ROOT BEER FLOAT FUDGE
My children have always loved root beer floats so I came up with this fudgy treat just for them. Sweet and creamy with that familiar root beer flavor, it's always a best-seller at school bake sales. -Jennifer Fisher, Austin, Texas

- Line a 9-in. square baking pan with foil; grease foil with 1 teaspoon butter. In a large heavy saucepan, combine sugar, milk and remaining butter. Bring to a rapid boil over medium heat, stirring constantly. Cook and stir 4 minutes., Remove from heat. Stir in baking chips and marshmallow creme until melted. Pour one-third of the mixture into a small bowl; stir in vanilla., To remaining mixture, stir in root beer concentrate; immediately spread into prepared pan. Spread vanilla mixture over top. Refrigerate 1 hour or until firm., Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares. Store between layers of waxed paper in an airtight container in the refrigerator.

Steps:
- Grease 8 metal lollipop molds.
- Combine corn syrup water and sugar in small sauce pan over low heat, stirring just till the sugar dissolves.
- Once the mixture comes to a boil, reduce back to low heat.
- Continue to cook until it reaches 300°F on candy thermometer (it will take 15 minutes total).
- If crystals form around edge of pan, brush them back with moistened pastry brush.
- Remove from heat add root beer.
- Fill each mold with 1 tablespoon mixture.
- Insert a stick into center inserting it 1/4 inch and smoothing over; let cool and then unmold.

OLD-FASHIONED ROOT BEER SLUSHY
This delicious and refreshing concoction is one of my all-time favorite summer drinks. If you know how to make ice cubes and you have a blender, this couldn't be simpler. It's very close to a root beer float but uses only a fraction of the dairy. Be careful, if you sip it too fast, you'll experience the most intense brain freeze of your life-but it will be worth it!

- Pour 1 bottle root beer into a standard-sized ice cube tray. Carefully transfer to the freezer until frozen, 3 to 4 hours.
- Whisk cold cream and vanilla in a small bowl until slightly thickened. Cover and place in the refrigerator until needed.
- Transfer root beer ice cubes into a blender. Add 1 1/2 cups cold root beer and blend until a smooth, thick slush forms, stopping and shaking the blender as needed.
- Pour into 2 frozen mugs, leaving about 1 inch of room at the top. Spoon vanilla cream over top and serve.

- In a 2-quart heavy-bottomed saucepan, combine the corn syrup, 1 cup water, sugar, and lemon juice. Place over high heat and stir, with a wooden spoon, until the mixture comes to a boil, about 6 minutes. Reduce the heat to medium high and wash any sugar crystals off the sides of the pan with a clean pastry brush dipped in water to prevent crystallization (don't allow crystals to go into the candy mixture). Do not stir from this point on. Place a candy thermometer in the saucepan. Cook the sugar mixture until it reaches 300 degrees or "hard crack" stage, about 30 minutes.
- Immediately remove the pan from the heat, remove the thermometer and add the root beer oil, vanilla bean seeds and food coloring. Swirl to incorporate the flavorings and coloring into the sugar mixture. Let the bubbles subside before pouring the hot mixture into the molds.
- To form the lollipops, use either molds or a Silpat mat. If using a mold, pour the hot syrup into the pan-sprayed molds, filling each one to the top. Let the sugar mixture cool for 3 to 4 minutes, until it reaches a tacky consistency. Insert the lollipop sticks, supporting them upright, and let cool completely. If using a Silpat mat, pour the hot syrup onto the Silpat mat, forming 2-inch rounds. Insert a lollipop stick into each round, and let cool completely. Best served the same day; they will get sticky overnight.
