baking pan into the breadmaker and close lid.
  • Press select button to choose BASIC setting.
  • Press the CRUST COLOR button to choose light.
  • Press the START/STOP button.
  • After a while a beeping will sound and you can then add the rosemary.
  • Best served warm with fresh butter or olive oil and a splash of balsamic vinegar for dipping. Enjoy.

1 teaspoon sugar
1 teaspoon salt

1/4 cup chopped sun-dried tomato

Steps:

  • Add all ingredients except tomatoes to bread machine in the order listed, making a little indention in the flour for the yeast.
  • Turn on machine (use white bread setting).
  • If tomatoes are packed in oil, first blot them dry with a paper towel.
  • Cut or snip tomatoes into small pieces-- but do not add them until after the first knead.
  • If your machine has a fruit& nuts setting, add them when that beeper goes off.

a 1/4-ounce package (2 1/2 teaspoons) active dry yeast
3 1/2 to 4 1/2 cups unbleached all-purpose flour
1 1/2 teaspoons salt
1 tablespoon dried rosemary, crumbled fine
1 teaspoon freshly ground pepper
2 tablespoons olive oil
1 cup freshly grated Parmesan (about 3 ounces)
1 cup grated provolone (about 1/4 pound)
2 red bell peppers, roasted (procedure follows) and chopped fine

Steps:

  • In a large bowl proof the yeast in 1 1/3 cups warm water for 5 minutes, or until the mixture is foamy. Stir in 3 1/2 cups of the flour, the salt, the rosemary, the pepper, the oil, the cheeses, and the bell peppers and stir the mixture until it is combined well. Knead the dough on a floured surface, incorporating as much of the remaining 1 cup flour as necessary to prevent the dough from sticking, for 8 to 10 minutes, or until it is smooth and elastic, transfer it to a lightly oiled bowl, turning it to coat it with the oil, and let it rise, covered with plastic wrap, in a warm place for 1 hour, or until it is double in bulk. Punch down the dough, halve it, and shape each piece into a loaf, about 14 inches long. Transfer the loaves to a lightly oiled baking sheet and let them rise, covered with a kitchen towel, for 45 minutes, or until they are almost double in bulk. Bake the loaves in the middle of a preheated 450°F. oven for 30 to 35 minutes, or until they are golden, transfer them to a rack, and let them cool.
  • To roast peppers:
  • Using a long-handled fork char the peppers over an open flame, turning them, for 2 to 3 minutes, or until the skins are blackened. (Or broil the peppers on the rack of a broiler pan under a preheated broiler about 2 inches from the heat, turning them every 5 minutes, for 15 to 25 minutes, or until the skins are blistered and charred.) Transfer the peppers to a bowl and let them steam, covered, until they are cool enough to handle. Keeping the peppers whole, peel them starting at the blossom end, cut off the tops, and discard the seeds and ribs. (Wear rubber gloves when handling chilies.)

  • In the bowl of a stand mixer combine 2 cups flour and yeast. Add the sugar, minced rosemary, and salt. Stir well to combine. Heat the milk and butter until very warm (120 degrees F). Add to the flour mixture along with the egg. Stir on low just until combined.
  • Switch to dough hook and add enough remaining flour to make a firm but slightly tacky dough ball. Knead on low speed for about 5 minutes. Cover and let rise in a warm place until double in size.
  • With the 2 tablespoons of olive oil grease two 9x5" loaf pans OR 2 deep dish pie plates, set aside. When dough has doubled in size, punch down and remove to a lightly floured work surface. Cut dough into 2 equal portions. If using loaf pans roll dough into a 14x7" rectangle. Starting with the shorter side roll up dough tightly and seal the end by pinching the dough together. Place in greased loaf pan with the sealed edge down. Repeat for the second portion of dough. If using a pie plate press dough into a large circle and place in prepared plate. Repeat with second portion of dough.
