Slow Cooker Pulled Pork with Root Beer image

Easy slow cooker pork shoulder is excellent for making delicious pulled pork sandwiches or serving as an entree. Serve over rice or with Hawaiian sweet bread for a yummy little sandwich. I like to top the pulled pork with sliced roasted red peppers, blue cheese, and chimichurri sauce to make a delicious sandwich with Argentinean flavor.

1 (3 1/2) pound boneless pork shoulder
8 fluid ounces root beer
3 tablespoons brown sugar
1 tablespoon ground cumin
1 tablespoon paprika
1 tablespoon salt
1 tablespoon freshly ground black pepper
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano

Steps:

  • Pat pork shoulder dry and place in a slow cooker. Pour root beer over pork.
  • Mix together brown sugar, cumin, paprika, salt, pepper, garlic powder, onion powder, and oregano in a small bowl until thoroughly combined. Sprinkle on top of pork and rub lightly until entire surface of pork is coated.
  • Cook on Low for 5 hours. Switch to High and cook until meat is tender and can easily be pulled apart with a fork, about 3 hours more. Carefully remove pork and shred with 2 forks. Drizzle some liquid from the slow cooker over pork to moisten.

These are great for outdoor grilling. Simple and very tasty. The glaze at the end gives them a lot of concentrated flavor.

4 (1-inch thick) pork chops
3 (12 fluid ounce) cans or bottles root beer
salt and pepper to taste
1 cup beef stock
2 tablespoons brown sugar
½ teaspoon chipotle-flavored hot sauce
2 teaspoons Worcestershire sauce
1 pinch salt, to taste

Steps:

  • Place the pork chops in a dish; pour 2 cans of the root beer over the chops. Place in refrigerator to marinate at least 2 hours. Remove the pork chops from the root beer; season with salt and pepper.
  • Combine the remaining can of root beer, the beef stock, brown sugar, hot sauce, and Worcestershire sauce in a saucepan over medium heat; simmer the mixture until it reduces to about 3/4 cup. Set aside.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Grill the pork chops on the preheated grill until the no longer pink in the center, about 8 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Brush the chops generously with the reduction sauce and continue cooking for about 2 minutes more per side. Remove from grill and brush with any remaining sauce. Season with salt to taste before serving.

Here's a tasty one I put together a few years ago, and it was good. I think I based it on a Dr Pepper recipe.

2 1/2 cups of your favorite root beer (not diet)
1/2 cup olive oil
1/2 cup lemon juice
2 tablespoons lime juice
1 cup catsup
3 cloves garlic, minced
1/4 cup instant minced onion
1 teaspoon salt, to taste
1/2 teaspoon black pepper, to taste
1/2 teaspoon hot sauce, to taste
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1/4 teaspoon nutmeg

Steps:

  • Blend together in blender for 2 minutes.
  • Store in tightly sealed container and refrigerate.
  • Shake well before using.
  • Will keep for a couple of weeks in refrigerator.

3 teaspoons ancho chili powder
2 teaspoons brown sugar
3 teaspoons grated dark chocolate
2 teaspoons ground coffee
1 (2 to 3-pound) pork loin
3 teaspoons stone-ground mustard
3 tablespoons grapeseed oil, plus more if needed
1 white onion, diced
1/4 cup chicken stock
1 cup root beer
1/4 cup apple juice
1/4 cup sour cream
1/4 cup unsalted butter
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix together the chili powder, brown sugar, dark chocolate, and coffee in a shallow dish. Coat the pork tenderloin with the mustard, then roll it into the chili powder mixture, coating well. Pat down to make sure the spices stick to the pork.
  • Add the oil to a large skillet over medium-high heat until smoking. Quickly sear the pork all over to get a golden brown color, turning constantly so the meat doesn't burn.
  • Put the pork loin on a baking sheet and roast in the preheated oven until required doneness is reached, about or 20 to 25 minutes. Remove the loin from the baking sheet to a cutting board and let rest for 5 minutes.
  • If needed, add a little more oil to the same skillet that was used to sear the pork. Heat the oil over low heat and stir in the onion. Saute the onion until soft, then add the chicken stock, root beer and apple juice. Simmer until the mixture is reduced to 1/2 the volume. Add the sour cream and stir until well combined.
  • Remove from the heat and stir in the butter. The sauce should be thick and glossy. Adjust the seasoning with salt and pepper, to taste. If the sauce is a little spicy, more sugar can be added.
  • Slice the pork into medallions and transfer to a serving platter. Serve with the root beer sauce on the side. Enjoy.

3 lbs rolled boneless pork roast
3 cups beer
1 1/2 cups chopped onions
1 tablespoon sugar
1 teaspoon salt
3 cloves garlic, crushed
1/4 teaspoon black pepper
3 whole cloves
3 bay leaves
1 carrot, diced
1 stalk celery, diced
1/4 cup flour

Steps:

  • Place meat in a deep casserole dish large enough to hold it and marinade.
  • Combine 1 1/2 cups beer and next 7 ingredients pour over meat.
  • Add more beer to just cover the meat.
  • Marinate in the refrigerator overnight, turning occasionally.
  • Strain marinade, reserving solids and liquid.
  • Place solids, carrot and celery in bottom of a roasting pan.
  • Put meat on top.
  • Add a little liquid.
  • Roast in a 350º F oven 1 hour.
  • Pour on 1/4 of remaining marinade over meat.
  • Continue roasting for 1 to 1 1/2 hours more, basting occasionally with drippings and more marinade.
  • until meat thermometer registers 170º F.
  • Mix flour and 1/3 cup marinade to a smooth pasted.
  • Place roast on serviving dish keep warm.
  • Skim fat from cooking liquid, strain, add flour mixture and water to measure 2 cups, cook in roasting pan stirring constantly, until thickened.
  • Serve sauce over sliced meat.
