1 (46-ounce) can unsweetened pineapple juice
1 1/2 cups lemon juice
2 cups water
3 cups sugar, divided
4 sprigs fresh rosemary
1 (1-liter) bottle ginger ale, chilled

Steps:

  • In a large saucepan, combine pineapple juice, lemon juice, water, 3/4 cup sugar and rosemary sprigs. Bring to a boil over medium heat, stirring until sugar dissolves. Remove from heat; cover and let stand for 15 minutes. Discard rosemary; chill. At serving time, add ginger ale; serve immediately.

5 drops yellow food coloring, optional
Pineapple chunks and maraschino cherries, optional

Steps:

  • In a large punch bowl, combine the pineapple juice, lemonade concentrate, sugar and lemon juice. Add the soda, sherbet and food coloring if desired; stir until blended., Serve immediately, garnishing servings with pineapple and cherries if desired.

A refreshing summertime cocktail. Time does not include cooling time for syrup. I changed the amount of rosemary originally posted from 1/2 cup to 4 sprigs, which when chopped coarsely, equals about 1/2 cup, but I think others were chopping it too fine to fill the 1/2 cup, and that is why it was too strong. :)

4 sprigs fresh rosemary, coarsely chopped (stems and leaves)
1/2 cup sugar
2 cups water
2 ounces vodka or 2 ounces gin
2 slices lemons
soda water
1 sprig fresh rosemary

Steps:

  • To make syrup:.
  • Place all syrup ingredients into a saucepan and boil 30 minutes.
  • Strain and allow to cool completely before use.
  • Store in covered container in refrigerator.
  • To make cocktail:.
  • Place 1 ounce syrup with vodka (or gin) and lemon slices over ice in shaker. Shake well.
  • Strain into a rocks glass and add a splash of soda.
  • Garnish with rosemary sprig.

2 fresh rosemary sprigs
1/2 cup sugar
1/2 cup honey
1-1/4 cups fresh lemon juice
6 cups cold water
Ice cubes
Additional lemon slices and fresh rosemary sprigs, optional

Steps:

  • In a small saucepan, bring 2 cups water to a boil; add rosemary sprigs. Reduce heat; simmer, covered, 10 minutes., Remove and discard rosemary. Stir in sugar and honey until dissolved.
